Book excerpt: The first edition of this book was very well received by the various groups (lecturers, students, researchers and industrialists) interested in the scientific and techno logical aspects of cheese. The initial printing was sold out faster than anticipated and created an opportunity to revise and extend tht; baok. The second edition retains all 21 subjects from the first edition, generally revised by the same authors and in some cases expanded considerably. In addition, 10 new chapters have been added: Cheese: Methods of chemical analysis; Biochemistry of cheese ripening; Water activity and the composition of cheese; Growth and survival of pathogenic and other undesirable microorganisms in cheese; Mem brane processes in cheese technology, in Volume 1 and North-European varieties; Cheeses of the former USSR; Mozzarella and Pizza cheese; Acid-coagulated cheeses and Cheeses from sheep's and goats' milk in Volume 2. These new chapters were included mainly to fill perceived deficiencies in the first edition. The book provides an in-depth coverage of the principal scientific and techno logical aspects of cheese. While it is intended primarily for lecturers, senior students and researchers, production management and quality control personnel should find it to be a very valuable reference book. Although cheese production has become increasingly scientific in recent years, the quality of the final product is still not totally predictable. It is not claimed that this book will provide all the answers for the cheese scientist/technologist but it does provide the most com prehensive compendium of scientific knowledge on cheese available.

Book excerpt: Food production remains the highest agricultural priority, subject to the constraint that it be done in harmony with nature, or at least with minimum environmental pollution. The amount of fertilizer applied can be controlled using modern application techniques, including soil and crop management, guaranteeing higher economic profit and lower environmental cost. It is in such a context that the present book addresses the efficient and rational use of mineral and organic fertilizers while preserving environmental quality. The book discusses the impact on surface and groundwaters, soils and crops, and experience of nitrate leaching, denitrification, ammonia volatilization, heavy metal pollution, agricultural and urban waste management, and international and national legislation. Audience: Agronomists, environmentalists, soil and food chemists, ecologists, policy makers, and managers in the fertilizer industry concerned with the trend of public opinion.

Available in PDF, EPUB and Kindle. Book excerpt: The viruses of the family Rhabdoviridae have an exceedingly broad host range and are widely distributed throughout the animal and plant king doms. Animal rhabdoviruses infect and often cause disease in insects, fish, and mammals, including man. The prototype rhabdovirus, vesicular stomatitis virus !VSV), has been extensively studied and provides perhaps the best model system for studying negative-strand viruses. The popularity of VSV as a model system is to a considerable extent due to its relative simplicity and to its rapid growth, generally to high titer, in many cell types ranging from yeast to human. The nucleocapsids of these viruses also carry transcriptional and replicative functions that are expressed in cell-free systems. The first RNA-dependent RNA poly merase was described in VSV and its G protein provided an early model system for studying the synthesis, processing, and membrane insertion of mammalian glycoproteins. VSV is also highly cytopathogenic and has been studied quite extensively for its capacity to kill cells and to shut off cellular macromolecular synthesis. Even earlier, VSV was discovered to be highly susceptible to the action of interferons and has served ever since as a means for quantitating the activity of interferons. To my way of thinking, the spark that ignited the explosion of re search in this field was struck at the First International Colloquium on Rhabdoviruses, attended by 30 or so participants in Roscoff, France, in June 1972.

Book excerpt: Playing a critical role in both influencing climate change and mitigating its impacts, the world’s diverse wetlands have become one of the world’s most threatened ecosystems as unsustainable land-use practices coupled with irrational use of water have already resulted in large-scale wetlands loss and degradation. To develop sound management and conservation schemes to assure wetlands sustainability in the long term requires long-term understanding of wetlands ecology. Yet until now, long-term interdisciplinary research into these systems has been limited to only a few systems from tropical or temperate climates (such as the Florida Everglades, and Czech biosphere reserve). This new book adds to the existing wetlands literature, providing a unique reference in basic and applied Mediterranean wetland ecology, based on results from long-term interdisciplinary research at the RAMSAR and UNESCO Biosphere site, of Las Tablas de Daimiel, Spain. Dating back to the early 1990s the research highlights changes in the biotic and abiotic environment in response to cumulative anthropogenic stressors, and provide guidance on applying this understand to sound management and conservation. With particular relevance to researchers dealing with semi-arid wetlands in the Mediterranean and elsewhere, as well as to resource managers, the book discusses the complexity of the interacting abiotic and biotic environment across different spatial and temporal scales and across various levels of biological hierarchy is highlighted, and reveals how management based on poor knowledge causes more damage than repair. The book will be of interest to researchers interested in freshwater ecology, hydrobotany, hydrology, geology, biogeochemistry, landscape ecology and environmental management.

Commercial plantations of eucalypts have been established around the world over a range of climates and soils. These two themes are central to this book. Nutrition of Eucalypts provides a comprehensive survey of nutritional ecology of eucalypts in their natural environment and in plantations. The authors, who are all at the forefront of research and development in their fields, are from the various eucalypt growing regions including Brazil, India, China, Spain and Australia. Their text aims at a state-of-the-art presentation. The book includes a key and descriptions for recognising nutrient deficiencies in eucalypts.

AUTHOR: Etienne Geraert was Zoology Professor at Ghent University, Belgium. From 1974 till 1998 he was also Associate Editor of the International Journal Nematologica (now Nematology) where he was responsible for the articles on morphology and taxonomy. He has already published a book on the morphology of the order Tylenchida and four books on the identification of plant-parasitic nematodes of the families Tylenchidae, Criconematidae, Dolichodoridae and Pratylenchidae. From 1990 till 2002 he was Director of the Master's Course in Nematology at Ghent University. 406 b/w images
