Book excerpt: Several recent studies define food insecurity as a situation where the availability of nutritionally adequate and safe foods or the ability to acquire acceptable foods in socially acceptable ways is limited or uncertain. To overcome the challenges of food insecurity household's employ certain Coping Strategies to mitigate food shortages. A quantitative research method was deployed and a stratified random sample of 600 households in two low-income neighborhoods was included during a study conducted in 2015, to measure food insecurity, coping strategies and dietary diversity. The study found that households employed coping strategies to mitigate food shortage, but this leads to low dietary diversity. The study found that the Coping Strategy to “Buy only necessities”, “skip meals” and “purchase food on credit” is employed by a significant number of households. The study found that these coping strategies are associated with lower dietary diversity. This study aimed to increase the general understanding of food insecurity in low-income areas, and how coping strategies impact on dietary diversity in the context of food insecure households. The study concluded that although households may use coping strategies to mitigate the impact of food shortages it will directly impact on low dietary diversity with health consequences. In this context, there may be a desperate need in low-income neighborhoods to amend policy to include a more comprehensive approach that includes adequate information to households on health consequences of low dietary diversity.

The field course is a 5-day course provided by the school of Arts and social science which aims at exposing the students to the practical element of what happens outside the classrooms and also to understand the social problems and to come up with possible solutions to those problems. During the field course students visited various counties such as Kisumu, Kisumu and Vihiga.

Book excerpt: This study focused on the lived experiences of low-income households who coped with food insecurity and explored their worldview on the health impacts of battling with this phenomenon in the Grand Rapids Metropolitan Statistical Area (MSA). While the main research question focused on how low-income households coped with food insecurity, the following were the focus of the research analysis and served as the empirically testable framework: a) addressing the impact of poverty on affordability of nutritious food, b) addressing the impact of food deserts on accessibility and availability of nutritious food, c) addressing the coping strategies used to battle food insecurity phenomenon, and d) addressing the impact of coping strategies used on health outcomes. Exploring the food insecurity topic, not only was it evident that the research on food insecurity coping mechanisms has been insufficient in the United States, but the existing research has been predominantly quantitative in nature. By implementing a transcendental phenomenology as its primary design, this study elucidated human experience of hunger and of coping mechanisms to lend to the possibility of advising public policies that resonate out of a more humanistic perspective rather than with just statistics alone. This study implemented a stratified random sampling to interview 50 participants who used food pantries in Grand Rapids MSA. The results revealed that the participants were struggling with food insecurity due to the: a) inaccessibility of nutritious food, b) lack of availability of nutritious food, and c) unaffordability of nutritious food. The levels of food insecurity were significantly higher for the Grand Rapids MSA households compared to the USDA national averages. The top five coping strategies showed that the participants depended on formal and informal networks to address their nutritional needs: a) food pantries/churches, b) selecting cheap foods, c) meal planning, d) friends and family, and e) the SNAP benefits (food stamps). The food insecurity phenomenon and coping strategies had a substantial impact on the participants’ mental health outcomes (stress, anxiety, depression) versus their physical health outcomes (being overweight, high blood pressure, diabetes). In conclusion, this study recommends that the public administrators and practitioners should revise the “one size fits all” approach in nutrition-related policies, strive to improve the intergovernmental coalitions to circulate the public assistance information, focus on ameliorating the effectiveness of formal and informal networks as a coping strategy, and work towards alleviating the physical and mental health outcomes of food insecurity phenomenon through preventative approaches.

Studies reveal that not only the economic situation, but more importantly control of resources and intra-household relations determine whether households are food secure. In South Africa, there is an urgent need for research on such underlying causes of malnutrition and food insecurity, with limited empirical data available. This interdisciplinary study investigates composition, socio-economic characteristics and intra-household relations of black African households and the effects these complex indicators have on their food situation. The research is part of a broader project that studied the impact of urbanization on the health situation of black Africans in the North West Province. For the investigation in question, 166 people, mainly women, were interviewed, using qualitative and quantitative methods. Many families are disrupted, due to continuous migration and poverty, with extended networks of mostly kin being the predominant household type and half of households being female-headed. A majority of the households studied have incomes less than R1 000 per month, which is approximately 143 US $ (1 US $ was equal to R7 at the time of June 2000). About three-quarters of the households are chronically food insecure. Strong competition for and tension about scarce resources occur frequently. The 'stretching' of households over several domestic units and the search for migrant labour are among the most important coping strategies people use for improved food security and survival, as well as social networks of kin, neighbours and friends, using credit and engaging in occasional jobs. Certain female-headed households and also couples having partnership relationships, although economically worse off, achieve a better food situation through mutual cooperation and networks than male-headed households. More multidisciplinary work is need.

Book excerpt: Food insecurity is related to numerous poor health and development outcomes, particularly in children. A greater proportion of Hispanic households in the U.S. experience food insecurity compared to non-Hispanic white households, but there is little evidence about distinctions between Hispanic ethnic subgroups in regards to food insecurity prevalence and coping strategies. Considering that Mexicanorigin and Mexican American Hispanics are the largest Hispanic subgroup in the U.S. and that the majority of children living in poverty are Hispanic with at least one Mexican-origin parent, more research is needed to understand their distinct risk factors, as well as their immigrant experience and coping strategies, and how these relate to food security status. To date, there are no published data on food provisioning related to food security among Mexican-origin households in the northeast U.S. nor are there data that account for both the immigrant's life course and current ecological system in the U.S. The purpose of this research was to capture multiple levels of influence on household and child food security status and related coping strategies among Mexican-origin households with children, using a mixed-methods approach guided by two theoretical constructs: life course perspective and ecological systems theory. Analyses of national survey data revealed that among all Hispanic households in the U.S., Mexican- and Salvadoran-origin households are most at risk and Cuban-origin are least at risk, compared to U.S.origin Hispanic households. In addition, among U.S.-origin Hispanic households, those with Mexican and Puerto Rican nativity (maternal origin) are most at risk and those with Cuban nativity are least at risk, compared to Hispanics with U.S.origin maternal nativity. In addition, our qualitative findings suggest that recent, low-income Mexican-origin mothers rely on culture and life course experiences, particularly those in Mexico, to shape how they feed their families and children in the U.S. These food-provisioning strategies exhibit important attributes of mothers towards maintaining a food secure household, particularly behaviors related to food resource management and planning. Understanding these multi-level contextual influences on Mexican-origin households provides valuable insight into ways to facilitate protective coping strategies through culturally-tailored programming at both federal and local levels.
