Samson et al. , and published by Elsevier, Amsterdam, 1992). The Third Workshop was held in Copenhagen, Denmark, in 1994 and the Fourth near Uppsala, Sweden, in 1998. The proceedings of those two workshops were p- lished as scientific papers in the International Journal of Food Microbiology. Book excerpt: For millennia, the presence of fungi in food has been both boon and bane to food stores. Fungi can spoil large quantities of food and produce dangerous toxins that threaten human health; however, fungal spoilage in certain foods can produce a unique, highly prized food source and there are some very effective fungal derived medicines. Available in PDF, EPUB and Kindle. Book excerpt: "Taking a multidisciplinary approach, this book focuses on recent milestones in basic and applied mycology, focusing on many and diverse applications in the agricultural, food, and biofuel sectors. Applied Mycology for Agriculture and Foods: Industrial Applications provides an informative update of the current biological status of fungi and advances in conventional and modern molecular tools in identification, taxonomy of fungi, and applications of different taxonomic groups of fungi in various sectors, such as agriculture, food development, postharvesting, biological control of crop diseases, biofertilizers, bioremediation, pigments, pharmaceuticals, enzymes, biofuel production, etc. The volume addresses fungal biodiversity conservation, the emerging field of fungal metagenomics, the role of fungi in eco-safety and warfare, and the bioprospecting of fungi for hydrocarbons for biofuel production. Several chapters discuss using fungi in agricultural management, such as for the biocontrol of plant diseases, using entomopathogenic fungi as a pesticide, using nematophagous fungi for controlling nematodes that eat crops, using fungi in the development of biofertilizers, and more. The role of fungi in post-harvest diseases management in horticultural crops is looked at as well. Aiming to bridge the knowledge gap between basic and applied aspects of mycology, this volume provides a wealth of information that will be valuable for researchers, industrial scientists, faculty and students in mycology and plant pathology as well as in botany, microbiology, food microbiology, pharmaceutical development, biotechnology and biofuel production, and other professional disciplines"--

Book excerpt: Large scale cultivation of macrofungi is possible with fermentation, using easily accessible lignocellulosic agricultural residues applying economical methods to generate substantial biomass, food and biofuels. Bioconversion of lignocellulosic wastes by macrofungi generates value-added fungal nutritional biomass for humans and livestock. Besides commercial cultivation techniques, other topics covered in Advances in Macrofungi: Industrial Avenues and Prospects include: the healing potential of mushrooms, industrial opportunities, mycelium-based products, forest wild mushrooms and industrial applications of white rot fungi. This book reviews the industrial applications and uses of macrofungi. It encourages students and researchers to explore non-conventional sources of nutrition as well as bioactive metabolites to serve as nutraceuticals. It emphasizes the potential of macrofungi as a source of bioactive compounds to remedy human lifestyle diseases especially cancers and cardiovascular ailments along with immunostimulation potential by Cordyceps. This book emphasizes the role of on mushrooms as a source of cosmeceuticals, flavors, essence, scents and perfumes.

Available in PDF, EPUB and Kindle. Book excerpt: This book is designed as a laboratory guide for the food microbiologist, to assist in the isolation and identification of common food-borne fungi. We emphasise the fungi which cause food spoilage, but also devote space to the fungi commonly encountered in foods at harvest, and in the food factory. As far as possible, we have kept the text simple, although the need for clarity in the descriptions has necessitated the use of some specialised mycological terms. The identification keys have been designed for use by microbiologists with little or no prior knowledge of mycology. For identification to genus level, they are based primarily on the cultural and physiological characteristics of fungi grown under a standardised set of conditions. The microscopic features of the various fungi become more important when identifying isolates at the species level. Nearly all of the species treated have been illustrated with colony photographs, together with photomicrographs or line drawings. The photomicrographs were taken using a Zeiss WL microscope fitted with Nomarski interference contrast optics. We are indebted to Mr W. Rushton and Ms L. Burton, who printed the many hundreds of photographs used to make up the figures in this book. We also wish to express out appreciation to Dr D.L. Hawksworth, Dr A.H.S.
