Book excerpt: In 1995, Texas Historical Commission underwater archaeologists discovered the wreck of La Salle’s La Belle, remnant of an ill-fated French attempt to establish a colony at the mouth of the Mississippi River that landed instead along today’s Matagorda Bay in Texas. During 1996–1997, the Commission uncovered the ship’s remains under the direction of archaeologist James E. Bruseth and employing a team of archaeologists and volunteers. Amid the shallow waters of Matagorda Bay, a steel cofferdam was constructed around the site, creating one of the most complex nautical archaeological excavations ever attempted in North America and allowing the archaeologists to excavate the sunken wreck much as if it were located on dry land. The ship’s hold was discovered full of everything the would-be colonists would need to establish themselves in the New World; more than 1.8 million artifacts were recovered from the site. More than two decades in the making, due to the immensity of the find and the complexity of cataloging and conserving the artifacts, this book thoroughly documents one of the most significant North American archaeological discoveries of the twentieth century.

Available in PDF, EPUB and Kindle. Book excerpt: The seventeenth and eighteenth centuries form a very distinctive period in European food history. This was a time when enduring feudal constraints in some areas contrasted with widening geographical horizons and the emergence of a consumer society. While cereal based diets and small scale trade continued to be the mainstay of the general population, elite tastes shifted from Renaissance opulence toward the greater simplicity and elegance of dining à la française. At the same time, growing spatial mobility and urbanization boosted the demand for professional cooking and commercial catering. An unprecedented wealth of artistic, literary and medical discourses on food and drink allows fascinating insights into contemporary responses to these transformations. A Cultural History of Food in the Early Modern Age presents an overview of the period with essays on food production, food systems, food security, safety and crises, food and politics, eating out, professional cooking, kitchens and service work, family and domesticity, body and soul, representations of food, and developments in food production and consumption globally.

Available in PDF, EPUB and Kindle. Book excerpt: Chopsticks have become a quintessential part of the Japanese, Chinese and Korean culinary experience across the globe, with more than one fifth of the world's population using them daily to eat. In this vibrant, highly original account of the history of chopsticks, Q. Edward Wang charts their evolution from a simple eating implement in ancient times to their status as a much more complex, cultural symbol today. Opening in the Neolithic Age, at the first recorded use of chopsticks, the book surveys their practice through Chinese history, before exploring their transmission in the fifth century to other parts of Asia, including Vietnam, Korea, Japan and Mongolia. Calling upon a striking selection of artwork, the author illustrates how chopstick use has influenced Asian cuisine, and how, in turn the cuisine continues to influence chopstick use, both in Asia and across the globe.

Objects of leather, bone, wood and glass as well as metal (with metallurgical analyses) include clothing and accessories; household equipment, fixtures and fittings; and items attesting writing, reading and leisure pursuits, as well as textile working, non-ferrous and ferrous metalworking, leather working, woodworking, bone, antler and glass working, ship building and fishing. There are weights; coins, tokens and jettons; pilgrim souvenirs and secular badges; horse equipment, arms and armour fragments. The discussion considers specific chronological trends as well as more general aspects of production, trade and changing styles.

Available in PDF, EPUB and Kindle. Book excerpt: In 1585, at the height of Jesuit missionary activity in Japan, which was begun by Francis Xavier in 1549, Luis Frois, a long-time missionary in Japan, drafted the earliest systematic comparison of Western and Japanese cultures. This book constitutes the first critical English-language edition of the 1585 work, the original of which was discovered in the Royal Academy of History in Madrid after the Second World War. The book provides a translation of the text, which is not a continuous narrative, but rather more than 600 distichs or brief couplets on subjects such as gender, child rearing, religion, medicine, eating, horses, writing, ships and seafaring, architecture, and music and drama. In addition, the book includes a substantive introduction and other editorial material to explain the background and also to make comparisons with present-day Japanese life. Overall, the book represents an important primary source for understanding a particularly challenging period of history and its connection to contemporary Europe and Japan.

Book excerpt: Award-winning food writer Bee Wilson's secret history of kitchens, showing how new technologies - from the fork to the microwave and beyond - have fundamentally shaped how and what we eat. Since prehistory, humans have braved sharp knives, fire, and grindstones to transform raw ingredients into something delicious -- or at least edible. But these tools have also transformed how we consume, and how we think about, our food. In Consider the Fork, award-winning food writer Bee Wilson takes readers on a wonderful and witty tour of the evolution of cooking around the world, revealing the hidden history of objects we often take for granted. Technology in the kitchen does not just mean the Pacojets and sous-vide machines of the modern kitchen, but also the humbler tools of everyday cooking and eating: a wooden spoon and a skillet, chopsticks and forks. Blending history, science, and personal anecdotes, Wilson reveals how our culinary tools and tricks came to be and how their influence has shaped food culture today. The story of how we have tamed fire and ice and wielded whisks, spoons, and graters, all for the sake of putting food in our mouths, Consider the Fork is truly a book to savor.

Available in PDF, EPUB and Kindle. Book excerpt: The temple mound and mortuary at Town Creek, in Montgomery County, is one of the few surviving earthen mounds built by prehistoric Native Americans in North Carolina. It has been recognized as an important archaeological site for almost sixty years and, as a state historic site, has become a popular destination for the public. This book is Joffre Coe's illustrated chronicle of the archaeological research conducted at Town Creek, a project with which Coe has been intimately involved for more than fifty years, since its inception as a WPA program in 1937. Written for visitors as well as for scholars, Town Creek Indian Mound provides an overview of the site and the archaeological techniques pioneered there, surveys the history of the excavations, and features more than 200 photographs and maps. The book carefully reconstructs the archaeological record, including plant and animal remains, pottery sherds, stone tools, and clay ornaments. In a concluding interpretive section, Coe reflects on what Town Creek and its artifacts tell us about this prehistoric Native American society. Originally published in 1995.
