Available in PDF, EPUB and Kindle. Book excerpt: This extensively color-illustrated atlas serves as a comprehensive guide not only to persons actively involved in food quality control but also to students and trainees, as well as to nontechnical food in-dustry personnel who wish to enhance their product knowledge. Each chapter is devoted to a commodity group (e.g., fresh meats) with two non-commodity chapters concerned with precepts of food quality control and foreign bodies and infestations. Those foods similar in nature and which could be placed in more than one chapter are cross-referenced. Extensively Illustrated Illustrations were selected based on those quality defects most commonly encountered at retail or final inspection level, together with less common defects which illustrate a point of particular signif-icance. Rare cases of actual spoilage or visible quality dete-rioration of some shelf-stable products are provided to serve as a reference point. Particular attention in this respect is paid to "exotic" imported goods such as Oriental fermented products, the nature of which may be unfamiliar to many persons involved in food inspection. Covers Technical Aspects of Quality Control The atlas is primarily concerned with the technical aspects of qual-ity control. The visual faults illustrated are related to the manufac-turing technology involved, where possible, in order to identify their cause. In addition, examples of laboratory tests which may be of value in confirming visual diagnoses are included. Food poisoning agents (microbial or chemical in nature) which cannot usually be de-tected by visual examination and specific problems of a public health nature are also discussed.

Available in PDF, EPUB and Kindle. Book excerpt: This is the first book devoted to international deer husbandry techniques for the growing industries of venison, velvet antler, and antler trophy production as well as long established extensive park systems for amenity. Written by world leaders in their specialised subjects, chapters shed light on widely differing management systems and the optimum design of deer farms, handling yards and fencing layouts. Moreover, readers will discover the requisites of good stockmanship and specialist veterinarians describe different diseases the deer may develop. Details on available treatments, the general biology of deer and an explanation of controversial ethics of velvet and trophy production complete this work. As deer farming has come of age this collection is timely. At fifty years the New Zealand deer industry carries one million animals with annual venison exports to America, Europe and growing antler markets in China and Korea. Chinese antler production is well-established and Asian reindeer husbandry even more ancient. In North America and Europe, deer are now being kept for antler trophies and amenity in many historic parks. This volume is a valuable resource for everyone researching deer management systems, be it practising veterinarians, deer farmers, park managers or agricultural and veterinary students.

Available in PDF, EPUB and Kindle. Book excerpt: Game meat is consumed world-wide. In most regions, it contributes only a small part to the overall meat and food supply, but for reasons of animal welfare and sustainability it is sometimes considered an alternative to meat from farmed animals. Despite differences in game species, ante mortem conditions (free-range or fenced; wild or semi-domesticated), hunting or harvesting procedures and further handling of the carcass, there are common requirements as regards meat safety and quality. Whereas meat hygiene and safety have been an issue in game meat for export/import for a long time, primary production, domestic supply and direct supply to the consumer have recently been addressed by legislation and these sectors still present unresolved questions and challenges. This book combines 24 contributions presenting the view of experts in game meat hygiene and quality. They address four main topics: i.e. 'hygiene and microbiology', 'epidemiology', 'risk assessment and management' and 'muscle biology and meat quality'. In addition to contributions on this topic by authors from eight European countries, a South African perspective is provided, thus representing the standpoint of a major game meat exporter. This volume is the first in a series on safety and quality assurance along the game meat chain, following a 'from forest to fork' approach and is targeted at scientists in academia and industry, graduate students as well as at governmental officials in veterinary public health and food safety.

Available in PDF, EPUB and Kindle. Book excerpt: Through successive editions, Management and Welfare of Farm Animals has gained international recognition as a classic introductory textbook for students of agriculture and veterinary science. Conceived by the Universities Federation for Animal Welfare (UFAW), the book has always sought to promote the humane treatment of livestock within the practical business context of modern farming. Now fully revised and updated, this fifth edition remains the most comprehensive and accessible guide available. Three animal groups appear here for the first time (game birds, South American camelids, and ostriches), and a chapter on horses has also been restored. Throughout, the book offers clear advice for the humane management of all major farmed species in the primary context of large-scale food production. However, this edition also takes full account of consumer demand (and legal requirements) for alternative farming methods and enhanced welfare standards, whether in conventional agriculture or the smallest of ‘hobby' farms. Brand new chapters reflect fresh understanding of welfare science, ethics, and the role of society in ensuring the best possible farm conditions. It remains an indispensable resource for students, and for all those seeking to promote animal welfare. Published as a part of the prestigious Wiley-Blackwell – UFAW Animal Welfare series. UFAW, founded 1926, is an internationally recognised, independent, scientific and educational animal welfare charity. Book excerpt: The project design followed a systems approach to venison quality; from on farm growth and development, immediate post slaughter management, optimum food preparation through to consumer appraisal and perception. Experimental work was carried out on selected slaughter age red and fallow deer of body condition scores 2, 3 and 4 (Lean, Prime and Fat). The research focused on post-slaughter handling and biochemical assessment of the three body condition scores to determine optimum eating quality as determined by a random representation of consumers. In addition, eating quality and consumer acceptance of venison from deer raised on pasture versus supplementary feeding was evaluated.

Book excerpt: This book presents recent developments on the health and safety of fermented meat products. It discusses health aspects of select topics in fermented meat microbiology, veterinary public health, chemistry, technology, biotechnology, nutrition, toxicology, and quality assurance, and gives a broad insight into the product’s safety and health hazards. The book considers the safety of fermented meat products through a whole food chain approach. It focuses on requirements for strict hygienic and technological procedures to prevent potential risk during the production of ready-to-eat products. The book does not aim to serve as negative publicity for meat products. Just the opposite – it points out to the complexity of prevention and control of potential hazards/risks in the production which greatly contributes to a higher total value of fermented meat products. This reference book is a result of collaborative efforts of a number of distinguished authors with international reputation from renowned institutions and it is intended to both academic and professional audience.
