Each of these dishes has evolved as part of the farming lifestyle of a particular time and place, utilizing available ingredients and complementing busy daily schedules. Though the way of life associated with these farms in the first half of the twentieth century has mostly disappeared, the foodways have become a key part of Kentucky's cultural identity. In Food and Everyday Life on Kentucky Family Farms, 1920--1950, John van Willigen and Anne van Willigen examine the foodways -- the practices, knowledge, and traditions found in a community regarding the planting, preparation, consumption, and preservation -- of Kentucky family farms in the first half of the last century. This was an era marked by significant changes in the farming industry and un rural communities, including the introduction of the New Deal market quota system, the creation of the University of Kentucky Agricultural Extension Service, the expansion of basic infrastructures into rural areas, the increased availability of new technologies, and the massive migration from rural to urban areas. The result was a revolutionary change from family-based subsistence farming to market-based agricultural production, which altered not only farmers' relationships to food in Kentucky but the social relations within the state's rural communities. Based on interviews conducted by the University of Kentucky's Family Farm Project and supplemented by archival research, photographs, and recipes, Food and Everyday Life on Kentucky Family Farms, 1920--1950 recalls a vanishing way of life in rural Kentucky. Book excerpt: In the years between the Great Famine of the 1840s and the First World War, Ireland experienced a drastic drop in population: the percentage of adults who never married soared from 10 percent to 25 percent, while the overall population decreased by one third. What accounted for this? For many social analysts, the history of post-Famine Irish depopulation was a Malthusian morality tale where declining living standards led young people to postpone marriage out of concern for their ability to support a family. The problem here, argues Timothy Guinnane, is that living standards in post-Famine Ireland did not decline. Rather, other, more subtle economic changes influenced the decision to delay marriage or not marry at all. In this engaging inquiry into the "vanishing Irish," Guinnane explores the options that presented themselves to Ireland's younger generations, taking into account household structure, inheritance, religion, cultural influences on marriage and family life, and especially emigration. Based on Katherine Verdery's extensive fieldwork between 1990 and 2001, The Vanishing Hectare explores the importance of land and land ownership to the people of one Transylvanian community, Aurel Vlaicu. Verdery traces how collectivized land was transformed into private property, how land was valued, what the new owners were able to do with it, and what it signified to each of the different groups vying for land rights. Verdery tells this story about transforming socialist property forms in a global context, showing the fruitfulness of conceptualizing property as a political symbol, as a complex of social relations among people and things, and as a process of assigning value. This book is a window on rural life after socialism but it also provides a framework for assessing the neo-liberal economic policies that have prevailed elsewhere, such as in Latin America. Verdery shows how the trajectory of property after socialism was deeply conditioned by the forms property took in socialism itself; this is in contrast to the image of a "tabula rasa" that governed much thinking about post-socialist property reform.
