Data were obtained from 109 cattle from four studies, and animals were scanned 7 d preslaughter for uKFd and ultrasound backfat thickness. At slaughter carcass kidney fat depth (cKFd), KPH weight, and total internal fat were measured. The second objective was to characterize residual feed intake (RFI) in finishing cattle fed high grain diets and to examine the relationships with growth, ultrasound, carcass, non-carcass, and tenderness traits in two studies involving Santa Gertrudis (n = 114) steers, and Angus bulls (n = 16) and heifers (n = 16). In both experiments, RFI was calculated as the difference between actual DMI and predicted DMI. Book excerpt: Bos indicus influenced primiparous heifers (n = 300) and yearling Beefmaster heifers (n = 172) were evaluated to determine relationships between serial carcass ultrasound traits and ability to breed in short (45 to 90 d) breeding seasons. Data collected included carcass ultrasound traits: ribeye area (REA), intramuscular fat (IMF), rump fat (UFAT), ribfat, weight, and body condition score taken at yearling age, pregnancy determination, before breeding, and after the breeding season when pregnancy status was recorded. A logistic regression analysis was used to determine the influence of ultrasound traits and body condition on pregnancy status. Odds ratios suggested the likelihood of primiparous cattle rebreeding would have been increased by 93% if IMF would have averaged 3.5% instead of 2.5% as yearlings, or an increase in the average ribfat as yearlings from 0.287 to 0.387 cm would have increased the odds of rebreeding by 88%. Increased average body condition score of 6.5 rather than 5.5 at 30 days postpartum in primiparous cows was estimated to have increased rebreeding 367%. The odds of yearling Beefmaster heifers successfully breeding during a 45-day season would have been increased by 73% (year 1) or 274% (year 2) by increasing REA 6.4 to 6.5 cm^2 at a year of age. Steers were serially scanned beginning at approximately 265 kg of body weight through harvest in 56 day +/- 6 intervals. Data collected included ultrasound measurements (ribeye area (REA), 12th rib fat thickness (RibFat), percent intramuscular fat (IMF), and rump fat (UFAT)), weight, and carcass data. Days to choice was calculated for each steer based on a linear regression. The IMF deposition was quantified as quadratic from scans 1-6 and linear when cattle were on full feed. Prediction models at scans 1, 2, 3, 4, 5, and 6 yielded R-square values of 0.20, 0.25, 0.41, 0.48, 0.59, and 0.49, respectively for days to choice. Odds ratios suggested that if steers in this study had averaged 3.78% at day 0 rather than 2.78, the odds of cattle grading premium choice or greater would have been increased by 300%.

The overall aim of this study was to determine if carcass ultrasonography in replacement heifers could explain variation in traits such as reproduction, a major factor in beef cattle efficiency and profitability. During a 10-year period, data were obtained from 906 yearling heifers through the use of carcass ultrasonography. The measurements collected included adjusted values for ribeye area (REA), percent intramuscular fat (%IMF), rib fat (RF), and rump fat. A retrospective analysis was performed on data collected and variables were separated into the extreme high and low 25% and the median 50%. Analysis examined whether a relationship existed between reproductive traits (percentage calving at two years of age, age at first calving, first calving interval, lifetime calving interval) and carcass measurements determined by ultrasonography. Age at first calving increased as ribeye area increased (Low REA 731.7±3.1 d; High REA 743.5±3.3 d; P=0.002). Rib fat was also related to age at first calving as heifers in the high grouping were approximately 9 days older at calving (Low RF, 734.5±3.1 d; High RF, 743.7±3.2 d; P=0.008). Book excerpt: Purebred Beefmaster steers (n = 160) from five owners were fed at a commercial feedlot in South Texas beginning in November of 2004; 68 steers possessed pedigree information. Beginning in mid-November, steers were individually weighed and evaluated for ultrasound body composition at 56-d intervals by a certified technician. Feeder calf frame (FRM) and muscle (MUS) scores were assigned at initial ultrasound evaluation. Steers were fed and marketed through a lean-based, branded beef programand were harvested in two groups in May and June of 2005 at a commercial beef plant. Analyses were conducted to investigate the ability to predict carcass traits from the different sources of information available on these cattle. Evaluation of carcass traits were investigated using four sets of independent variables referred to as sources A, B, C, or D and ultrasound scan session (1- 4). An analysis included initial weight at first scan session (IWT), FRM and MUS as independent variables through GLM procedures. B analyses utilized ultrasound measures of the longissimus area, intramuscular fat, fat thickness, rump fat, and gluteus medius depth along with IWT as independent variables. Multiple regression was performed on each carcass trait using IWT and ultrasound traits at each scan session. Mallow's CP was used to select a model that best described each carcass trait. C analyses (GLM) utilized variables from A and B analyses combined plus ranch. D analyses (GLM) included variables from C analyses plus sire nested within ranch. Respective R-square values (scan 1 - 4) for marbling score were .02, .04, .05, and. 10 using A information, .14, .17, .42, and .54, using B information, .35, .35, .47, and .55 using C information, and .56, .59, .65, and .76 using D information. R-square values ranged from .34 to .86 for carcass weight, .11 to .77 for fat thickness, .06 to .82 for ribeye area, and .10 to .81 for yield grade. Ultrasound data obtained closer to harvest and increasing amount of data related to genetic and management background showed increased R-square values, but may be best utilized in conjunction with one another to predict carcass traits and final carcass value.

Target harvest date was estimated based on 12th rib fat thickness and weight (approximately 250 days on feed). Steers were harvested 35 days after being scanned with an ALOKA 500V ultrasound unit equipped with a UST-5049 transducer. Images were processed chuteside using Beef Image Analysis (BIA) automated software. Images were also saved to the computer hard drive and manually interpreted using Rib-O-Matic non-automated software. Mean scan live weight and carcass weight was 582.89 ± 36.44 kg and 380.8 ± 28.05 kg, respectively. Mean automated chuteside ultrasound fat thickness (AFTU), ribeye area (AREAU) and percent fat (A%FATU) were 0.88 ± 0.22 cm, 97.19 ± 7.45 cm2, 4.16 ± .48 %. Mean manually interpreted ultrasound fat thickness (IFTU), ribeye area (IREAU) and percent fat (I%FATU) were 0.89 ± 0.24 cm, 96.36 ± 7.45 cm2, 4.40 ± .73 %. Mean carcass measures of fat thickness (FTC), ribeye area (REAC) and percent fat (%FATC) were 1.15 ± 0.35 cm, 94.17 ± 7.45 cm2, 3.91 ± .75 %. Favorable pearson correlations between AFTU and FTC, IFTU and FTC, IREAU and REAC, A%FATU and %FATC, I%FATU and %FATC were 0.80, 0.78, 0.47, 0.59 and 0.69, respectively; whereas, the correlation between AREAU and REAC were lower and less significant at 0.22. These coefficients indicate that the relationship between manually interpreted ultrasound images and harvest carcass attributes were high and statistically significant. However, these results indicate that automated chuteside image processing was not as useful a tool in assessing ribeye levels on steers prior to harvest.
