Book excerpt: Excerpt from The Tuna as Food for Man It must be understood that any list of common names of Mexican tunas can be of only tentative value, for there may be even less uni formity in popular names in Mexico than in this country. In any one locality, however, the name used for a species or variety is reasonably constant. The commercial spirit has had no influence in changing names. As with many other natural and agricultural subjects, it is the native peon who is the court of final resort to decide upon the names of plants. The rancher when asked regarding such matters will almost invariably put the question to one of his more intelligent servants. The names used in this bulletin have been obtained mainly from the peons and have subsequently been verified and corroborated by educated and intelligent ranchers. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Food That God Intends for ManOf these two ways of thinking about the Bible, which is right? There is a law that decides it, namely: There are two kinds of all created things, a good and bad. Every good thing has its Oppo site in a bad thing of the same kind and they are enemies. Every good plant that is useful to man has its opposite in weeds that are an abomination to man; and every good animal that is useful to man has, its opposite in beasts of prey that are anbetween right and wrong. The Creator does not say which way man shall choose; He leaves it for him to choose and rewards and punishes him according to his choice. Animals have no knowledge of good and evil, nor power to choose; they do the will of man because they are obliged to. As man has this knowledge and power he must do the will of the Creator from choice, and acknowledge the Creator his master from choice. As it is impossible for man to acknowledge anything his master (from choice without loving that object more than himself he must love his Creator with all his being. How does the Creator require man to feel toward his neighbor? Man desires horses to be peaceable and not agitate each other so that they can be useful to him. If any try to right those around them he does not want the others to fight back, but to be quiet and let him take care of the unruly ones. There is no reason to suppose that the Creator requires less of man. He requires man to love his neigh bor as himself because he cannot live in peace unless he does, and if any neighbor takes it upon himself to illtreat another, that one is not to illtreat in return and destroy the usefulness of both to their Creator, but to keep his peace and maintain his relationship to his Creator and let Him take care of the disobe dient one. So it is clear that the first duty of man is to love his Creator with all his being; the next is to love his neighbor as himself, and the next is not to render evil for evil. So the spirit of the Creator teaches what Christ taught. Then see the effect of Christ's teaching upon man. All the good there is in the world has come from it. See the difference between those who have had the benefit of it and those who have not. It is the forerunner of all progress. See the truth of it verified at the death of His followers. The expression in their countenance is beyond the power of man to describe; only those who have seen it have seen the most wonderful work of God. It is not seen in the countenance of all who die professing to believe in Christ, but it is seen in some, and if He is not Divine, how does it come?About the PublisherForgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Natural Way in Diet: Or the Proper Food of Man During years of work and study as a practical healer, Ihave been lead to realize the importance of a book which would teach the people the value of foods, and the intimate relation existing between the food taken into the system and the higher life of man. The subject is one which should be of deep interest to every student of human life, and to every one who is seeking to come into harmonious relation with the laws of Nature. It rests upon a scientific basis, and the workings of the laws of cause and effect are as plainly discernible as in any other process of Nature. It has' been my earnest endeavor to lead all those with whom it has been my privilege to come in contact, as teacher, physician and friend, to new and better methods of thinking to a higher, truer, holier life. As Principal of the National Institute of Science, my field of labor has been wide, and the loving testimonies of students, whose lives have been broadened and sweetened by my efforts in their behalf, is sufficient reward for my earnest labors, and ample evidence of my success. Book excerpt: “A necessary book for anyone truly interested in what we take from the sea to eat, and how, and why.” —Sam Sifton, The New York Times Book Review Acclaimed author of American Catch and The Omega Princple and life-long fisherman, Paul Greenberg takes us on a journey, examining the four fish that dominate our menus: salmon, sea bass, cod, and tuna. Investigating the forces that get fish to our dinner tables, Greenberg reveals our damaged relationship with the ocean and its inhabitants. Just three decades ago, nearly everything we ate from the sea was wild. Today, rampant overfishing and an unprecedented biotech revolution have brought us to a point where wild and farmed fish occupy equal parts of a complex marketplace. Four Fish offers a way for us to move toward a future in which healthy and sustainable seafood is the rule rather than the exception.

Her own spirited nature helps Carla teach her classmates that "unusual" can actually be good. Lively illustrations help showcase the book's messages of acceptance, tolerance, individuality, and creativity, and the funny plot and authentic dialogue are sure to make this tale a favorite among elementary school children. Book excerpt: Winner, James Beard Foundation Best Cookbook of the Year Award, 2015 James Beard Foundation Best International Cookbook Award, 2015 The Art of Eating Prize for Best Food Book of the Year, 2015 The Yucatán Peninsula is home to one of the world's great regional cuisines. With a foundation of native Maya dishes made from fresh local ingredients, it shares much of the same pantry of ingredients and many culinary practices with the rest of Mexico. Yet, due to its isolated peninsular location, it was also in a unique position to absorb the foods and flavors of such far-flung regions as Spain and Portugal, France, Holland, Lebanon and the Levant, Cuba and the Caribbean, and Africa. In recent years, gourmet magazines and celebrity chefs have popularized certain Yucatecan dishes and ingredients, such as Sopa de lima and achiote, and global gastronomes have made the pilgrimage to Yucatán to tantalize their taste buds with smoky pit barbecues, citrus-based pickles, and fiery chiles. But until now, the full depth and richness of this cuisine has remained little understood beyond Yucatán's borders. An internationally recognized authority on Yucatecan cuisine, chef David Sterling takes you on a gastronomic tour of the peninsula in this unique cookbook, Yucatán: Recipes from a Culinary Expedition. Presenting the food in the places where it's savored, Sterling begins in jungle towns where Mayas concoct age-old recipes with a few simple ingredients they grow themselves. He travels over a thousand miles along the broad Yucatán coast to sample a bounty of seafood; shares "the people's food"at bakeries, chicharronerías, street vendors, home restaurants, and cantinas; and highlights the cooking of the peninsula's three largest cities—Campeche, Mérida, and Valladolid—as well as a variety of pueblos noted for signature dishes. Throughout the journey, Sterling serves up over 275 authentic, thoroughly tested recipes that will appeal to both novice and professional cooks. He also discusses pantry staples and basic cooking techniques and offers substitutions for local ingredients that may be hard to find elsewhere. Profusely illustrated and spiced with lively stories of the region's people and places, Yucatán: Recipes from a Culinary Expedition is the long-awaited definitive work on this distinctive cuisine.

Book excerpt: Dogs are getting lawyers. Cats are getting kidney transplants. Could they one day be fellow citizens? Cats and dogs were once wild animals. Today, they are family members and surrogate children. A little over a century ago, pets didn't warrant the meager legal status of property. Now, they have more rights and protections than any other animal in the country. Some say they're even on the verge of becoming legal persons. How did we get here -- and what happens next? In this fascinating exploration of the changing status of dogs and cats in society, pet lover and award-winning journalist David Grimm explores the rich and surprising history of our favorite companion animals. He treks the long and often torturous path from their wild origins to their dark days in the middle ages to their current standing as the most valued animals on Earth. As he travels across the country -- riding along with Los Angeles detectives as they investigate animal cruelty cases, touring the devastation of New Orleans in search of the orphaned pets of Hurricane Katrina, and coming face-to-face with wolves and feral cats -- Grimm reveals the changing social attitudes that have turned pets into family members, and the remarkable laws and court cases that have elevated them to quasi citizens. The journey to citizenship isn't a smooth one, however. As Grimm finds, there's plenty of opposition to the rising status of cats and dogs. From scientists and farmers worried that our affection for pets could spill over to livestock and lab rats to philosophers who say the only way to save society is to wipe cats and dogs from the face of the earth, the battle lines are being drawn. We are entering a new age of pets -- one that is fundamentally transforming our relationship with these animals and reshaping the very fabric of society. For pet lovers or anyone interested in how we decide who gets to be a "person" in today's world, Citizen Canine is a must read. It is a pet book like no other.
