Book excerpt: This book is all about the road trip I took with my family; my wife Yvette, son Teigan and daughter Jessica (15 and 12 respectively at the time of our travels) through the southern states of America in the Autumn (Fall) of September and October 2014. We travelled 5986.7km for the sake of BBQ "research", determined to experience the Temples of BBQ.We had made several trips to Kansas City previously, researching and learning from the master pitmasters before establishing our restaurant, Big Boy BBQ in Melbourne. This time however, our aim was to develop an understanding and appreciation of the different regions of American BBQ.We weren't seeking the latest and greatest, not the obscure nor the mainstream, but rather searching out the Temples of BBQ. The BBQ joints where the pitmasters are like preachers with their own congregation of followers. We started our pilgrimage in Texas, where we travelled over six days, visited 15 BBQ joints and revelled in the Holy Trinity of Texas BBQ. We moved through Arkansas to Tennessee, where we enjoyed pulled pork sandwiches with bright yellow slaw. Next to Alabama, then Georgia and the Carolinas, South and North, where we received a holy whole hog baptism. We returned our car in Virginia, then flew to New York and on to Kansas City for burnt ends and ribs that reminded us of why we started our BBQ journey in the first place.

A third-generation barbecuer, Amy is the marketing mind behind the business, a television personality, and industry expert. Praise the Lard, named after the Mills' popular Southern Illinois cook-off, now in its thirtieth year, dispenses all the secrets of the family’s lifetime of worshipping at the temple of barbecue. At the heart of the book are almost 100 recipes from the family archives: Private Reserve Mustard Sauce, Ain’t No Thang but a Chicken Wing, Pork Belly Bites, and Prime Rib on the Pit, Tangy Pit Beans, and Blackberry Pie. Available in PDF, EPUB and Kindle. Book excerpt: Much has been written on how temples are constructed or reconstructed for reviving local religious and communal life or for recycling tradition after the market reforms in China. The dynamics between the state and society that lie behind the revival of temples and religious practices initiated by the locals have been well-analysed. However, there is a gap in the literature when it comes to understanding religious revivals that were instead led by local governments. This book examines the revival of worship of the Chinese Deity Huang Daxian and the building of many new temples to the god in mainland China over the last 20 years. It analyses the role of local governments in initiating temple construction projects in China, and how development-oriented temple-building activities in Mainland China reveal the forces of transnational ties, capital, markets and identities, as temples were built with the hope of developing tourism, boosting the local economy, and enhancing Chinese identities for Hong Kong worshippers and Taiwanese in response to the reunification of Hong Kong to China. Including chapters on local religious memory awakening, pilgrimage as a form of tourism, women temple managers, entrepreneurialism and the religious economy, and based on extensive fieldwork, Chan and Lang have produced a truly interdisciplinary follow up to The Rise of a Refugee God which will appeal to students and scholars of Chinese religion, Chinese culture, Asian anthropology, cultural heritage and Daoism alike.

Book excerpt: California-cool grilling wisdom from one of the most renowned chefs in Los Angeles. Josiah Citrin is one of the biggest names in the L.A. food world and his restaurant, Mélisse, is a temple for fine dining. But his hot new restaurant, Charcoal Venice, is devoted to the kind of cooking he does at home for his friends and family--backyard cookouts where a pile of coals and seasonal ingredients are all a home cook needs to create an unforgettable meal. In Charcoal, Citrin presents completely fresh ways to cook with fire and charcoal, not only grilling over the coals, but cooking inside them and finding inventive methods for searing and smoking. Whether Citrin's grilling barbecue classics like J1-Marinated Skirt Steak and Salt-Baked Whole Maine Lobster or West Coast-inspired vegetable sides like his signature Cabbage Baked in Embers, charcoal is the dynamic center of this cookbook. Unlike other grilling books, vegetables get equal billing with meat. For Citrin, the color, texture, and flavors of vegetables are endlessly inspiring. With almost 100 recipes for savory main dishes and sides, as well as desserts and even cocktails, Charcoal shows that the satisfaction of smoky flavor and a good char knows no bounds. It is a celebration of the universal human craving to gather together and cook over a live fire.

Available in PDF, EPUB and Kindle. Book excerpt: An Eater Best Cookbook of Fall 2020 From caramelized onions to fruit preserves, make home cooking quick and easy with ten simple "kitchen heroes" in these 125 recipes from the New York Times bestselling and award-winning author of Deep Run Roots. “I wrote this book to inspire you, and I promise it will change the way you cook, the way you think about what’s in your fridge, the way you see yourself in an apron.” Vivian Howard’s first cookbook chronicling the food of Eastern North Carolina, Deep Run Roots, was named one of the best of the year by 18 national publications, including the New York Times, USA Today, Bon Appetit, and Eater, and won an unprecedented four IACP awards, including Cookbook of the Year. Now, Vivian returns with an essential work of home-cooking genius that makes simple food exciting and accessible, no matter your skill level in the kitchen. Each chapter of This Will Make It Taste Good is built on a flavor hero—a simple but powerful recipe like her briny green sauce, spiced nuts, fruit preserves, deeply caramelized onions, and spicy pickled tomatoes. Like a belt that lends you a waist when you’re feeling baggy, these flavor heroes brighten, deepen, and define your food. Many of these recipes are kitchen crutches, dead-easy, super-quick meals to lean on when you’re limping toward dinner. There are also kitchen projects, adventures to bring some more joy into your life. Vivian’s mission is not to protect you from time in your kitchen, but to help you make the most of the time you’ve got. Nothing is complicated, and more than half the dishes are vegetarian, gluten-free, or both. These recipes use ingredients that are easy to find, keep around, and cook with—lots of chicken, prepared in a bevy of ways to keep it interesting, and common vegetables like broccoli, kale, squash, and sweet potatoes that look good no matter where you shop. And because food is the language Vivian uses to talk about her life, that’s what these recipes do, next to stories that offer a glimpse at the people, challenges, and lessons learned that stock the pantry of her life.
