Available in PDF, EPUB and Kindle. Book excerpt: The first and greatest book of regional American cuisine, now revised for today’s home cook. Imagine a person with the culinary acumen of Julia Child, the inquisitiveness of Margaret Mead, and the daring of Amelia Earhart. This is Clementine Paddleford, America’s first food journalist. In the 1930s, Paddleford set out to do something no one had done before: chronicle regional American food. Writing for the New York Herald Tribune, Gourmet, and This Week, she crisscrossed the nation, piloting a propeller plane, to interview real home cooks and discover their local specialties. The Great American Cookbook is the culmination of Paddleford’s career. A best seller when first published in 1960 as How America Eats, this coveted classic has been out of print for thirty years. Here are more than 500 of Paddleford’s best recipes, all adapted for contemporary kitchens. From New England there is Real Clam Chowder; from the South, Fresh Peach Ice Cream; from the Southwest, Albondigas Soup; from California, Arroz con Pollo. Behind all the recipes are extraordinary stories, which make this not just a cookbook but also a portrait of America.

Book excerpt: From Art Smith comes a unique cookbook with more than 150 recipes to strengthen bonds between loved ones. Throughout history, humans have sat down together at the table to break bread. The simple ritual of the shared meal reunites us with our families and brings balance to our lives. There are many types of families--in using the word family, Art means to include anyone whom we have sought or chosen to be an important part of our lives. Unfortunately, in today's fast-paced world, the symbolic role of the table has been threatened. In many households, family members all eat separately, according to their own schedules, on the run, or in front of the TV. With this important cookbook, Art Smith wants to bring us back to the table--and back to each other. Art provides readers with mouth-watering recipes that represent the very best of home cooking, including Roasted Tomato and Cheddar Cornbread, to-die-for Sweet Potato-Pecan Waffles, hearty Seafood Gumbo, Grilled Shrimp on Arugula with Lemon Vinaigrette, and Spiced Pork Loin with Vidalia Onion Sauce, to name just a few. There is also a rich assortment of vegetable main courses--like Art's fabulous Italian Vegetable Casserole. Traditional dishes include the best-ever Buttermilk Fried Chicken and a Roast Turkey with Pan Gravy that's not just for Thanksgiving! And then there are the celebration cakes, perfect pies, and little sweets. From French Chocolate Almond Pie to Pear and Cranberry Cobbler, from Coconut Cake with Fluffy Icing to Triple-Layer German Chocolate Cake, from Pecan Divinity to Gumdrop Cookies, Back to the Table is filled with delicious treats for any occasion. Art's life's work has involved cooking for families all over the world. These experiences have taught him that families are essentially the same, regardless of international boundaries or cultural differences. We all want the best for each other and want to take care of the ones we love. And what better way is there to care for our loved ones than at the table? Illustrated throughout with stunning photographs of food and of people sharing their tables and their lives, Back to the Table is a book to use daily and to treasure for a lifetime.

Book excerpt: “A celebration of African American cuisine right now, in all of its abundance and variety.”—Tejal Rao, The New York Times JAMES BEARD AWARD WINNER • IACP AWARD WINNER • IACP BOOK OF THE YEAR • TONI TIPTON-MARTIN NAMED THE 2021 JULIA CHILD AWARD RECIPIENT NAMED ONE OF THE BEST COOKBOOKS OF THE YEAR BY The New York Times Book Review • The New Yorker • NPR • Chicago Tribune • The Atlantic • BuzzFeed • Food52 Throughout her career, Toni Tipton-Martin has shed new light on the history, breadth, and depth of African American cuisine. She’s introduced us to black cooks, some long forgotten, who established much of what’s considered to be our national cuisine. After all, if Thomas Jefferson introduced French haute cuisine to this country, who do you think actually cooked it? In Jubilee, Tipton-Martin brings these masters into our kitchens. Through recipes and stories, we cook along with these pioneering figures, from enslaved chefs to middle- and upper-class writers and entrepreneurs. With more than 100 recipes, from classics such as Sweet Potato Biscuits, Seafood Gumbo, Buttermilk Fried Chicken, and Pecan Pie with Bourbon to lesser-known but even more decadent dishes like Bourbon & Apple Hot Toddies, Spoon Bread, and Baked Ham Glazed with Champagne, Jubilee presents techniques, ingredients, and dishes that show the roots of African American cooking—deeply beautiful, culturally diverse, fit for celebration. Praise for Jubilee “There are precious few feelings as nice as one that comes from falling in love with a cookbook. . . . New techniques, new flavors, new narratives—everything so thrilling you want to make the recipes over and over again . . . this has been my experience with Toni Tipton-Martin’s Jubilee.”—Sam Sifton, The New York Times “Despite their deep roots, the recipes—even the oldest ones—feel fresh and modern, a testament to the essentiality of African-American gastronomy to all of American cuisine.”—The New Yorker “Jubilee is part-essential history lesson, part-brilliantly researched culinary artifact, and wholly functional, not to mention deeply delicious.”—Kitchn “Tipton-Martin has given us the gift of a clear view of the generosity of the black hands that have flavored and shaped American cuisine for over two centuries.”—Taste

Book excerpt: AFTER MY SIBLINGS WERE MARRIED and had children of their own, and after Grandpa and Grandma Kepka had passed, we would gather with our aunt's and uncles at the Hall on a Sunday in the summer. Joseph Kepka family reunion would meet every summer, my dad's family would meet to enjoy tasty potluck entrees, lively conversation and some card playing. We called it the Kepka Family Reunion Cookbook. This being a special time, everyone brought their best potluck dish. At one of these events, the conversation centered on the fact that everyone had a special dish they were known by. They were all delicious. My mother had her pork roast and sauerkraut, which everyone enjoyed. We decided that each of us would submit their best potluck dish to be compiled into a family cookbook. Being in the publishing business, they tasked me with the production of the cookbook.Nearly everyone submitted a recipe. Even some kids. I remember my son's recipe for Rice Crispy treats. He wrote, go to the store and purchase a box of Rice Crispy Treats cereal, read the instructions on the box, then make your TREATS and enjoy! Another of the young chefs wrote how to make a peanut butter and jelly sandwiches.

Available in PDF, EPUB and Kindle. Book excerpt: Food studies, once trendy, has settled into the public arena. In the academy, scholarship on food and literary culture constitutes a growing river within literary and cultural studies, but writing on African American food and dining remains a tributary. Recipes for Respect bridges this gap, illuminating the role of foodways in African American culture as well as the contributions of Black cooks and chefs to what has been considered the mainstream. Beginning in the early nineteenth century and continuing nearly to the present day, African Americans have often been stereotyped as illiterate kitchen geniuses. Rafia Zafar addresses this error, highlighting the long history of accomplished African Americans within our culinary traditions, as well as the literary and entrepreneurial strategies for civil rights and respectability woven into the written records of dining, cooking, and serving. Whether revealed in cookbooks or fiction, memoirs or hotel-keeping manuals, agricultural extension bulletins or library collections, foodways knowledge sustained Black strategies for self-reliance and dignity, the preservation of historical memory, and civil rights and social mobility. If, to follow Mary Douglas’s dictum, food is a field of action—that is, a venue for social intimacy, exchange, or aggression—African American writing about foodways constitutes an underappreciated critique of the racialized social and intellectual spaces of the United States.

Book excerpt: From the organization that brought us The Black Family Reunion cookbooks comes The Historical Cookbook of the American Negro, a fun, richly brewed collection of recipes, historical facts, photos, and personal anecdotes. First published in 1958 by the National Council of Negro Women, it includes contributions from members in thirty-six states plus the District of Columbia and offers exceptional insight into American history and the African-American community at the time of its publication. As John Hope Franklin (whose own family owns a copy of the book) points out, much of the cultural information in the cookbook has never been passed down to successive generations. Arranged according to the calendar year, the cookbook opens with a cake to be baked in celebration of both New Year's Day and the Emancipation Proclamation. Scattered among the recipes one finds excerpts from documents such as the Gettysburg Address and the Universal Declaration of Human Rights. Tributes to well-known figures like Harriet Tubman, Phillis Wheatley, and Booker T. Washington appear alongside brief bios and recipes in celebration of important but obscured figures. This delightful collection of delicious recipes helps us commemorate African-American history throughout the year.
