(2) In books where there are images such as portraits, maps, sketches etc We have endeavoured to keep the quality of these images, so they represent accurately the original artefact. Although occasionally there may be certain imperfections with these old texts, we feel they deserve to be made available for future generations to enjoy.

Book excerpt: Excerpt from The Physical Chemistry of the Proteins The Proteins, with which, as its title indicates, this work has most particularly to deal, have, ever since the publication of the classic researches of Graham, been generally recognized as typical examples of that class of substances which Graham designated "Colloids." This work, therefore, although primarily concerned with the physical chemistry of a limited section of the class, may also, in some measure, be regarded as contributing to an analysis of the properties and behavior of colloids in general, in so far as these permit of illustration by the properties and behavior of the various members of the protein group. The leading problems in every field of chemical investigation are, to a large extent, determined by the salient properties of the substances which form the subject of inquiry, and for this reason a thorough acquaintance with what may be termed the "descriptive chemistry" of any group of substances is prerequisite to a successful attempt to interpret their behavior. If we were to endeavor to interpret the behavior of the proteins solely in the light of preconceptions derived from the study of the chemistry of the metals, for example, or the simpler organic compounds, we would find that the behavior of the proteins displays merely a bewildering variety of inconsistencies. Their "amphoteric" character, their multiple basicity and acidity, their instability in aqueous solution and, above all, the enormous mass and catenary configuration of their molecules, confer upon them properties which are comparatively unfamiliar in other fields of chemistry or else exaggerate properties which are normally displayed by the simpler chemical bodies only to a comparatively negligible degree. The proteins in this respect are not exceptional. Thus the mode of investigation and the interpretation of the behavior of the various lipoids must primarily be conditioned by their very general insolubility in water and instability in the presence of oxygen. Book excerpt: Excerpt from Animal Proteins On the subdivision, classification and nomenclature of the proteins much ink has been Spilled, and it is impossible in this volume to go into the various systems which have been suggested. It should be noted, however, that some writers habitually use the terms proteid or albuminoid as Synonyms for protein. The classification of proteins adopted in this work is used because it is the most suitable for a volume on industrial chemistry and has the additional merits that it is simple and is already used in several standard works on industrial chemistry. It is based Upon the behaviour of the proteins towards water, a matter of obvious moment in manufacturing processes. On this basis proteins may be divided into albumins, keratins and gelatins. Book excerpt: Excerpt from The Vegetable Proteins The subject of Physiological Chemistry, or Biochemistry, is enlarging its borders to such an extent at the present time, that no single text-book upon the subject, without being cumbrous, can adequately deal with it as a whole, so as to give both a general and a detailed account of its present position. It is, moreover, difficult, in the case of the larger text-books, to keep abreast of so rapidly growing a science by means of new editions, and such volumes are therefore issued when much of their contents has become obsolete. For this reason, an attempt is being made to place this branch of science in a more accessible position by issuing a series Of monographs upon the various chapters Of the subject, each independent of and yet dependent upon the Others, so that from time to time, as new material and the demand therefor necessitate, a new edition of each mono graph can be issued without re-issuing the whole series. In this way, both the expenses of publication and the expense to the purchaser will be diminished, and by a moderate outlay it will be possible to Obtain a full account of any particular subject as nearly current as possible. Book excerpt: Excerpt from The Chemical Constitution of the Proteins, Vol. 1 of 2 Investigations Upon their Chemical constitution have been carried on now for nearly a century, but it is only during the last ten years that, by the work of Emil Fischer and his pupils, any Clear view has really been obtained of their actual constitution. The main result of these investigations is that the protein molecule is built up of a series of amino acids, which form the basis of their composition, and of which the following have been definitely determined. Book excerpt: Excerpt from Proteins and the Theory of Colloidal Behavior The writer's investigations have led to the result that this last conclusion is based on a methodical error, as far as the proteins are concerned; namely, to the failure to measure the hydrogen ion concentration of the protein solutions, which happens to be one of the main variables. When the hydrogen ion concentrations are duly measured and considered, it is found that proteins combine with acids and alkalies according to the stoichiometrical laws of classical chemistry and that the chemistry of proteins does not differ from the chemistry of crystalloids. Book excerpt: Excerpt from The Protein Element in Nutrition The important part played by the complex body protein and its allied nitrogenous compounds is acknowledged by all students of nutrition. AS a food material it is the one constituent that is indis pensable; it is the only substance of the three main classes of proximate principles that is absolutely essential for the carrying out of those vital phenomena whose aggregate may be considered to represent the processes of life. The more important tissues of both animal and vegetable life consist largely of this protein material, and it is in connection with the changes protein undergoes within the living organism the chemical changes by which the protein of the food is prepared for absorption and incorporation into the bioplasm, the changes which it undergoes while it shares in the life of the tissues, and, finally, those by which it is broken down again into waste products and eliminated from the body - it is in connection with these that much of the interest in the subject centres. It is but natural, therefore, that the chemistry of metabolic processes Should have attracted the attention of large numbers of investi gators. The result oi this has been that the literature of the subject has already attained enormous proportions.
