Available in PDF, EPUB and Kindle. Book excerpt: As a professional chef for 30 years, most recently as Culinary Director and Executive Chef developing menus for the corporate caf's of half of America's Fortune 500 companies, I've lived around great food. I've known the kitchens and creations of outstanding culinarians, and spent my whole career on the cutting edge of dining trends. While this has certainly fed my passion for food, I trace my love for it back to one person in particular who lived to cook. My mother, aka 'The Food Pusher.' The moniker was given to her by one of my friends when I was a teenager. Over the years, I discovered that practically everyone knows a food pusher. It might be a friend, a family member, or a perfect stranger. Within moments after walking in their door -- perhaps even for the first time -- she will ask, 'Would you like something to eat?' It's a rhetorical question. Regardless of your answer, you will sit, and you will eat. While food pushers know no bounds of race, creed or color, it is largely an Italian stereotype. From my personal experience, deservedly so. In the unlikely event that you don't personally know food pushers, you've certainly seen them in movies. Recall the scene from the classic gangster movie Goodfellas, where the characters of DeNiro, Liotta and Joe Pesci sneak into Pesci's mother's house in the middle of the night to get shovels to bury the mobster they just kicked to death. The mother awakens, and within a few minutes and in spite of the men?s repeated refusals, they're all sitting down to a huge breakfast of bread, eggs, potatoes, onions and peppers, and Italian sausage. In The Food Pusher's Cookbook, I open the Melfi family recipe vault with the spirit of abundance and love for food with which it was invariably served. Most are my mother's and grandmother's original recipes -- no doubt going back countless generations further -- but I also include creations of my own that extend the finest Italian tradition. Enjoy, and pass them on. 5.0 out of 5 stars Best Italian American Cookbook yet!, March 15, 2012 By megan carbone This review is from: The Food Pusher's Cookbook: Recollections & Recipes of an Italian American Tradition (Paperback) I bought this for my mother in law who is 90 years old. She was telling me about this cookbook but of course being 90 she has no internet access. I ordered thru Amazon, and after she got it she LOVED it, and brought it over to me to look at it. Needless to say after reading it and looking at the recipes I knew it was really a TRUE cookbook. I just ordered it for myself! 5.0 out of 5 stars Food Pusher is a great chef!, July 18, 2011 By MDonner This review is from: The Food Pusher's Cookbook: Recollections & Recipes of an Italian American Tradition (Paperback) It is about time that Rick Melfi shared his family recipes and traditions! Rick is a great chef and I would highly recommend this cookbook. Great gift.

Book excerpt: It wasn't until I was a student at the Culinary Institute of America in the late 1970s that I first realized that growing up as a first generation Italian-American family in the Bronx and New Jersey wasn't as typical as I had thought. My parents and their parents were all born and raised in Italy. Throughout my youth and beyond, my father and mother referred to their five children, four boys and a girl, by the number in the order of which we were born. To this day, my mother still occasionally refers to me as "Number Two Son." But when it came to hanging around the kitchen, I was definitely the number one pest. I was the little punk kid always by my mother's side as she was cooking or baking. I would jockey for position wherever my mother moved, stand on a kitchen chair up against the stove, and otherwise constantly be in her way as I tried to get a better look at whatever was being done. Same when either of the grandmothers - Nona Lisa or Grandma Melfi - or other relatives were there. Maybe it was something in the water around Pisa, but I suspect it's a genetic condition. For my mother, her mother, cousins, aunts and countless generations before them in this food-fueled blood line, the world revolved around the kitchen and dining room table. Life was not good unless family, friends, or anyone close to the dinner table was fed to excess, ritually seduced with course after course of delicious, abundant and temptingly presented food. This attitude seemed to pervade all branches of the family, but my inspiration and mentor was Maria Gracia Melfi, aka Mama Melfi, aka The Food Pusher.

Alana Chernila hears this sort of question all the time. Arugula, celeriac, kohlrabi, fennel, asparagus--whatever the vegetable may be, people always ask how to prepare it so that the produce really shines. Although there are countless ways to eat our vegetables, there are a few perfect ways to make each vegetable sing. With more than 100 versatile recipes, Eating from the Ground Up teaches you how to showcase the unique flavor and texture of each vegetable, truly bringing out the best in every root and leaf. The answers lie in smart techniques and a light touch. Here are dishes so simple and quick that they feel more intuitive than following a typical recipe; soups for year-round that are packed with nourishment; ideas for maximizing summer produce; hearty fall and winter foods that are all about comfort; impressive dishes fit for a party; and tips like knowing there's not one vegetable that doesn't perk up with a sprinkle of salt. No matter the vegetable, the central lesson is: don't mess with a good thing.

Available in PDF, EPUB and Kindle. Book excerpt: “I’m drenched in cream, marinated in wine, basted in cognac, and thoroughly buttered by the end of The Alice B. Toklas Cook Book.” —Eula Biss, New York Times bestselling author of Having and Being Had A beautiful new edition of the classic culinary memoir by Alice B. Toklas, Gertrude Stein’s romantic partner, with a new introduction by beloved culinary voice Ruth Reichl. Restaurant kitchens have long been dominated by men, but, as of late, there has been an explosion of interest in the many women chefs who are revolutionizing the culinary game. And, alongside that interest, an accompanying appetite for smart, well-crafted culinary memoirs by female trailblazers in food. Nearly 70 years earlier, there was Alice. When Alice B. Toklas was asked to write a memoir, she initially refused. Instead, she wrote The Alice B. Toklas Cook Book, a sharply written, deliciously rich cookbook memorializing meals and recipes shared by Hemingway, Fitzgerald, Wilder, Matisse, and Picasso—and of course by Alice and Gertrude themselves. While The Autobiography of Alice B. Toklas—penned by Gertrude Stein—adds vivid detail to Alice’s life, this cookbook paints a richer, more joyous depiction: a celebration of a lifetime in pursuit of culinary delights. In this cookbook, Alice supplies recipes inspired by her travels, accompanied by amusing tales of her and Gertrude’s lives together. In “Murder in the Kitchen,” Alice describes the first carp she killed, after which she immediately lit up a cigarette and waited for the police to come and haul her away; in “Dishes for Artists,” she describes her hunt for the perfect recipe to fit Picasso’s peculiar diet; and, of course, in “Recipes from Friends,” she provides the recipe for “Haschich Fudge,” which she notes may often be accompanied by “ecstatic reveries and extensions of one’s personality on several simultaneous planes.” With a heartwarming introduction from Gourmet’s famed Editor-in-Chief Ruth Reichl, this much-loved, culinary classic is sure to resonate with food lovers and literary folk alike.
