Book excerpt: This book provides a historical and analytical account of changes in the seafood supply chain in Britain from the mid-twentieth century to the present, looking at the impact of various types of governance. The governance of marine fisheries has been a contested issue for decades with increasing anxieties about overfishing. In tandem, the rise of aquaculture, fish and shellfish farming, has driven another set of environmental concerns. In the food system, there have been scandals about safety failures and about fraud. At the same time, governments issue advice urging people to eat fish for its health benefits. In the context of these problems and contradictions, how have governments, the food industry and ordinary consumers responded? The author shows how different types of governance and regulation have been used to seek seafood sustainability and food safety and to communicate nutritional messages to the public and with what effects. The book also presents a new model for understanding food chains which combines governance and power approaches with an emphasis on understanding the interests served and the resulting balance of public and private benefits. This shows that the role of state regulation should have greater emphasis in governance and agri-food analysis and that theories about supply chain functioning, including the part played by major retailers and civil society, should be modified by a more nuanced understanding of the role of standards and certification systems. Although much of the focus is on the UK and Europe, this book provides key lessons internationally for the governance of seafood and other agri-food supply chains. The book will be of interest to students of food policy and those working in the seafood industry or studying for connected qualifications, and more widely to readers with an interest in seafood issues and problems.

Available in PDF, EPUB and Kindle. Book excerpt: The food supply chain needs to reassure consumers and businesses about the safety and standards of food. Global estimates of the cost of food fraud to economies run into billions of dollars hence a huge surge in interest in food authenticity and means of detecting and preventing food fraud and food crime. Approaches targeting DNA markers have assumed a pre-eminence. This book is the most comprehensive and timely collection of material from those working at the forefront of DNA techniques applied to food authenticity. Addressing the new field of analytical molecular biology as it combines the quality assurance rigour of analytical chemistry with DNA techniques, it introduces the science behind DNA as a target analyte, its extraction, amplification, detection and quantitation as applied to the detection of food fraud and food crime. Making the link with traditional forensic DNA profiling and describing emerging and cutting-edge techniques such as next generation sequencing, this book presents real-world case studies from a wide perspective including from analytical service providers, industry, enforcement agencies and academics. It will appeal to food testing laboratories worldwide, who are just starting to use these techniques and students of molecular biology, food science and food integrity. Food policy professionals and regulatory organisations who will be using these techniques to back up legislation and regulation will find the text invaluable. Those in the food industry in regulatory and technical roles will want to have this book on their desks.

Available in PDF, EPUB and Kindle. Book excerpt: Focusing on the experiences of Thailand and Australia, this book examines the impact of trade-restrictive measures as related to the EU’s regulations to prevent Illegal, Unreported and Unregulated (IUU) fishing. It is widely accepted that IUU fishing is harmful, and should be stopped, but there are different approaches to tackling it. Acknowledging this, this book argues that major efforts to fight IUU fishing require careful analyses if the goal is to achieve optimal results and avoid unintended consequences. The book draws on the recent experiences of Thailand and Australia to offer an empirical examination of one increasingly prominent solution, trade-restrictive measures. With Thailand representing direct, active intervention by the EU and Australia a more indirect dispersion of policy narratives and discourses, the book provides a rounded view on how likely it is that different countries in different situations will adapt to the changing policy norms regarding IUU fishing. Understanding the reactions of countries who might be targeted, or otherwise be influenced by the policy, generates new knowledge that helps inform a more effective and scalable implementation of the policy on the part of the EU and a better governance preparedness on the part of non-EU fishing nations. In broader terms, this book exposes a key moment of change in the compatibility between environmental regulations and international trade. The EU IUU policy is a prime example of a policy that uses the mechanisms of international trade to account for environmental and conservation objectives. By way of the unilateral and trade-restrictive stance against IUU fishing, the EU has positioned itself as a major market and normative power, driving its sustainability norms outwards. This book sheds light on the efficacy of this policy setup based on the analysis of country perspectives, which is a key factor influencing its potential spread. This book will be of interest to students and scholars of international fisheries politics, marine conservation, environmental policy and international trade, and will also be of interest to policymakers working in these areas. Book excerpt: Food Legislation of the UK: A Concise Guide contains the legislative controls that regulate the work of food technologists in the United Kingdom. The book reviews the "Food and Drugs Act 1955 (as amended)" which provides for the control of food composition, labeling, and hygiene through the issuance of Regulations as Statutory Instruments. The text also discusses other acts and regulations concerning the sale of products, trade descriptions, weights, and measures. England, Wales, Scotland, and Northern Ireland have different food laws and acts. In general these acts provide for the preparation and sale of milk, dairies, and cream substitutes; for the regulation of markets, slaughterhouse, cold-air storage; and for administration and enforcement. The "Weights and Measures Act 1963 (as amended)" covers all aspects of weighing and measuring different kinds of foods (fresh or pre-packed). Miscellaneous acts concern control and prevention of pests, infestation of food, and enforcement of inspection authority. Other food regulations and orders establish certain food standards, control additives, prevention of contaminants, labeling supervision, hygiene check-up, and weight and measure inspection. The book can help students of food technology familiarize with legal standards followed in the industry, for technicians, or officers connected in food processing, hotels, and restaurant management.

Available in PDF, EPUB and Kindle. Book excerpt: This book investigates how fish experience their lives, their amazing senses and abilities, and how human actions impact their quality of life. The authors examine the concept of fish welfare and the scientific knowledge behind the inclusion of fish within the moral circle, and how this knowledge can change the way we treat fish in the future. In many countries fish are already protected by animal welfare legislation in the same way as mammals, but in practice there is still a major gap between how we ethically view these groups and how we actually treat them. The poor treatment of fish represents a massive animal welfare problem in aquaculture and fisheries, both in terms of the number of animals affected and the severity of the welfare issues. Thanks to its interdisciplinary scope, this thought-provoking book appeals to professionals, academics and students in the fields of animal welfare, cognition and physiology, as well as fisheries and aquaculture management.
