Beginning weights averaged 68.23 kg. RAC was included in the diet at 0, 5, and 10 ppm for 25 days until an average weight of 92 kg. Last rib fat thickness was lower (P0.05) for the 5 ppm and 10 ppm groups. No other differences (P0.05) were found between treatment groups for growth, feed efficiency, carcass cutability, or pork quality traits. These results suggest that feeding ractopamine hydrochloride in lightweight swine diets can reduce last rib fat while not impacting growth or other carcass traits.

Book excerpt: This experiment was designed to evaluate the effects of ractopamine hydrochloride (RAC) on muscle quality and sensory attributes of three genetic lines of swine. Berkshire (n = 76), Duroc (n = 81), and high-lean commercial crossbred (n = 75) barrows and gilts were fed either a standard commercial diet or a diet supplemented with RAC (10 ppm). The trial was conducted using a randomized complete block design, with animals blocked according to litter, gender, and starting weight. Pigs were started on the experimental diet at approximately 85.1 kg and remained on test for 28 d. Pigs were harvested at a commercial abattoir and muscle quality measurements taken at 24 and 48 h post-mortem. Quality traits measured were visual firmness and wetness (24 h), pH (24 h and 48 h), visual marbling and color (48 h), Minolta color scores (24 h and 48 h), and water-holding capacity (48 h). Sensory attributes of the loin were assessed by a three-person trained sensory panel to subjectively evaluate juiciness, tenderness, and chewiness (sustained tenderness). Objective measurements of tenderness (Instron), percentage cooking loss, and chemically separated loin lipid content (intramuscular fat, IMF) were also obtained. The inclusion of RAC in the diet had no significant effect on muscle quality assessments, sensory attributes, or objective measures of palatability. Book excerpt: A high moisture corn/soybean meal-based finishing ration was used to examine the effects of roughage source (corn silage, alfalfa hay), level of dietary roughage (8, 16, 24%), and ractopamine supplementation (none, Optaflexx) on growth performance, carcass traits, and beef quality for finishing 108 steers and 24 heifers (initial BW = 308 kg). Cattle were allocated by gender to 12 management regimen subclasses. Optaflexx (trade name for ractopamine hydrochloride) was fed over the last 28 d on feed with cattle marketed after common days on feed. Growth performance (ADG, feed intake, and feed efficiency) and carcass traits were assessed on an individual animal basis. A primal rib and semitendinosus (ST) muscle from each animal were processed at the University of Guelph Meat Laboratory for carcass and meat quality evaluations. Tenderness was determined using shear force assessment of product aged 7, 14, and 21 d. Average daily gains were similar (P > 0.27) across main effects while use of corn silage as the roughage source decreased (P 0.001) dry matter intake and improved (P 0.001) feed efficiency compared to feeding alfalfa hay. Roughage level and beta agonist supplementation did not affect (P 0.13) dry matter intake or feed efficiency. When the last 28 days on feed were examined, Optaflexx supplementation increased (P 0.001) weight change, ADG, and improved feed conversion, while DMI remained unchanged (P 0.373). Carcass traits including hot carcass weight, grade fat, longissimus muscle area, marbling, and body composition as assessed by rib dissection (% lean, fat, bone) were not affected (P 0.14) by roughage level, source, or use of Optaflexx. Fat partitioning and liver abscess scores were unaffected (P > 0.09) by source and level of roughage fed, and use of Optaflexx. Source and level of dietary roughage did not affect color (P > 0.21) or shear force (P > 0.20) values for longissimus (LM) and semitendinosus (ST) steaks. Lower DMI and better feed conversion can be achieved using corn silage as the roughage source, while inclusion of up to 24% roughage in finishing diets may not negatively impact gains, carcass characteristics or beef quality. Beef producers may be able to increase amounts of roughage in the diet to lower cost of production without compromising growth performance and carcass and meat quality.

Book excerpt: Abstract: Two experiments, using 140 purebred Berkshires and 60 Berkshire influenced pigs, were conducted to evaluate the influence of dietary energy on growth performance and resulting carcass characteristics of Berkshire and Berkshire influenced pigs. Pigs were blocked by litter and randomly allotted to four pens upon entering the growing-finishing barn to one of four treatments; 6 month low energy (6LE), 6 month standard energy (6ST), 7 month low energy (7LE), and 7 month standard energy (7ST). The 6ST and 7LE treatments were designed to achieve a live weight of approximately 113 kg at time of harvest. Individual pig weights and pen feed disappearance were measured weekly to calculate ADG, ADFI, and G:F. Monthly, carcass composition was assessed using ultrasonic measurement for 10th rib backfat and loin muscle area (LMA). Final ultrasonic measurements for backfat and LMA prior to harvest were utilized for carcass composition characteristics. A three rib section of the longissimus muscle, composed of the 10th, 11th, and 12th, rib and a six square inch belly sample were collected from the right side of each carcass. Each loin section was evaluated for final pH, subjective and objective color, marbling scores, and IMF. A subcutaneous fat sample from each loin and belly were also used to determine SFA, MUFA, and PUFA as indication of fat quality using near-infrared spectroscopy.
