Book excerpt: Chromatographic Analysis of the Environment, Third Edition is a detailed handbook on different chromatographic analysis techniques and chromatographic data for compounds found in air, water, soil, and sludge. Taking on a new perspective from previous editions, this third edition discusses the parameters of each environmental compartment in a consistent format that highlights preparation techniques, chromatographic separation methods, and detection methods. Most of the data are compiled in tables and figures to elucidate the text as needed. Separate chapters approach specific aspects of sampling methods especially designed for environmental purposes, quantification of environmental analytes in difficult matrices, and data handling. The second part of the book focuses on the analysis of hazardous chemicals in the environment, including volatile organic carbons (VOCs), polycyclic aromatic hydrocarbons (PAHs), polychlorinated biphenyls (PCBs), and endocrine-disrupting chemicals (EDCs). In addition, the authors feature information on compounds such as phosphates, organic acids, halogenated VOCs, amines, and n-ntirosamines, isocyanates, phthalate esters, and humic substances. Presenting important theoretical and practical aspects from sample collection to laboratory analysis, Chromatographic Analysis of the Environment, Third Edition is a unique resource of chromatographic techniques, data, and references that are useful to all scientists involved in the analysis of environmental compounds.

Book excerpt: Forensic Issues in Alcohol Testing analyzes the acute and chronic effects of alcohol intoxication and a variety of methods with which to measure alcohol concentration in blood, urine, and breath testing. It considers variations in acute impairment by detailing the disposition and fate of alcohol in the body and factors influencing absorption, distribution, and elimination. Specific chapters address difficulties in measuring and interpreting post-mortem alcohol concentrations, recent advances in biochemical testing, and the efficacy of tests as evaluators of dependence or potential for dependence. Containing more than 40 tables, the information is extensively referenced and supported by a range of studies.

Available in PDF, EPUB and Kindle. Book excerpt: The idea of publishing this book on Perfumes: Art, Science and Technology grew out of the observation that, on the verge of the 1990s, there was really no state-of-the-art compilation of the relevant know-how on which the fragrance industry is based. It was obvious that such a compilation would be well received, not only by perfumers and fragrance chemists, but also by those involved in related trade and marketing or in the development and distribution of consumer products, by researchers from other fields, by students and, finally, by amateurs of perfumes in general. Therefore, we set out to find competent authors who were willing to contribute to the endeavour, and we did not do this unselfishly; on the contrary, we selected a wish-list of specialists who would provide us with new insight and characterize the trends and research priorities determining the future. Thus, we were counting on learning much ourselves in the course of the project. We were more than pleasantly surprised by the reactions to our first letter-and so was Elsevier. We certainly had not expected perfumers who are usually much more 'doers' than 'writers' to react in such an enthusiastic way; especially, the spontaneous affirmative answer from the famous E. Roudnitska created a momentum which contributed significantly to the successful comple tion of this book. But, of course, we should not create the impression that the other authors' chapters are less important, and we thank all of them heartily for their invaluable effort.

Available in PDF, EPUB and Kindle. Book excerpt: HANDBOOK OF ALCOHOLIC BEVERAGES A comprehensive two-volume set that describes the science and technology involved in the production and analysis of alcoholic beverages HANDBOOK OF ALCOHOLIC BEVERAGES Technical, Analytical and Nutritional Aspects At the heart of all alcoholic beverages is the process of fermentation, particularly alcoholic fermentation, whereby sugars are converted to ethanol and many other minor products. The Handbook of Alcoholic Beverages tracks the major fermentation process, and the major chemical, physical and technical processes that accompany the production of the world’s most familiar alcoholic drinks. Indigenous beverages and small-scale production are also covered to a significant extent. The overall approach is multidisciplinary, reflecting the true nature of the subject. Thus, aspects of biochemistry, biology (including microbiology), chemistry, health science, nutrition, physics and technology are all necessarily involved, but the emphasis is on chemistry in many areas of the book. Emphasis is also on more recent developments and innovations, but there is sufficient background for less experienced readers. The approach is unified, in that although different beverages are dealt with in different chapters, there is extensive cross-referencing and comparison between the subjects of each chapter. Appropriate for food professionals working in the development and manufacture of alcohol-based drinks, as well as academic and industrial researchers involved in the development of testing methods for the analysis and regulation of alcohol in the drinks industry. Divided into five parts, this comprehensive two-volume work presents: INTRODUCTION, BACKGROUND AND HISTORY: a simple introduction to the history and development of alcohol and some recent trends and developments. FERMENTED BEVERAGES: BEERS, CIDERS, WINES AND RELATED DRINKS: the latest innovations and aspects of the different fermentation processes used in beer, wine, cider, liqueur wines, fruit wines, low-alcohol and related beverages. SPIRITS: covers distillation methods and stills used in the production of whisky, cereal- and cane-based spirits, brandy, fruit spirits and liqueurs. ANALYTICAL METHODS: covering the monitoring of processes in the production of alcoholic beverages, as well as sample preparation, chromatographic, spectroscopic, electrochemical, physical, sensory and organoleptic methods of analysis. NUTRITION AND HEALTH ASPECTS RELATING TO ALCOHOLIC BEVERAGES: includes a discussion on nutritional aspects, both macro- and micro-nutrients, of alcoholic beverages, their ingestion, absorption and catabolism, the health consequences of alcohol, and details of the additives and residues within the various beverages and their raw materials.
