Available in PDF, EPUB and Kindle. Book excerpt: Abalones are marine snails from the family Haliotidae . This family of shellfish is comprised of 56 recognized species worldwide and eight known species in California. The Native Peoples of California fished and dove for abalone for thousands of years. Chinese immigrants first arrived in California around 1850 to work in the goldfields and on the railroads. Some found their way to Monterey and discovered an abundance of large red abalone that nobody was using. By the mid-1890s, Japanese fishermen had also discovered this rich abundance of abalone. Soon, the Japanese introduced helmet diving technology to the fishery. In 1908, a German restaurateur in Monterey began slicing abalone into steaks. Soon, men from the Azores and elsewhere started fishing abalone along the Central Coast of California. By the 1950s, there were hundreds of people and families fishing this delicacy commercially and thousands more fishing for recreation and subsistence. Steven L. Rebuck grew up in the abalone fishery and served as the abalone technical consultant to the Southern Sea Otter Recovery Team from 1993 to 2004. Christopher Rebuck, an internet technician, is a native Californian and Steven's oldest son. He began surfing and hunting abalone at the age of five. Tim Thomas is the former historian and curator of the Monterey Maritime Museum. He authored The Abalone King of Monterey: "Pop" Ernest Doelter, Pioneering Japanese Fishermen & the Culinary Classic that Saved an Industry with The History Press in 2013.

In the kitchen of his Alvarado Street restaurant in Monterey, California, Pop transformed rubbery gastropods into an epicurean delight. Working with red abalone collected by Monterey's community of Japanese divers, Pop dipped the foot in egg wash, added a secret ingredient, rolled it in cracker crumbs and cooked it quickly in olive oil. Tourists and celebrities alike sat down at Pop's table to enjoy his famous recipe, and eventually, he shipped steaks on ice to hotels and restaurants throughout the state. Pull up a chair as historian Tim Thomas recounts the story of an innovative restaurateur and a group of pioneering fishermen who turned underappreciated mollusks into the talk of the 1915 San Francisco World's Fair.

Book excerpt: Shortly after the Gold Rush in the mid-19th century, the first commercial abalone fishery sprang to life along the shores of central and southern California, an industry founded and developed by pioneering Chinese immigrants. A number of archaeological survey and excavation projects along California’s offshore islands and careful historical records searches have uncovered details on how Chinese immigrants managed to establish what would become a multi-million dollar commercial fishery. By shipping dried black abalone to Chinese communities in the American West, and exporting the product to a ready market in China, Chinese merchants in Santa Barbara assembled an elaborate trade network that spanned from Santa Barbara to their home villages in China. Anti-Chinese sentiments and marginalization, however, left the activities and lifeways of these fishermen and merchants largely lost in the early history of the state. Here, I offer the first synthesis of archaeological and historical data of Chinese abalone fishing across the Northern and Southern Channel Islands. My results reveal details about the business practices of Chinese fishermen, their fishing strategies and lifeways, and flexible island harvesting patterns that were adapted to meet the unique challenges of the various Channel Islands. By examining export trade networks created by Chinese merchants, I also demonstrate the viability and profitability of Chinese fishing endeavors. This study fills a critical gap for understanding the broader context of California’s historical fisheries and contextualizes the state’s social and climate at the dawn of the globalized, commercial fishing industry.
