Available in PDF, EPUB and Kindle. Book excerpt: "The Basis of Grape Standardization" is a 1925 treatise by English-born American vintner Frederic Theodore Bioletti (1865 - 1939). Bioletti studied at the University of California, Berkeley from 1889 to 1900, where he worked with prominent soil scientist Professor E.W. Hilgard. His work with Hilgard on the fermentation of wines under different conditions were significant in helping California vintners to refine their wine production practices and improving the resulting wines. Bioletti was the first chair of the Department of Viticulture and Enology and founded the grape breeding program at the University of California Agricultural Experiment Station. This vintage volume will appeal to those with an interest in American winemaking, and it would make for a worthy addition to collections of allied literature. Contents include: "The Object of Standardization", "The Nature of Standardization", "Inclusion of Bad and Poor Samples and Exclusion of Good with Various Balling Degree Standards", "Indicated Minimum Standard", "Discussion", "Balling, Colour and Quality in Tokay Samples", "Influence of Variety, Locality, and Season on the Correlation of Balling Degree and Quality", etc. Many vintage books such as this are becoming increasingly scarce and expensive. We are republishing this volume now in an affordable, modern, high-quality edition complete with a specially-commissioned new biography of the author.

Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Enological Studies: The Chemical Composition of American Grapes Grown in Ohio, New York, and Virginia Equally important from the point of view Of vinification is the sugar content of the grape. The only source Of natural alcohol in wine is fermentation of the sugars which exist in the original grape. These Sugars exist in combination with other bodies, many Of which enter into the finished product and serve to give it character and quality. In fact, the smaller the quantity of alcohol which can be secured in the finished wine, and at the same time permit of its manufacture and keeping, the better. Other things being equal, the wine which has the smallest percentage Of alcohol is to be preferred] The data which have. Been secured indicate the varieties of grapes which give the best percentage of sugar for proper fermentative purposes. These studies will lay broad and deep the foundation for the prao tical working out of the problem Of the utilization Of grapes for the various purposes for which grape products are employed. While the work has been carried on under the general direction and supervision of the Chief of the Bureau Of Chemistry, the details of it and the technique'of the processes have been in the hands of Mr. William B. Alwood, who has given to the work his undivided attention and has with enthusiasm and success attacked the many problems which have been presented. Shiraz and Chardonnay were chosen as experimental varieties because these cultivars presented a large range of variability in the field. The extent of the variation within each of the recorded berry parameters was assessed using the coefficient of variation (CV), a unitless measure of sample variability relative to the sample mean, ideally suited to comparative studies.
Book Synopsis Grapes and Health by : John M. Pezzuto
Download or read book Grapes and Health written by John M. Pezzuto and published by Springer. This book was released on 2016-05-25 with total page 241 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book offers a thorough review of the scientific research that links the consumption of grapes to better health. The book starts with a basic review of grape biology, including the key families of phytochemicals found in grapes, and where they are found. An overview of the rationale for and subsequent creation of a standardized grape powder for use in basic and clinical research provides insight and understanding regarding its widespread use in grape-specific research today. The remaining chapters each thoroughly examine a key area of health, demonstrating a significant scope of impact on well-being. The book examines the role of grapes in supporting heart health under multiple angles: general cardiovascular effects, as well as specific effects directly linked to atherosclerosis and hypertension. Other emerging and important areas of health are examined, ranging from grapes and cancer, where grape consumption has been shown to protect healthy colon tissue; grapes and inflammation, where grapes have been shown to block inflammatory activity in immune cells of fat tissue; to brain health, where a grape-enriched diet has been shown to protect against neuronal damage due to loss of oxygen in the brain, as well as against oxidative stress-related anxiety and resulting memory loss; to grapes and eye health where grape consumption has been shown to protect the retina from damage.
