Book excerpt: As an award-winning chef and the owner of six busy restaurants across two continents, Nancy Silverton was so consumed by her life in the professional kitchen that for years she almost never cooked at home. With her intense focus on the business of cooking, Nancy had forgotten what made her love to cook in the first place: fabulous ingredients at the height of their season, simple food served family style, and friends and loved ones gathered around the dinner table. Then, on a restorative trip to Italy—with its ripe vegetables, magnificent landscapes, and long summer days—Nancy began to cook for friends and family again, and rediscovered the great pleasures (and great tastes!) of cooking and eating at home. Now, in Mozza at Home, Nancy shares her renewed passion and provides nineteen menus packed with easy-to-follow recipes that can be prepared in advance (with no fancy restaurant equipment needed!) and are perfect for entertaining. Organized by meal, each menu provides a main dish along with a complementary selection of appetizers and side dishes. Under Nancy’s guidance you can mix and match all the options depending on the size of your gathering. Make a few sides for a small dinner party with friends, or make them all for a delicious family feast! And don’t forget dessert—there’s an entire chapter dedicated to end-of-meal treats such as Devil’s Food Rings with Spiced White Mountain Frosting and Dario’s Olive Oil Cake with Rosemary and Pine Nuts that can be prepared hours before serving so that the host gets to relax during the event too. Whether it’s Marinated Olives and Fresh Pecorino and other appetizers that can be put out while you’re assembling the rest of the meal . . . salads, such as Endive Salad with Date Anchovy Dressing, composed of sturdy lettuces that won’t wilt . . . simple sides, such as Roasted Carrots and Chickpeas with Cumin Vinaigrette, that are just as delicious served at room temperature as they are warm . . . or show-stopping mains such as the Flattened Chicken Thighs with Charred Lemon Salsa Verde—there is something here for everyone and every occasion. With clever tips on how to organize your table and your time when serving many guests, Mozza at Home helps you throw the perfect dinner party—one that’s positively stress-free and delicious!

It's about the summer when Margaret Rose turned twelve--the same year that Cabbage Patch dolls were popular, that Sally Ride became the first woman to go into space, that El Nino turned the world upside-down. Margaret Rose begins her summer with a miserable experience at camp, from which she's rescued by her beloved, eccentric uncles. Little does she know that her uncles, in turn, need rescuing themselves--from a tyrannical city council determined to tear down her uncles' life work--three spectacularly beautiful towers that her uncles have been building since before Margaret was a baby. A rousing book about intelligence, art, and the fierce preservation of individuality, from EL Konigsburg.

Available in PDF, EPUB and Kindle. Book excerpt: Forty years after the discovery of the helix nature of DNA and more than twenty after the first applications of recombinant DNA technology to the pharmaceutical industry, the Pandora's vase of biotechnology seems far from being empty. New products for agriculture and the food industry are constantly being placed on the market, and powerful monitoring techniques have been developed to track non-modified and genetically modified vaccines, viruses, microbes and plants released into the environment. Molecular approaches for taxonomic purposes, which might also be useful for quality control and assurance, have been successfully developed and used for taxonomic purposes in the last decade for both prokaryotic and eukaryotic cells, including yeasts and filamentous fungi. Mycorrhizae are one example of a traditional biotechnology that can greatly benefit from the latest molecular approaches. These universal symbioses between soil fungi and plant roots playa central role in most of the natural and agricultural ecosystems in such key processes as nutrient cycling, soil structural conservation and plant health. For these reasons, mycorrhizae have been successfully used to improve the quality of forest and agricultural seedlings, to produce high-quality micropropagated plants and to increase the production of edible mushrooms of high economic value, such as truffles. However, although controlled inoculation of oak and hazel seedlings with ectomycorrhizal truffles has been carried out for decades in France and Italy, and is still expanding commercially, several technological gaps remain to be filled.

Book excerpt: This book is aimed at promoting the Region of Lombardy and raising awareness of the triumph of flavours, emotions, traditions and quality preserved in the fruits of its lands. With 1.3m hectares of agricultural territory, our region has the largest area dedicated to this sector in Italy. This primary position results not only from thousands of years of evolution, but also and above all from a laboratory fomenting future-oriented ideas, innovations and technology, which guarantee the production of healthy, genuine foodstuffs that are certified and protected. Leafing through the recipes is like going on a journey, just as the title suggests – by following Lombardy’s 12 Wine and Food Roads, the reader is led to rediscover the region's typical dishes which, handed down through the generations with great love and enthusiasm, contribute to the enhancement of a unique heritage consisting of 248 excellent agricultural products and foodstuffs, of which 31 have PDO or PGI status (13% of the branded products of Italian origin), and 42 wines with DOCG, DOC or IGT denominations. Each route includes an introduction to the area in question and 5 recipes with wine pairings, which enables the planning of a complete menu.

Book excerpt: An authentic guide to the festive, mouthwatering sweets of Southern Italy, including regional specialties that are virtually unknown in the US, as well as variations on more popular desserts such as cannoli, biscotti, and gelato. As a follow-up to her acclaimed My Calabria, Rosetta Costantino collects 75 favorite desserts from her Southern Italian homeland, including the regions of Basilicata, Calabria, Campania, Puglia, and Sicily. These areas have a history of rich traditions and tasty, beautiful desserts, many of them tied to holidays and festivals. For example, in the Cosenza region of Calabria, Christmas means plates piled with grispelle (warm fritters drizzled with local honey) and pitta 'mpigliata (pastries filled with walnuts, raisins, and cinnamon). For the feast of Carnevale, Southern Italians celebrate with bugie ("liars"), sweet fried dough dusted in powdered sugar, meant to tattle on those who sneak off with them by leaving a wispy trail of sugar. With fail-proof recipes and information on the desserts' cultural origins and context, Costantino illuminates the previously unexplored confectionary traditions of this enchanting region.
