Book excerpt: Excerpt from Bush Fruit Culture in California Bush fruits, especially the brambles, or fruits of the raspberry and blackberry type (see frontispiece), are grown in nearly all parts of California. The plantings vary from the few bushes cultivated for home use to plantations in which several hundred acres may be devoted to the production of enough berries to supply both local and distant markets with fresh fruit and allow a considerable portion of the surplus to be canned. Nearly all of the bush fruits are adapted to California soil and climatic conditions. Although some of the sorts are not grown extensively in the hot, dry sections of the state, even these may be grown in home gardens by judicious handling. With a succession of varieties, berries for the table may be produced throughout a long season. Bush berries are, for the most part, best adapted for growing in regions comparatively close to the consuming centers. They are generally consumed in the fresh conditions and must, therefore, be fully mature. And present an attractive appearance when displayed for sale. In some districts a considerable portion of the crop is preserved, or made into jams and jellies. Small quantities are sometimes dehydrated and sold as dried fruit. Probably the chief outlet for the commercially canned berries is the bakery trade, in which they are made into pies or tarts. This trade also uses a. Considerable quantity of frozen berries. In the latter case, the berries are fro-zen and keptfin the original container at a temper 'ature of about 20 degrees Fahrenheit until used. Berries handled in this way are said to retain more nearly the fresh flavor and aroma than those preserved in any other manner. As a matter of economics, home fruit grow ing is a poor investment; but happily, no matter how much we may try to convince ourselves to the contrary, we grow home fruits not for mone tary gain but as a labor of love. There is a pride of possession in produc ing some nice fruit, for it can be done; but the work is primarily a sport or recreation. It is the creative instinct that makes us want to dig in the soil and plant something. The fructifying soil holds great mystery for us all. As most people know, growing things out of the earth is a gamble, where skill and chance combine to make a most fascinating game. If we persist until we acquire skill and wisdom; study our plants, treat them properly, protect them from their enemies, we may be rewarded with all the fruit we can use and (best of all) with some to present to our friends, which is the sweetest of all rewards for the amateur. As already mentioned, this publication is intended to help the begin ner. Whereas practically all of our books and experiment-station publi cations on the subject were written for commercial fruit growers, this circular is frankly for the amateur, and all the discussions will be from his standpoint. The professional orchardist is always cautioned, for ex ample, to select a site having the climate, soil, water, and marketing facilities that will promote his financial success. The homeowner, on the other hand, must use the site he has, whether all conditions are fav crable or not. His back yard may be only a second or a third-rate location for fruit, but he wants to use it. Fortunately, practices unjustifiable on a large scale may be followed in a small way: Poor soil can be greatly modified and ameliorated if one will go to the necessary trouble and ex pense. To provide for a few trees only, a swampy spot may be reclaimed, an unfavorable soil or subsoil completely made over. Individual fruits or even whole clusters may be protected against diseases and insects by enclosing them in bags made of paper, gauze, or cellophane. It is profoundly satisfactory to the writer to have the assurance that the acceptance of the treatise as a faithful guide to practise in California has actually foreshadowed its popularity wherever the same fruits are grown; and, inversely, its acceptance abroad is indirect evidence of its accuracy and helpfulness in California. With such inspiration as naturally proceeds from these facts, the writer has for two years devoted such time as could be spared from other pressing duties to a thorough revision of the work, condensing portions which were diffuse or merely of passing, local interest, and expanding other portions which are of deep and lasting importance and in which California experience and experiment really involve knowledge new to horticultural literature and of the widest applicability. The total quantity of oranges used commercially for processed prod ucts, according to Shear, was tons a year for the period 1934 1938. About tons of this total are canned as juice, the average for the period in question being about cases annually. A consider able tonnage is utilized for bottler's sirups, orange concentrate, and dairy-base sirups, Some oranges are used for essential oil and for dried stock feed. An unknown quantity is not utilized in any manner and is dumped on the cull heaps in the citrus areas. The above uses comprise a relatively small proportion of the total orange production. It must be remembered, however, that a very large proportion, probably more than 50 per cent, of the oranges sold fresh are used in juice stands, restaurants, in the home, and elsewhere, for juice consumed fresh. Grapes designated otherwise processed in table 1 are those crushed commercially for wine. Practically all of the wine grapes shipped fresh, namely, tons annually for the 1984 - 1938 period, were utilized for the making of wine in the home. Most of the table and raisin grapes otherwise processed were crushed for wine. Most of the apples otherwise processed were utilized for fresh juice and vinegar, small amounts being utilized for hard cider, brandy, apple wine, boiled cider, and apple butter. Most of the tons of cherries otherwise processed were barreled in brine containing sulfur dioxide and lime. These were utilized for preparation of Maraschino cherries, principally for addition to canned fruits for salad and canned fruit cocktail. With the exception Of 1939, all of the apricots grown were harvested; Shear estimates that about tons were not picked in 1939.
