Book excerpt: Extract: The NASA Meal System was developed with three simple concepts in mind: (1) nutritious, conventional foods are packaged in single-serving units and assembled into complete meals; (2) the meals have an extended shelf-life and can be transported and stored without need for refrigeration or freezing; (3) preparation of the meal by the consumer is an easy task which is accomplished in ten minutes or less. The meal system was tested in 1975 and 1976 by different groups of elderly individuals, most of them poor, many of them living in rural or small communities with limited access to transportation and social services. The results were promising. As the final activity on their part, NASA and the LBJ School of Public Affairs sponsored a national conference to report on the demonstration of the meal system for the elderly and to explore potential uses of the system for social services, institutional feeding programs, disaster relief, and international aid. What went on at this conference and how different groups assessed the potential of the meal system is reported in this volume of proceedings.

In The Squares, Cyrus Mody shows how, between the late 1960s and the early 1980s, some scientists and engineers who did not consider themselves activists, New Leftists, or members of the counterculture accommodated their work to the rapidly changing social and political landscape of the time. These “square scientists,” Mody shows, began to do many of the things that the counterculture urged: turn away from military-industrial funding, become more interdisciplinary, and focus their research on solving problems of civil society. During the period Mody calls “the long 1970s,” ungroovy scientists were doing groovy science. Mody offers a series of case studies of some of these collective efforts by non-activist scientists to use their technical knowledge for the good of society. He considers the region around Santa Barbara and the interplay of public universities, think tanks, established firms, new companies, philanthropies, and social movement organizations. He looks at Stanford University’s transition from Cold War science to commercialized technoscience; NASA’s search for a post-Apollo mission; the unsuccessful foray into solar energy by Nobel laureate Jack Kilby; the “civilianization” of the US semiconductor industry; and systems engineer Arthur D. Hall’s ill-fated promotion of automated agriculture.

Emme Astronautical Literature Award As NASA prepared for the launch of Apollo 11 in July 1969, many African American leaders protested the billions of dollars used to fund “space joyrides” rather than help tackle poverty, inequality, and discrimination at home. This volume examines such tensions as well as the ways in which NASA’s goal of space exploration aligned with the cause of racial equality. It provides new insights into the complex relationship between the space program and the civil rights movement in the Jim Crow South and abroad.  Essays explore how thousands of jobs created during the space race offered new opportunities for minorities in places like Huntsville, Alabama, while at the same time segregation at NASA’s satellite tracking station in South Africa led to that facility’s closure. Other topics include black skepticism toward NASA’s framing of space exploration as “for the benefit of all mankind,” NASA’s track record in hiring women and minorities, and the efforts of black activists to increase minority access to education that would lead to greater participation in the space program. The benefits of open dating concern food quality, nutrition, food safety, inventory, and education. The types of open dates are: date of pack or manufacture, pull date or sell-by date, best-if-used-by date, expiration or use-by date, or combination of the first four. Food shelf-life is dependent on time and environmental factors. The three alternative open dating systems are: voluntary, mandatory, and voluntary/mandatory. Enforcement and liability would depend on the system used, but Federal and state inspection systems would routinely survey the market. Various congressional options for open dating as well as technical information and the status of open dating in foreign countries are discussed.
