Book excerpt: Published in 1867 in New York, Hand-Book of Practical Cookery was authored by the first American celebrity chef, Pierre Blot. An immigrant from France, Blot opened the first French cooking school in America and created this epicurean collection as an extension of his celebrated classes. In Hand-Book of Practical Cookery, Blot emphasizes the “good things in life” and wisely states in the preface, “Food is the most important of our wants; we cannot exist without it.” Basing recipes on precise and scientific measurements and including clear explanations of techniques and definitions, the Hand-Book of Practical Cookery, for Ladies and Professional Cooks includes recipes such as Beef Tongue with Sauces, Cabinet Pudding, Fried Celery, Duck with Garniture, Roasted Eel, and Candied Pears. After the book’s release in 1867, the New York Times positively reviewed it and ended with the bold statement, “The book ought to be in the hands of every housekeeper in the land”—and its value is still evident to modern-day cooks. This edition of Hand-Book of Practical Cookery, for Ladies and Professional Cooks was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the society is a research library documenting the lives of Americans from the colonial era through 1876. The society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection comprises approximately 1,100 volumes.

November, 1956. Lord Elsmere, an old friend of Donald Langham’s literary agent, Charles Elder, is in a pickle – his favourite painting, a Gainsborough, has been stolen from under his nose. What’s more, there’s no evidence of a break-in. The family heirloom was recently re-insured for a hefty price, and Elsmere is struggling financially. Could he have staged the theft, or was it taken by one of the guests? Old Major Rutherford, evasive beauty Rebecca Miles, Dutch war hero Patrick Verlinden, Elsmere’s son Dudley Mariner and his statuesque sculpture fiancée, Esmeralda Bellamy, are all guests at the manor. But who would steal the painting, and why? Private investigators Langham and Ralph Ryland take on the case and soon uncover seething animosities, jealousy, secrets and deception, before events take a shocking turn...

Book excerpt: GOLD WINNER 2021 - Taste Canada Awards - General Cookbooks If you live for wildly addictive, life-affirming taste sensations that knock you off your feet, but can't figure out how to make them at home, you have just found your kindred cookbook spirit. Welcome to Flavorbomb. You keep a running list of restaurants you go to for your favorite flavorbombs--a vibrant, pungent Caesar salad, extra crispy garlic fries, or a spicy puttanesca pasta maybe. You might even be able to articulate exactly what it is about those dishes that you find so addictive. But when you try to reproduce the same flavors at home, you find yourself falling short. If any of the above sounds familiar, this book is for you. For the past 25 years Bob Blumer has eaten his way around the globe, traveling millions of miles in search of culinary adventures and inspiring foods for three TV series and six cookbooks. Along the way, he's broken eight food-related Guinness World Records, competed in some of the most outrageous food competitions on the planet, cooked alongside countless amazing chefs, and sampled every local street food imaginable at ramshackle carts, hawker stalls, and night markets from Italy to India. These collective experiences have formed the backbone of Bob's cooking in ways that culinary school can't begin to teach. In Flavorbomb he channels everything he has gleaned into recipes and practical tips to help you you create bold, stimulating flavors, that will leave those you cook for in a state of bliss. Prepare to become a rock star in your own kitchen. The first half of the book is the real "money." It's full of tips, strategies, ingredients, techniques, and gear that will help you crack the code--and gain the confidence to take the leap on your own and turn any dish into a flavorbomb. We're talking developing the courage to season with wild abandon, brown your food to within an inch of its life, double down on the ingredients that can increase the pleasure factor, and taste and adjust on the fly. The second half consists of 75 step-by-step recipes that use all the tricks in your arsenal to deliver the addictive, life-affirming dishes we all crave. And because Bob gets more excited by tacos than truffles, his outsider approach to creating addictive flavors won't require you to buy frivolous top-shelf ingredients or use super-sophisticated techniques. Instead, every recipe starts by building the foundation, and then adding layers of flavors and textures at every step of the way. If there's a hack or a simple trick that can save you time or up the ante--it's in here. Every recipe was thoroughly tested and had to earn its place in the book. Get ready to cook like every bite is your last. Read Flavorbomb and your cooking will be forever changed!

Available in PDF, EPUB and Kindle. Book excerpt: Britain’s top selling cookery writer shares tried and tested recipes for pressure cookers. Slow-cooked flavor in a fast-paced world—pressure cookers are one of the greenest cooking methods imaginable. Sales are on the increase and even Jamie Oliver has launched one of his own. They allow us to cook quickly, cheaply, and efficiently because the food is cooked in liquid at temperatures far higher than in a conventional pan, which shortens cooking time by up to 70 percent. Because the method seals in flavor, cheaper ingredients can be used to great effect and since the cooking time is far shorter you save time and gas or electricity. The pressure cooker presents a distinct advantage for certain foods and for ingredients that need long cooking, it is a real winner. The most dramatic time and energy savings come with meat and poultry. Braised beef can be perfectly cooked in 30 minutes, osso bucco in 25 minutes, and a chicken tagine in 15 minutes. Perfect for today’s cooks.

It provides a collection of vegetarian recipes and suggestions for hygienic cooking for home chefs to enjoy. Excerpt: "When, in spite of all precautions, something burns on, plunge the vessel without ceremony into a pail or pan of cold water for a moment, empty the contents immediately into another kettle, add boiling water and return to the fire to finish cooking. Badly scorched foods often lose all the scorched flavor by this treatment."
