Since the last meetings in Israel (1984) and in Belgium (1988), ethylene physiology has gone through a period of exciting progress due to new developments in cellular and molecular bioiogy. New methods and tools have been developed to better understand the role and functions of ethylene in fruit ripening, flower senescence, abscission, piant growth, and cell differentiation. Genes involved in ethylene biosynthesis have been characterized and transgenic plants with altered ethylene production have been generated. The feasibility of delaying fruit ripening or flower senescence by genetic manipulation is now demonstrated, thus opening new perspectives for the postharvest handling of plant products. Some progress has also been made on the understanding of ethylene action. However, much remains to be done in this area to elucidate the ethylene signal transduction pathway. Around 140 scientists from 20 countries attended the Symposium. They presented 47 oral reports and 40 poster demonstrations. All of them are published in these proceedings. It has been a pleasure for us to organize this important Symposium and to edit this book.

It is well known that major advances in understanding often follow the development of new methods. The development of the acetylene reduction assay for nitrogenase activity provides a good example of this interrelationship between theory and methods. Theoretical knowledge led to a search for substrates for nitro genase that could be assayed for more easily than ammonium, the normal product of the enzyme. The discovery of the reduction of acetylene to ethylene by nitrogenase provided the ideal answer to the problem by provid ing a rapid, specific, nondestructive, and inexpensive assay for nitrogenase activity. This assay is now used by almost every laboratory doing research on nitrogen fixation. However, further use and development of the acetylene reduction assay has shown that it can underestimate nitrogenase activity and can even give incorrect relative values under some circumstances. The major problem is that exposure of legume nodules to acetylene can cause a large increase in the resistance to oxygen diffusion into the nodule. This reduced supply of oxygen decreases the rate of nitrogenase activity within a few minutes.

While many textbooks are available on general evolution, only a few deal with evolution under domestication. This book is a modest attempt to bridge this gap. It was written for advanced undergraduate and graduate students in the fields of crop evolution, ethnobotany, plant breeding and related subjects. Evolution under domestication is unique in the general field of plant evolution for three main reasons: (a) it is recent, having started not much more than 10 000 years ago with the emergence of agri culture; (b) the original plant material, i. e. the wild progenitors of many important crop plants, still grow in their natural habitats; (c) man played in this process. These factors enable a more reliable a major role assessment of the impact of different evolutionary forces such as hybridization, migration, selection and drift under new circumstances. Interestingly, a great part of evolution under domestication has been unconscious and a result of agricultural practices which have created a new selection criteria, mostly against characters favored by natural selec tion. Introducing crop plants to new territories exposed them to different ecological conditions enhancing selection for new characters. Diversity in characters associated with crop plants evolution is virtually absent in theit wild progenitors and most of it has evolved under domestication.
