In cooking quality, potatoes differ according to variety and the conditions under which they are grown and stored. Before buying in wholesale lots, it may be advisable to try a small quantity of those available to find the grade or variety best suited to your needs. Potatoes that cook to a mealy consist ency and break apart easily are preferable for mashing and baking; those that hold their shape and have a more waxy consistency are more suitable for salads and hot dishes.
