Le but de ce travail est de faire une synthèse sur les régimes végétariens et végétariens. Dans la première partie, nous définirons ces différents régimes, avec un point épidémiologique. Nous détaillerons les différentes motivations, dont le concept de végétarisme éthique avec les notions de spécisme et antispécisme, qu'il convient de connaître pourcomprendre l'aspect psychologique et philosophique des patients végétariens éthiques. Nous ferons aussi des rappels de biochimie et de nutrition puis nous intéresserons à l'alimentation végétale. La deuxième partie sera consacrée aux connaissances des médecins français en nutrition végétarienne, sur le suivi des populations végétariennes à tous les âges, puis nous démontrerons les bénéfices sur la santé de ces régimes et nous en rappellerons les risques de carence. En conclusion, ce travail est destiné à sensibiliser les professionnels de la santé sur les régimes végétariens et végétaliens, à démontrer que bien suivis médicalement ils peuvent avoir un impact bénéfique sur la santé publique et individuelle notamment par leur impact positif sur les maladies chroniques et à prendre en compte le risque de carence en vitamine B12, qu'il convient de supplémenter systématiquement chez les végétaliens.
