Book excerpt: Avaliaram-se as características agronômicas e físico-químicas de milho verde cultivado em sistemas de produção orgânico e convencional. Utilizou-se o delineamento experimental inteiramente casualizado, em esquema fatorial 4 x 2, sendo quatro cultivares (AG 1051, BR 106, SWB 551 e VIVI), nos sistemas orgânico e convencional, com três repetições. As características agronômicas analisadas foram peso das espigas com palhas (PP) e despalhadas (PD), peso dos grãos (PG), peso do sabugo (PS), peso da palha (P), comprimento da espiga com palha (CE), percentual relativo de grãos (PRG), percentual relativo de palha (PRP) e percentual relativo de sabugo (PRS). Foram, ainda, analisados o teor de umidade e as características físico-químicas (pH, acidez titulável e sólidos solúveis totais) dos grãos verdes. As espigas produzidas no sistema convencional apresentaram PP, PD e PG superiores aos das espigas produzidas em sistema orgânico, para a cultivar AG 1051. O mesmo comportamento foi observado para o CE da cultivar SWB 551 e o PG da cultivar BR 106. No sistema convencional, a cultivar AG 1051 destacou-se nas características agronômicas avaliadas. Os valores médios de pH, diferentemente da acidez, foram superiores no cultivo orgânico. A cultivar SWB 551 apresentou maior percentual de sólidos solúveis entre as cultivares. Portanto, o sistema de produção influencia as principais características de qualidade do milho verde.

Book excerpt: IMPORTÂNCIA - O milho verde pode ser consumido nas mais diversas formas, in natura ou como ingrediente para a fabricação de bolos, sorvetes, pamonhas e uma série de outros alimentos, industrializados ou não. O cultivo do milho verde é uma atividade que vem crescendo muito, em função de sua lucratividade e da diversificação de seu uso. A área estimada com essa atividade, no Brasil, é cerca de 102.325 hectares, com a produção de 292.138 toneladas de espigas. Os três estados maiores produtores são Minas Gerais, com 21,12% da produção nacional, São Paulo, com 20,09%, e Goiás, com 18,69%. As produtividades médias de espigas comerciais, na última safra, nos três estados foram, respectivamente, 4.812 kg/ha, 5.277 kg/ha e 5.364 kg/ha. Cerca de 68,40% da produção colhida no país foi comercializada, sendo que 25,92% dessa parcela foi destinada à indústria. O restante, 32,60% do total da produção, é para consumo próprio do produtor. ESCOLHA DE CULTIVARES - A crescente demanda por "milho verde de qualidade" obrigou as empresas produtoras de sementes de milho para uso de grãos secos a desenvolverem cultivares que atendam às exigências do mercado consumidor in natura ou para indústria de conservas alimentícias com as seguintes características: grãos dentados amarelos, espigas grandes e cilíndricas, sabugo branco, boa granação, pericarpo fino e bom empalhamento, com longevidade de colheita e de prateleira. Ainda devem apresentar boa resistência às doenças e pragas que atacam as espigas. Existe no mercado brasileiro de sementes mais de uma dezena de cultivares de milho indicadas pelas empresas produtoras como sendo adequadas para consumo verde in natura. PLANTIO - O cultivo do milho verde pode ser realizado o ano todo, desde que as condições climáticas permitam e que possa ser irrigado. O período em que não chove regularmente é o melhor para a comercialização em função da elevação do preço e em face da pequena oferta de milho verde no mercado. O plantio deverá ser escalonado, para atender a demanda do mercado durante todo o ano. O intervalo entre um plantio e outro (escalonamento) deve ser feito em função da demanda e da distância do mercado consumidor, levando-se em consideração também o ciclo da cultivar. No plantio de verão, colhe-se milho verde mais cedo (cerca de 90 dias) e, no inverno, um pouco mais tarde (cerca de 120 dias). DENSIDADE E SEMEADURA DE ESPAÇAMENTO - O rendimento de espigas comerciais de uma lavoura de milho verde é determinado pela cultivar, pelas condições edafoclimáticas do local e pelo manejo da lavoura, especialmente a densidade de semeadura e o espaçamento entre linhas. A densidade de semeadura varia de 30.000 a 50.000 plantas/ha em função principalmente das cultivares. A maioria se enquadra na categoria de 40.000 a 45.000 plantas/ha, em que se verificam os maiores rendimentos de espigas comerciais. Os espaçamentos mais largos, de 80 cm a 1 metro, devem ser preferidos para facilitar a movimentação de colheita e por possibilitarem melhores espigas comerciais. ADUBAÇÃO - A adubação deve ser feita com base na análise do solo, pois é através dela que se fazem as recomendações para o uso de insumos: corretivos (calcário e outros) e fertilizantes (macro e microelementos). A análise do solo determina também as prováveis limitações que as plantas poderão sofrer durante o seu ciclo vegetativo e, com isso, identificam-se os insumos a serem aplicados de maneira mais econômica ao sistema solo/planta. Em solos com deficiência de zinco, aplicar 7,5 kg/ha de sulfato de zinco por ano ou utilizar fórmulas que contenham zinco na composição. Em virtude de se colherem as espigas e também todo o resto da planta, deve-se ter o cuidado de monitorar o nível de potássio no solo após cada maior parte, nos restos culturais (palhada). Sendo assim, deve-se repor esse elemento juntamente com a adubação nitrogenada de cobertura no máximo 25 dias após a emergência das plantas. TRATOS CULTURAIS E FITOSSANITÁRIOS - São os mesmos praticados para o milho comum, tendo-se o cuidado de manter a cultura sem a presença de plantas daninhas até a colheita para facilitar o operação. O controle das plantas daninhas pode ser mecânico ou químico, através de herbicidas específicos para cada tipo de milho (doce ou normal). No controle fitossanitário, tanto das doenças como dos insetos, deve-se ter cuidados especiais, principalmente com os que atacam as espigas, preservando o período de carência de cada produto devido à colheita do milho verde ser mais cedo. Todos os produtos químicos devem ser usados sob orientação técnica. COLHEITA E TRANSPORTE - O milho verde deve ser colhido com os grãos no estádio leitoso, apresentando de 70 a 80% de umidade. A colheita deve ser efetuada nas horas mais frescas do dia, para que as espigas cheguem ao mercado consumidor em bom estado de conservação. O ponto de colheita é muito variável, em função das condições climáticas resultantes de diferentes épocas de semeadura ou da região onde a lavoura foi instalada. De modo geral, verifica-se que, nos plantios de verão, quando a lavoura se desenvolve em condições de temperaturas mais elevadas, a colheita é realizada entre 70 e 90 dias após o plantio (20 a 25 dias após a polinização, enquanto que nos plantios realizados nos meses mais frios o ciclo pode se prolongar até 120 dias. O transporte deve ser feito o mais rápido possível e nas horas mais frescas, por ser um produto perecível, indicando que a lavoura deve ser mais próxima possível do mercado consumidor ín natura ou da indústria de conservas alimentícias. O transporte pode ser feito em caminhão aberto ou em caminhão furgão frigorífico. PÓS-COLHEITA - Para se obter sucesso na pós-colheita, é necessário ter conhecimento do processo fisiológico do milho verde, bem como de sua composição química, que pode variar em função do genótipo, do tipo de solo onde foi cultivado, dos fertilizantes utilizados, das condições climáticas e do estádio de maturação. As espigas de milho verde despalhadas para consumo ín natura devem ser embaladas em bandejas especiais cobertas com papel filme de PVC esticável, ou PD- 941. para ser comercializado nos balcões refrigerados dos supermercados. conferindo, assim. ao produto características de alta qualidade na pós-colheita. Além da embalagem, a temperatura também exerce papel fundamental na preservação do produto para comercialização por um período mais longo. A embalagem influi no processo metabólico das espigas no que se refere à entrada de oxigênio, permitindo trocas gasosas importantes para a respiração aeróbica do produto. O metabolismo da espiga continua ativo mesmo depois da colheita, o qual pode ser alterado em função das condições dos locais de armazenamento. APROVEITAMENTO DOS RESTOS DAS PLANTAS - Os restos das plantas, colmos e folhas, acompanhados das espigas não comercíais, após a colheita, podem ser aproveitados na alimentação animal, colocando diretamente no cocho ou ensilando, para tratamento de bovinos no período seco. Apesar de não conter a grande maioria das espigas, ainda assim o material é rico em vitaminas do complexo B, carboidratos, vitamina E e proteínas. O agricultor deverá esperar entre duas e três semanas antes de ensilar o material, pois o teor de matéria seca é inferior a 25%, o que propicia ambiente favorável à proliferação e ao desenvolvimento de bactérias produtoras de ácido butírico e também a perdas de princípios nutritivos, por lixiviação, e intensa degradação de proteínas.
