Book Synopsis Kinetic Analysis of Food Systems by : Alejandro G. Marangoni
Download or read book Kinetic Analysis of Food Systems written by Alejandro G. Marangoni and published by Springer. This book was released on 2017-02-15 with total page 179 pages. Available in PDF, EPUB and Kindle. Book excerpt: This text provides a comprehensive and thorough overview of kinetic modelling in food systems, which will allow researchers to further their knowledge on the chemistry and practical use of modelling techniques. The main emphasis is on performing kinetic analyses and creating models, employing a hands-on approach focused on putting the content discussed to direct use. The book lays out the requisite basic information and data surrounding kinetic modelling, presents examples of applications to different problems and provides exercises that can be solved utilizing the data provided. Kinetic Analysis of Food Systems pursues a practical approach to kinetic analysis, providing helpful exercises involving chlorophyll degradation in processed vegetables, metabolic oscillations and sugar accumulation in cold-stored potatoes, transesterification of oils to manufacture biodiesel, aggregation of whey proteins to make protein gels and crystallization of fat stabilizers used in nut butters, among others. The book lays out the basics of kinetic modelling and develops several new models for the study of these complex systems. Taken together with the accompanying exercises, they offer a full portrait of kinetic analysis, from its basic scientific groundwork to its application.

Book Synopsis Econometric Analysis of European Food and Agricultural Trade in a Liberalized and Integrating Global Economy by : Heiko Dreyer
Download or read book Econometric Analysis of European Food and Agricultural Trade in a Liberalized and Integrating Global Economy written by Heiko Dreyer and published by Cuvillier Verlag. This book was released on 2017-03-02 with total page 276 pages. Available in PDF, EPUB and Kindle. Book excerpt: As indicated by the high level of food prices and volatility thereof, the international food and agricultural trade has been characterized by increasing uncertainty in recent years. Macroeconomic fluctuations seem to affect food and agricultural markets more strongly than in the past. The liberalization of agricultural policy, especially in industrialized countries, and the integration of world markets expose actors on domestic as well as on foreign markets to increased exchange rate and price fluctuations. This book investigates the determinants of food and agricultural trade flows of European countries using various econometric approaches. Where each of the chapters focuses on a particular issue, the overall topic of the first part of this book is to identify by what means the trend towards general liberalization and especially European integration has affected the amount of bilateral trade. Moreover, in the second part the book investigates the strategic pricing behavior of European producers in a liberalized global economy and elaborates how this behavior effects trade flows.
Book Synopsis Methods of Analysis of Food Components and Additives by : Semih Otles
Download or read book Methods of Analysis of Food Components and Additives written by Semih Otles and published by CRC Press. This book was released on 2005-04-26 with total page 451 pages. Available in PDF, EPUB and Kindle. Book excerpt: With diet and health news making headlines on a regular basis, the ability to separate, identify, and analyze the nutrients, additives, and toxicological compounds found in food and food compounds is more important than ever. This requires proper training in the application of the best methods, as well as knowledgeable efforts to improve existing methods to meet certain analytical needs. Methods of Analysis for Food Components and Additives is a concise guide to both new and established methods for the analysis of food components and additives. The book presents detailed explanations of modern methods of analysis by 32 leading scientists, many of whom personally developed or refined the techniques. They summarize key findings on novel methods of analysis of food components, additives, and contaminants, including the identification, speciation, and determination of components in raw materials and food products. Each chapter is structured to provide a description of the component or additive that can be analyzed, a simple method explanation of how it works, examples of applications, and references for more specific information. This comprehensive volume features all major classes of food components and contaminants, along with components of current interest to the nutraceutical and functional foods industries. It is an essential reference for food scientists and chemists, as well as food manufacturers and researchers interested in the many methods of food analysis.

Book Synopsis Chemical/Instrumental Approaches to the Evaluation of Wine Chemistry by : Rosa Perestrelo
Download or read book Chemical/Instrumental Approaches to the Evaluation of Wine Chemistry written by Rosa Perestrelo and published by MDPI. This book was released on 2020-05-27 with total page 148 pages. Available in PDF, EPUB and Kindle. Book excerpt: Wine is a widely consumed beverage due to its unique and pleasant sensory properties. Wine is composed of more than one thousand chemical compounds (e.g., alcohols, esters, acids, terpenoids, phenolic compounds, flavonoids, anthocyanins, minerals, and vitamins, among others) resulting from several chemical and biochemical processes. Microextraction techniques in tandem with high-resolution analytical instruments have been applied by wine researchers to expand the knowledge of wine’s chemical composition with the purposes of improving wine quality, supporting winemaker decisions related to the winemaking process, and guaranteeing the authenticity of wine. As a result, we proposed “Chemical/Instrumental Approaches to the Evaluation of Wine Chemistry” as a topic for a Special Issue in Molecules. This Special Issue aims to provide an update on state-of-the-art extraction procedures (e.g., solid-phase microextraction (SPME)) and analytical tools (e.g., nuclear magnetic resonance (NMR), inductively coupled plasma mass spectrometry (ICP-MS), ultra-performance liquid chromatography tandem mass spectrometry (UPLC-MS/MS)), emphasizing their use as suitable platforms for the establishment of the chemical composition of wine (volatomic profile, antioxidants, phenolic pattern, and elemental composition, among others). Information related to wine sensorial properties, contaminants, authenticity, and chemometric tools used for data treatment are described in this Issue.
