Book excerpt: The nature .and diversity of presentations at the conference on: "Bee Products: Prop erties, Applications and Apitherapy" held at Tel-Aviv on May 26--30, 1996, emphasize the increasing interest of physicians, practitioners, scientists, herbalists, dieticians, cosmeti cians, microbiologists, and beekeepers in different facets of bee products. This volume consists of a selection of 31 contributions presented at the conference and which provide information on the present status of our knowledge in this area. In spite of their diversity, they reflect the mainstream of the conference, namely: "Imported" Prod ucts (honey, pollen and propolis), Exocrine Secretions of Workers (venom, royal jelly). Toxicity and Contaminants, Quality Control, Marketing, Apitherapy, Cosmetics, etc. Since antiquity, honey as well as other bee products were used as food, as a cure for ailments of humans and animals, and as cosmetics. We hope that this volume will contribute to interdisciplinary studies on chemical composition, pharmacological effects, nutrition, and other aspects of bee products. Critical and unbiased experimental research may unravel the yet unknown composition and mode of action of bee products and elucidate many unanswered questions. The noteworthy features of this conference were the participants from all parts of the world and of different cultural backgrounds, who shared their keen interest and curios ity regarding honey bees and their products. We thank all of them for their personal con tribution to the success of this conference.

Available in PDF, EPUB and Kindle. Book excerpt: Food chemistry is the study of chemical processes and interactions of all biological and non-biological components of foods. The biological substances include such items as meat, poultry, lettuce, beer, and milk as examples. It is similar to biochemistry in its main components such as carbohydrates, lipids, and protein, but it also includes areas such as water, vitamins, minerals, enzymes, food additives, flavours, and colours. This discipline also encompasses how products change under certain food processing techniques and ways either to enhance or to prevent them from happening. An example of enhancing a process would be to encourage fermentation of dairy products with lactic acid; an example of a preventing process would be stopping the Maillard reaction on the surface of freshly cut Red Delicious apples whether by hand or mechanical methods. This book presents the recent research from around the world in this field.

Book excerpt: Comprehensively introduces readers to the production, modifications, and applications of nanocellulose This book gives a thorough introduction to the structure, properties, surface modification, theory, mechanism of composites, and functional materials derived from nanocellulose. It also provides in-depth descriptions of plastics, composites, and functional nanomaterials specifically derived from cellulose nanocrystals, cellulose nanofibrils, and bacterial cellulose. It includes the most recent progress in developing a conceptual framework of nanocellulose, as well as its numerous applications in the design and manufacture of nanocomposites and functional nanomaterials. The book also looks at the relationship between structure and properties. Featuring contributions from many noted experts in the field, Nanocellulose: From Fundamentals to Advanced Materials examines the current status of nanocomposites based on nanocelluloses. It covers surface modification of nanocellulose in the nanocomposites development; reinforcing mechanism of cellulose nanocrystals in nanocomposites; and advanced materials based on self-organization of cellulose nanocrystals. The book studies the role of cellulose nanofibrils in nanocomposites, as well as a potential application based on colloidal properties of cellulose nanocrystals. It also offers strategies to explore biomedical applications of nanocellulose. Provides comprehensive knowledge on the topic of nanocellulose, including the preparation, structure, properties, surface modification and strategy Covers new reports on the application of nanocellulose Summarizes three kinds of nanocellulose (cellulose nanocrystals, cellulose nanofibrils, and bacterial cellulose) and their production, modification, and applications Nanocellulose: From Fundamentals to Advanced Materials is a useful resource for specialist researchers of chemistry, materials, and nanotechnology science, as well as for researchers and students of the subject.

Available in PDF, EPUB and Kindle. Book excerpt: Polysaccharide nanocrystals can be derived from the renewable resources cellulose, chitin or starch, which makes them ideal candidates for "Green Materials Science". This versatile material class can be used in nanocomposites such as rubber or polyester, and in functional materials such as drug carriers, bio-inspired mechanically adaptive materials or membranes. Moreover, polysaccharide-based nanomaterials are environmentally friendly due to their intrinsic biodegradability. With its interdisciplinary approach the book gives a thorough introduction to extraction, structure, properties, surface modification, theory, and mechanisms of material formation of polysaccharide nanocrystals from renewable resources. In addition, it provides an in-depth description of plastics, composites, and nanomaterials from cellulose nanocrystals, chitin nanowhiskers and starch nanocrystals. The first focused, concise and coherent treatment of nanomaterials made from renewable resources such as cellulose, chitin, and starch - for scientists, engineers, graduate students and industrial researchers in the field of polymeric materials.

Available in PDF, EPUB and Kindle. Book excerpt: Food Science and Technology: A Series of Monographs: Food Texture and Viscosity: Concept and Measurement focuses on the texture and viscosity of food and how these properties are measured. The publication first elaborates on texture, viscosity, and food, body-texture interactions, and principles of objective texture measurement. Topics include area and volume measuring instruments, chemical analysis, multiple variable instruments, soothing effect of mastication, reasons for masticating food, rheology and texture, and the rate of compression between the teeth. The book then examines the practice of objective texture measurement and viscosity and consistency, including the general equation for viscosity, methods for measuring viscosity, factors affecting viscosity, tensile testers, distance measuring measurements, and shear testing. The manuscript takes a look at the selection of a suitable test procedure and sensory methods of texture and viscosity measurement. Discussions focus on nonoral methods of sensory measurement; correlations between subjective and objective measurements; variations on the texture profile technique; and importance of sensory evaluation. The publication is a vital source of information for food experts and researchers interested in food texture and viscosity.
