Book excerpt: Phase Equilibrium in Mixtures deals with phase equilibrium and the methods of correlating, checking, and predicting phase data. Topics covered range from latent heat and vapor pressure to dilute solutions, ideal and near-ideal solutions, and consistency tests. Molecular considerations and their use for the prediction and correlation of data are also discussed. Comprised of nine chapters, this volume begins with an introduction to the role of thermodynamics and the criteria for equilibrium between phases, along with fugacity and the thermodynamic functions of mixing. The discussion then turns to some of the phase phenomena which may be encountered in chemical engineering practice; methods of correlating and extending vapor pressure data and practical techniques for calculating latent heats from these data; the behavior of dilute solutions both at low and high pressures for reacting and non-reacting systems; and the behavior of ideal and near-ideal solutions. The remaining chapters explore non-ideal solutions at normal pressures; practical methods for testing the thermodynamic consistency of phase data; and the extent to which the broad aspects of phase behavior may be interpreted in the light of simple molecular considerations. This book is intended primarily for graduate chemical engineers but should also be of interest to those graduates in physics or chemistry who need to use phase equilibrium data.

Book excerpt: Thermodynamics of Phase Equilibria in Food Engineering is the definitive book on thermodynamics of equilibrium applied to food engineering. Food is a complex matrix consisting of different groups of compounds divided into macronutrients (lipids, carbohydrates, and proteins), and micronutrients (vitamins, minerals, and phytochemicals). The quality characteristics of food products associated with the sensorial, physical and microbiological attributes are directly related to the thermodynamic properties of specific compounds and complexes that are formed during processing or by the action of diverse interventions, such as the environment, biochemical reactions, and others. In addition, in obtaining bioactive substances using separation processes, the knowledge of phase equilibria of food systems is essential to provide an efficient separation, with a low cost in the process and high selectivity in the recovery of the desired component. This book combines theory and application of phase equilibria data of systems containing food compounds to help food engineers and researchers to solve complex problems found in food processing. It provides support to researchers from academia and industry to better understand the behavior of food materials in the face of processing effects, and to develop ways to improve the quality of the food products. - Presents the fundamentals of phase equilibria in the food industry - Describes both classic and advanced models, including cubic equations of state and activity coefficient - Encompasses distillation, solid-liquid extraction, liquid-liquid extraction, adsorption, crystallization and supercritical fluid extraction - Explores equilibrium in advanced systems, including colloidal, electrolyte and protein systems

Available in PDF, EPUB and Kindle. Book excerpt: The latest edition of a perennial bestseller, Multistage Separation Processes, Fourth Edition provides a clear and thorough presentation of the theoretical foundation, and understanding of the development, evaluation, design, and optimization steps of these processes, from both an academic and industrial perspective. The book’s emphasis on starting with theoretical models and their role in computer simulation, followed by practical applications, sets it apart from other texts on this topic. The author also highlights the importance of relating fundamental concepts to intuitive understanding of the processes. See What’s New in the Fourth Edition: Chapter on fluid-solid operations Expanded development of theories and methods for many applications Adds numerous industry-related examples and end-of-chapter problems Case studies combined with examples Updated and enhanced figures The book includes a generous number of examples from a wide variety of applications to relate theory to actual results, and to demonstrate the performance of process under varying conditions. The chapter topics follow a logical path that starts with basics and theoretical concepts, and progresses systematically into the various separation processes. Each chapter provides the information relevant to a specific topic, and refers to appropriate chapters in the book as needed. These features combine to give you the understanding required to make the best selections of property prediction and simulation techniques and avoid the cost incurred by the use of improper simulations.

Available in PDF, EPUB and Kindle. Book excerpt: This edition of Thermodynamics is a thoroughly revised, streamlined, and cor rected version of the book of the same title, first published in 1975. It is intended for students, practicing engineers, and specialists in materials sciences, metallur gical engineering, chemical engineering, chemistry, electrochemistry, and related fields. The present edition contains many additional numerical examples and prob lems. Greater emphasis is put on the application of thermodynamics to chemical, materials, and metallurgical problems. The SI system has been used through out the textbook. In addition, a floppy disk for chemical equilibrium calculations is enclosed inside the back cover. It contains the data for the elements, oxides, halides, sulfides, and other inorganic compounds. The subject material presented in chapters III to XIV formed the basis of a thermodynamics course offered by one of the authors (R.G. Reddy) for the last 14 years at the University of Nevada, Reno. The subject matter in this book is based on a minimum number of laws, axioms, and postulates. This procedure avoids unnecessary repetitions, often encountered in books based on historical sequence of development in thermodynamics. For example, the Clapeyron equation, the van't Hoff equation, and the Nernst distribution law all refer to the Gibbs energy changes of relevant processes, and they need not be presented as radically different relationships.

Aimed at a range of courses in mechanical and aerospace engineering, the presentation explains the foundations valid at the macroscopic level in relation to what happens at the microscopic level, relying on intuitive and visual explanations which are presented with engaging cases. With ad hoc, real-word examples related also to current and future renewable energy conversion technologies and two well-known programs used for thermodynamic calculations, FluidProp and StanJan, this text provides students with a rich and engaging learning experience.
