Book excerpt: The objective of the study is to map citizen attitudes towards pig meat production systems, and to investigate whether these attitudes associate with pork and pork product consumption. A conjoint experiment was carried out with empirical data collected from 1931 individuals in four European countries with higher-than-average per capita meat consumption (Belgium, Denmark, Poland and Germany). The experiment was based on the following pig farming characteristics: herd size, housing and floor type, efforts to reduce the impact of the production system on the environment, animal feed designed for producing pork with specific fat content, and finally the preferred quality characteristics of the pork end-product. The results of the conjoint analysis were used for a subsequent cluster analysis in order to identify European citizen clusters. Respondents' socio-demographic profile, attitudes towards issues that are expected to influence the way people evaluate pig meat production systems, and consumption frequency of various pork products are used as background information to identify segment profiles. Pork appears to play a substantial role as a part of the diet for most respondents in the four countries of this study. The results of the conjoint experiment at the sample level show that people assigned most importance to animal and environmental well-being as criteria to discriminate between “good” and “bad” pig production practices, despite the fact that their attitudes towards environmental protection, animal welfare and industrial food production were only moderately strong. Moreover, the results of the cluster analysis allowed small-sized, clear-cut clusters of citizens to appear, which pay attention to specific pig farming attributes. In conclusion, attitudes towards environment and nature, animal welfare and the need for an environment-friendly food production were indeed related to citizens' specific attitudes towards pig farming at the cluster level. However, the relationship between citizenship and consumption behaviour was found to be weak. What people think in their role as citizens related to pig production did not appear to significantly influence their pork consumption choices.

Book excerpt: Abstract: The U.S. swine industry has changed dramatically in recent decades and the changes have led to a shift in the manner in which pigs are raised. The use of production contracts has become increasingly popular, which has led to a greater percentage of stockpersons raising pigs only from weaning or feeder size through the end of production. The stockpersons that undertake the production contracts are specialized in the one area of production and may have never worked with pigs in any capacity. Industry changes in size of production units and number of producers marketing hog(s) have been characterized; however, what is not known is information about the stockpersons. Therefore, the aim of this research was to characterize stockpersons in Ohio with regard to their demographics, attitudes, beliefs and their subsequent behavior toward pigs, and the reaction the pigs toward humans as measured by stroll test methodology and cortisol concentrations measured in the saliva. The stockpersons varied with respect to their demographics, their pig experience, other forms of employment besides contract hog production, and, when observed interacting with their pigs, the location from where and how long they observed the pigs in their given facility. In addition, the stroll test response data and cortisol concentration results varied across farms. Furthermore, questionnaire results revealed that there were differences among stockpersons with regard to their attitudes and beliefs about pigs and about working with pigs. With the differences in stockpersons in mind, a pig handling training program, directed specifically at attitudes and beliefs of stockpersons toward pigs, was implemented for a sample half of study participants to determine if the attitudes and the behavior of the stockpersons could be improved. After the implementation of the training program, stockpersons that completed the training program had an improvement in indicator variables related to their positive attitude toward pigs and also increased the neutral behavior characteristics while reducing their negative behaviors toward pigs. Based on the results of the present study, the implementation of a training program, specifically addressing stockpersons raising pigs under a production contracts or raising only finishing stage swine, would be beneficial to the welfare of the pigs under their control and also enhance job satisfaction of the stockpersons.

Book excerpt: A dramatic increase in the development of large factory-style swine production facilities in rural America has occurred in recent decades in association with transnational corporations (TNCs) sourcing the planet for profitable production locations. The development of industrial swine facilities is one of the most critical and contentious issues at the intersections of agriculture, environment, and community. The siting of these facilities has resulted in social conflict among and between family members, friends, neighbors, populist organizations, policymakers, and industry leaders. Debate continues over the social, economic, and environmental impacts associated with these facilities. This study focuses on the hypothesis that the unit of analysis is vital in understanding the effects of the industrialization of agriculture on individual and community well-being. Analyzing data at a unit of analysis smaller than the county-level can reveal a diversity of impacts not captured by larger aggregate units of analysis. Based on the Goldschmidt literature, this research relies on historical document analysis, unstructured interviews, and secondary data to describe the industrialization of agriculture, economic trends in four study counties, and public perceptions toward intensive hog production as a strategy for economic development. Quantitative analysis of survey data is used to measure the association between proximity to hog facilities and perceptions of quality of life of residents across three Missouri counties, with a fourth county used as the control county. Results suggest that in counties where these facilities are concentrated, experiencing the effects of large-scale industrial swine facilities within close proximity has deleterious effects on the personal quality of life of residents, such as their behavior at home. At the same time, these facilities generate public and private revenue valued by residents county-wide and continue to be supported in counties enjoying their economic benefits. Residents who reside in rural counties lacking these facilities generally do not support them based more on the perception that they may economically threaten their rural livelihood and agricultural interests.
