This thesis explores the foundational question of generalising equilibrium statistical mechanics to background independent systems, and applies the resulting formulation to non-perturbative discrete quantum gravity. It offers a discussion of the rich interface of thermal physics and quantum gravity in this context, providing a broad contextualisation of such topics. This work details how standard tools from many-body physics can be generalised to discrete quantum gravity labelled with graph-based, or dual polyhedral, quanta that are common to various approaches like tensorial group field theory, loop quantum gravity, dynamical triangulations and lattice quantum gravity. It provides a systematic investigation, both conceptual and technical, of quantum gravitational Gibbs states, thermofield double vacuum states, and their application in condensate cosmology to probe questions of Big Bang singularity resolution and geometric inflation.

This publication is the Proceedings of this workshop. The purpose of the workshop was to bring together a group of scientists who have been at the forefront of the development of probabilistic methods in Quantum Field Theory and Quantum Gravity. The original thought was to put emphasis on the introduction of stochastic processes in the understanding of Euclidean Quantum Field Theory, with also some discussion of recent progress in the field of stochastic numerical methods. During the final preparation of the meeting we broadened the scope to include all those Euclidean Quantum Field Theory descriptions that make direct reference to concepts from probability theory and statistical mechanics. Several of the main contributions centered around a more rigorous discussion of stochastic processes for the formulation of Euclidean Quantum Field Theory. These rather stringent mathematical approaches were contrasted with the more heuristic stochastic quantization scheme developed in 1981 by Parisi and Wu: Stochastic quan tization, its intrinsic BRST -structure and stochastic regularization appeared in many disguises and in connection with several different problems throughout the workshop.

Paradoxically, the attributes which normally boost a physical theory - namely, its perfection as a theoreti cal framework and the extraordinary intellectual achievement underlying i- prevented the general theory from being assimilated in the mainstream of physics. It was as if theoreticians hesitated to tamper with something that is manifestly so beautiful. Happily, two developments in the 1970s have narrowed the gap. In 1974 Stephen Hawking arrived at the remarkable result that black holes radiate after all. And in the second half of the decade, particle physicists discovered that the only scenario for applying their grand unified theories was offered by the very early phase in the history of the Big Bang universe. In both cases, it was necessary to discuss the ideas of quantum field theory in the background of curved spacetime that is basic to general relativity. This is, however, only half the total story. If gravity is to be brought into the general fold of theoretical physics we have to know how to quantize it. To date this has proved a formidable task although most physicists would agree that, as in the case of grand unified theories, quantum gravity will have applications to cosmology, in the very early stages of the Big Bang universe. In fact, the present picture of the Big Bang universe necessarily forces us to think of quantum cosmology.
