Book excerpt: NNR2012 Part 3: Vitamins A, D, E, K, Thiamin, Riboflavin, Niacin, Vitamin B6, Folate, Vitamin B12, Biotin, Pantothenic acid and vitamin C The Nordic countries have collaborated in setting guidelines for dietary composition and recommended intakes of nutrients for several decades through the joint publication of the Nordic Nutrition Recommendations (NNR). This 5th edition, the NNR 2012, gives Dietary Reference Values (DRVs) for nutrients, and compared with earlier editions more emphasis has been put on evaluating the scientific evidence for the role of food and food patterns contributing to the prevention of the major diet-related chronic diseases. Recommendations on physical activity are included and interaction with physical activity has been taken into account for the individual nutrient recommendations wherever appropriate. A chapter on sustainable food consumption has been added. A Nordic perspective has been accounted for in setting the reference values. The NNR 2012 has used an evidence-based and transparent approach in assessing associations between nutrients and foods and certain health outcomes. Systematic reviews form the basis for the recommendations of several nutrients and topics, while a less stringent update has been done for others. The systematic reviews and individual chapters have been peer reviewed and the systematic reviews are published in the Food & Nutrition Research journal. The draft chapters were subject to an open public consultation. Recommendations have been changed only when sufficient scientific evidence has evolved since the 4th edition. The primary aim of the NNR 2012 is to present the scientific background of the recommendations and their application. A secondary aim is for the NNR 2012 to function as a basis for the national recommendations that are adopted by the individual Nordic countries.

Book excerpt: The Nordic countries have collaborated in setting guidelines for dietary composition and recommended intakes of nutrients for several decades through the joint publication of the Nordic Nutrition Recommendations (NNR). The 5th edition, the NNR 2012, gives Dietary Reference Values (DRVs) for nutrient intakes, but more emphasis than in earlier editions has been put on evaluating scientific evidence for the role played by dietary patterns and food groups that could contribute to the prevention of the major diet-related chronic diseases. A Nordic perspective has been accounted for in setting the recommendations. The NNR 2012 has used an evidence-based and transparent approach in assessing associations between dietary patterns, foods and nutrients and specific health outcomes. Systematic reviews (SRs) form the basis for the recommendations of several nutrients and topics, while a less stringent update has been done for others. SRs and individual chapters have been peer reviewed. The draft chapters were also subject to an open public consultation. The present publication contains three parts: a summary of the recommendations, background and principles for the derivation of DRVs and use of the NNR. The documentation of the scientific basis for individual nutrients and topics will be included in a subsequent publication.

Available in PDF, EPUB and Kindle. Book excerpt: Available online: https://pub.norden.org/nord2023-003/ The Nordic Nutrition Recommendations (NNR) constitute the scientific basis for national dietary guidelines and nutrient recommendations in the Nordic and Baltic countries. The NNR2023 is the result of five years of work of several hundred researchers and experts, in the Nordic cooperation’s biggest and most globally spread project. This sixth edition of the NNR gives, for the first time ever, recommendations not only about what food is good for our health, but also what is good for the environment. In addition, dietary reference values for nutrients have been updated, many nutrients have received reference values for the first time, and many more food groups have been analysed than in previous editions – turning NNR2023 into the most comprehensive NNR to date. In short, the NNR2023 recommends: A predominantly plant-based diet high in vegetables, fruits, berries, pulses, potatoes and whole grains. Ample intake of fish and nuts. Moderate intake of low-fat dairy products. Limited intake of red meat and poultry. Minimal intake of processed meat, alcohol, and processed foods containing high amounts of fats, salt and sugar.

Available in PDF, EPUB and Kindle. Book excerpt: The transformation of food chains towards sustainability in food consumption and food security is a global issue, connected with the global challenges of poverty reduction, employment and urbanization. Combating malnutrition—undernutrition and micronutrient deficiencies—as well as overweight and obesity is an increasing problem. The main topics to be examined are the following: Ensuring sustainable food production (land and sea), sustainable diets and sustainable communities, including issues for agricultural transformation in face of increasing competition for land use; promoting healthy food systems and increasing the focus on nutrition, with multiple implications for diet quality, vulnerable groups, and informed choice; biotechnology could play an important role in climate change mitigation (e.g., nutrient-efficient plants) and adaptation (e.g., drought-tolerant plants), renewable energies, biodegradable products, rural development, and global food security; identifying the means to promote resilience, including resilience in ecosystems and in international markets; responding to climate change and other environmental and social change. The focus should also cover issues for vulnerable groups such as mothers and children, the elderly, patients, and migrants to understand the general aspects of consumer behavior. Sustainability related to product standards and reactions of consumers to these standards are also of great importance.

The NORDIRA project started in 2009 with objectives of sharing experiences within collection of food consumption data and applications of it in food-based risk assessment. The NORDIRA-group consisted of experts working within dietary surveys as well within risk assessment. The project collected results and methodological aspects of national dietary surveys, the presentations of food consumption figures and data calculation processes of risk assessment. This TemaNord report is a summary of the presentations and experiences shared during the three year period of the NORDIRA project. The group emphasizes a flexible food aggregation system in reporting food consumption to enable different kind of matching of data from food consumption and occurence of chemical substances
