Book excerpt: Aquaculture has become one of the main sources of human food, and the per capita food fish supply has reached 21 kilograms in 2019. With the expansion of the farming industry and the deterioration of the farming environment, outbreaks of various infectious diseases have become more and more serious, resulting in huge economic losses. In the past, antibiotics were commonly used to control diseases in aquaculture animals. However, the overuse of antibiotics caused various problems such as pathogen resistance, drug residues and environmental pollution. As a result, the development of functional ingredients added to feed to improve the health of aquaculture animals is necessary for the sustainable development of the aquaculture industry.

Available in PDF, EPUB and Kindle. Book excerpt: This Special Issue presents high-quality research papers as well as review articles addressing recent advances in the use of marine bioactives in animal nutrition. The marine environment constitutes a relatively untapped source of biologically active compounds that can be applied in various areas, such as improvement of animal performance, health maintenance, and disease prevention. Numerous marine-based compounds isolated from marine organisms (especially seaweeds) have diverse biological activities, including antioxidative, anti-inflammatory, antibacterial, antifungal, and antiviral activities that can be beneficial to animal health. Additionally, the application of marine bioactives as feed additives can increase the nutritional value of products of animal origin. In this Special Issue, the main attention was focused on seaweeds and their application in poultry (laying hen and broiler chickens) and pig feed. The suitable processing of marine resources required for their optimal use as feed/feed additives was underlined. The contained publications present scientific evidence for the use of various seaweeds as feed additives that improve health (enhanced immunity, prebiotic effect), growth performance, and production. Inclusion of this unconventional material in animal nutrition can enrich products with active compounds, such as micro- and macroelements, polyunsaturated fatty acids, and pigments which are beneficial for consumers.

There are more than 900 recorded species of sea cucumber of which more than 40 are edible. As a food source, sea cucumbers are rich in protein, low in fat, rich in collagen, sulfated polysaccharides, phospholipids, glycolipids, saponins and other functional components. Therefore, sea cucumbers have important nutritional and medicinal value. Growing awareness of these health benefits has promoted growth in marine aquaculture and processing technologies for the development of sea cucumber products for many applications.Novel perspectives of nutritional functions and processing technologies of sea cucumbers are defined in this book. The chemical structure and nutritional function of sea cucumbers are systematically reviewed. These include the functional/nutritional components, the endogenous enzymatic properties related to processing efficiency and product quality, and the efficient preparation technology of functional components. The traditional processing technology is presented as the background context to highlight the advances in new processing technologies including low-temperature cooking technology based on controllable negative pressure system, heat pump-hot-blast air combined drying technology, microwave sterilization of instant sea cucumber, collagen stabilization technology. The book finishes with the authentication of sea cucumber types and origin, quality standards, product quality control systems and food safety requirements.
