Book excerpt: In the previous two volumes of this series, we presented classic problems in internal medicine as illustrated by actual cases cared for in our institution. It has been gratifying for us to see the interest that these volumes have generated with students and trainees. We remain committed to the case method of instruction, and believe that there is no better method to learn medicine than to have an individual patient problem as the basis for study of pathophysiology, natural history, diagnosis and management. We hope that our readers find this third volume as enjoyable and instructive as the editors found it. Juan M. Bowen, MD Ernest L. Book excerpt: In this paper the author offers a reprint of "Equality of Opportunity: The Making of the Americans with Disabilities Act" (July 26, 1997). This personal story is part and parcel of the ADA's (Americans with Disabilities Act) significance in the society. The ADA is a nondiscrimination law. It is a clarion call for transforming attitudes about disability. The ADA proclaims that all people, including people with disabilities, should participate fully in all aspects of communities and have opportunities to take risks, to succeed, and--yes--to fail. Equality of opportunity means having a chance to live independently and become financially secure, but it is not a guarantee. Understanding the history of the ADA is every bit as important as when "Equality of Opportunity" was first published in 1997. Arguably, the urgency is even greater now. Achieving equality of opportunity for people with disabilities depends in large measure on individual transformative experiences like the one the author had through writing the history of the ADA. Thus, the author hopes that this reprint of "Equality of Opportunity" enables more people to understand the ADA and the outmoded structural and attitudinal barriers it was meant to tear down. A glossary of included. List of Interviews is appended. (Contain 443 notes.).

Book excerpt: The RACCP (hazard analysis critical control point) concept for food products was an outgrowth of the US space program with the demand for a safe food supply for manned space flights by the National Aeronautics and Space Administration (NASA). The original work was carried out by the Pillsbury Company under the direction of Roward E. Bauman, who as the author of chapter 1 describes the evolution of the RACCP system and its adaptation to foods. The second chapter discusses the adoption of RACCP principles and explains how they fit into the USDA and FDA meat, poultry and seafood inspection systems. The next chapter discusses how RACCP principles can be extended to production of meat, poultry and seafoods, a most important area involved in producing a safe food supply. Chapter 4 deals with the use of RACCP in controlling hazards encountered in slaughtering and distribution of fresh meat and poultry, while chapter 5 discusses the problem - both spoilage and hazards - involved in processing and distribution of meat, poultry and seafood products. Chapter 6 covers the entire area of fish and seafoods, including both fresh and processed products from the standpoints of spoilage and hazards.

Available in PDF, EPUB and Kindle. Book excerpt: Service learning, as defined by the editors, is the generation of knowledge that is of benefit to the community as a whole. This seventh volume in the Outreach Scholarship book series contributes a unique discussion of how service learning functions as a critical cornerstone of outreach scholarship. The sections and chapters of this book marshal evidence in support of the idea that undergraduate service learning, infused throughout the curriculum and coupled with outreach scholarship, is an integral means through which higher education can engage people and institutions of the communities of this nation in a manner that perpetuate civil society. The editors, through this series of models of service learning, make a powerful argument for the necessity of "engaged institutions".

Book excerpt: American things, American material culture, and American archaeology are the themes of this book. The authors use goods used or made in America to illuminate issues such as tenancy, racism, sexism, and regional bias. Contributors utilize data about everyday objects - from tin cans and bottles to namebrand items, from fish bones to machinery - to analyze the way American capitalism works. Their cogent analyses take us literally from broken dishes to the international economy. Especially notable chapters examine how an archaeologist formulates questions about exploitation under capitalism, and how the study of artifacts reveals African-American middle class culture and its response to racism.
