Book excerpt: This article uses U.S. food consumption data to examine the effect of maternal nutrition knowledge on the dietary intakes of children between two and seventeen years of age. Results show that maternal knowledge influences children's diets and that such influence decreases as children grow older. Nutrition knowledge acts as a pathway through which maternal education influences children's diets. This finding supports the hypothesis that education affects health-related choices by raising the allocative efficiency of health input use. The results suggest that nutrition education may be more effective if targeted both toward mothers with young children and directly toward school-age children.

Book excerpt: The purpose of this study was to determine the differences between nutritional knowledge of mothers of preschoolers and the growth status and dietary intake of preschoolers who attend the Child Development Center at Kent State University for which two hypotheses were stated. The independent variable of this study was knowledge of the mother and the dependent variables was the growth status of the child measured by plotting the child's BMI-for-age and the dietary intake of the child which was assessed by taking a 24-hour food log and by evaluating macronutrient (energy, carbohydrate, protein, total fat, saturated fat) intake of the child. The data was collected by a paper-pen survey. Mothers were asked to fill the first four sections of the survey at the CDC and were given the 24-hour-food log to be filled in at home. Total 29 mothers participated in the survey from which 13 mothers turned in the food log of the child. One-way analysis of variance was used in SPSS version 24.0 to analyze the quantitative data and themes and patterns were formed to analyze the qualitative data. The results indicated that there was no significance found (p>0.05). The overall education level of the mothers was observed to be high with the majority of them having a Masters or a Ph.D. degree, but their nutrition knowledge in general was found to be extremely low. While the current study provided beneficial insights into mother's nutrition knowledge, the results indicated an overall lack of impact of mother's nutrition knowledge on the growth status and dietary intake of the child (p>0.05). Despite previous research supporting the influence of mother's nutrition knowledge on a child's development and dietary intake, this study lacked many positive outcomes previously obtained, indicating that additional research is necessary to assess the impact of mother's nutrition knowledge on growth status and dietary intake of the child.

Book excerpt: Abstract: The purpose of this study was to conduct a secondary analysis to examine the association between the change from baseline to follow-up in Latino mothers’ self-reported nutrition knowledge, self-efficacy, intentions, food label use, and role modeling from baseline to follow-up with their reports of children’s dietary intake measured at follow-up. Data were obtained from from Sanos y Fuertes, a culturally-tailored community-based nutrition education intervention. The participants were Latino mothers and their children ages 2 to 8 years old. A dietary quality scoring system was created using food frequency data. To account for reported frequencies, five set points were created to define criteria for high dietary quality. Logistic regression tests were conducted for the five set points. The change in nutrition knowledge (p = .019) and role modeling (p = .034) of the mothers significantly predicted probability of higher child dietary quality at follow-up. Findings suggest the need for interventions that focus on increasing parental dietary knowledge while emphasizing the importance of role modeling. Further research is needed to explore cultural-related dietary differences between Latinos and non-Latinos.

Book excerpt: The purpose of this study was to determine the child nutrition knowledge of mothers with children from birth to 24 months. Mothers were selected from eight childcare centers in Menomonie and Eau Claire, Wisconsin. A total of 16 nutrition statements were provided and the mothers were asked if they agree that the statement was true, disagree, or do not know. The number of children, mother's educational level, and age were examined for their relationship to maternal nutritional knowledge. Data were analyzed using the Statistical Package for the Social Sciences (SPSS) statistical analysis software 20.0.0 version. Non-parametric tests were used to test for differences in average knowledge score by the age groups, the education levels, and number of children. Mothers included in the study had a good level of nutrition knowledge with an average score of 68% correct, regardless of their age or their education level. However, if the mother had more than one child then she also had more nutrition knowledge (p= 0.032). The primary sources of nutrition information for the mothers were: doctors/nurses, the Internet, references/books, and family and friends. Efforts to improve the child nutrition knowledge of mother should focus on these sources.

Optimal nutrition and health care of both the mother and infant during these first 1000 days of an infant's life are closely linked to growth, learning potential and neurodevelopment, in turn affecting long-term outcomes. Children with low birth weight do not only include premature babies, but also those with intrauterine growth restrictions who consequently have a very high risk of developing metabolic syndrome in the future. Epidemiology, epigenetic programming, the correct nutrition strategy and monitoring of outcomes are thus looked at carefully in this book. More specifically, two important nutritional issues are dealt with in depth: The first being the prevention of low birth weight, starting with the health of adolescent girls, through the pre-pregnancy and pregnancy stages and ending with lactation. The second point of focus concerns the nutritional follow-up and feeding opportunities in relation to dietary requirements of children with low birth weight.
