Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Milk and the Public Health The fundamental importance of milk makes it a subject which should be studied and investigated from every point of view. The present volume is entirely concerned with milk in its relationship to the general health of the community. A great deal of loose talk is heard at the present time about the dangers of milk - sometimes ill-informed, frequently exaggerated. There can, however, be no question but that this great food, so widely consumed, so readily polluted, is intimately connected with the health of the people, particularly of its younger members, and that the lamentable want of even ordinary care with which it is treated is responsible for an immense deal of sickness, ill-health, and death. While the danger exists, and should be emphasised by the scientific Public Health investigator, it is for him to neither exaggerate nor underrate it, but first to measure and assess the danger, and then to demonstrate how it can be removed or at least diminished. The present volume is an attempt to do this. Administrative action should be the outcome of the application of accurately determined scientific facts to practical conditions. Book excerpt: Excerpt from Pure Milk and the Public Health: A Manual of Milk and Dairy Inspection The relation of milk to the public health and the means employed to ensure a safe milk supply is a subject of varied aspects. The proper control of the public milk supply requires more or less of the services of the bacteriologist, the chemist, the physician, the veterinarian, and the progressive dairyman. The ordinary fund of technical knowledge possessed by any one of these classes is not sufficient for coping with the difficulties encountered in carrying on efficient and comprehensive meas ures for milk and' dairy inspection. Furthermore, knowledge concerning the subject is being rapidly increased by contribu tions widely scattered in technical journals. Book excerpt: Excerpt from Milk and Its Hygienic Relations The Medical Research Committee are charged with the administra tion of the Research Fund which has become available under the provisions of the National Insurance Act, for the advancement of medical knowledge by research. It falls to their duty, there fore, in the application of that Fund, to aid, to initiate, and to organise the work of scientific enquiry along available lines of advance, towards the enlargement of our powers of preserving health and of diminishing disease. Among the plans for research which the Committee formulated at the beginning of their work, the subject of Milk, in its relations to public health, was naturally included. The study of milk is from its nature what has been called a 'borderland subject, ' and has attracted enquiry by workers employing the widely different technical methods of chemistry, of physiology, of bacteriology, of agricultural science, and of clinical medicine. The results of this work have been published separately in the technical archives and journals devoted to those Special branches of science, and these publications are dispersed widely through the literatures of many different languages. To the workers in any one field the bibliography of his own subject is familiar, or at least easily accessible, but in the case of a subject not falling wholly within the customary' boundaries of a conventional scientific field, it is a matter of difficulty involving great expenditure of time and labour to secure a general view of the state of knowledge as it exists at any given moment. Book excerpt: Excerpt from Milk This volume is simply a collection of essays contributed to the various medical societies and journals during the past seventeen years. It would be vain for the author to claim that there was no other motive than that of love for scientific truth impelling the work. However, as a physician and veterinarian, it cannot be judged dishonest for him to say that there has been a sincere desire to reach the truth and follow it. And, on the other hand, as a dairy man trying to produce the best milk that is within human possibility, there has been, of course, more or less trade interest. Therefore, if these two designs can be allowed without prejudice on the part of the reader, there is hope that the work will benefit others as well as the. Book excerpt: Excerpt from Report of the Special Milk Board of the Massachusetts State Department of Health: Submitted to the Commissioner of Health and Public Health Council, December 29, 1915 Originally it was intended to confine this investigation to the public health aspects of milk production and distribution. Because of the closely interwoven connection between the economic and sanitary features of the milk problem your Board soon found that such a procedure was impossible, and we have, therefore, endeavored to cover the entire problem in a com prehensive manner. The report is seriously incomplete from one important stand point, the total number of producing dairies personally visited by members of your Board. We estimate that in all we have seen possibly 2 per cent. Of the producing farms supplying milk to Massachusetts consumers. As far as possible we have endeavored to select typical sections, and feel that in reality we have by this procedure obtained a much truer picture of aver age dairy conditions than if we had concentrated our visits in a smaller area and possibly visited a considerably higher per centage of the total producing dairies. Available in PDF, EPUB and Kindle. Book excerpt: Milk Diet as a Remedy, for Chronic Disease, published in 1911, is one of those publications that supported the "milk diet" movement that was quite popular in the early 1900s. This edition offers intriguing declarations about milk as a cure for problems related to blood production and circulation, as well as chronic diseases. Written by a legitimate physician, Charles Sanford Porter, M.D., this edition contains certain revelations that may fly in the face of modern medicine. Some of the statements made here may be contradictory to recent findings about human consumption of milk, thus the need to take everything with prudent judgment. Given that this volume was released more than a hundred years ago, it's understandable that there are information included which have yet to be verified and concluded in further studies and with more advanced technology. However, the author cites examples and cases of people who attribute their recovery from certain diseases to the practice of drinking milk exclusively. Aside from taking in generous quantities of milk, the Dr. Porter also prescribes rest and exercise. In the last parts of this edition, he provides a number of exercise routines that the reader can easily carry out. To this day, the milk diet prescribed in this book still has advocates and fans. This volume is definitely appropriate supplementary reading for dairy product lovers and those who are interested in the dietary fads of the past, but should not be used as a guide without the advice of a modern medical professional. Book excerpt: Excerpt from What Effect Has the Meat or Milk From Diseased Animals Upon the Public Health? First Class - Parasitic animals and vegetables inducing dis eases in animals; and by means of the products of these ani mals so infested, communicating the same, or other, or cousson tive diseases to man. Second Class - Gaseous, vegetable or mineral poisons, ah sorbed or taken into the system of animals, and so contaminating their esh or milk as to produce disorders in persons partaking of either. Third Class. - Animal poisons which render the esh or milk of animals unfit for human food. First Class - There are numerous parasites which infest animals and man, which produce but little if any injury to the health of either; there are, also, entoparasites which have their nidus in certain animals, and so long as they remain in them continue in an imperfect state; but so soon as they enter the system of man, or some other animal, they undergo their last transformation and are developed into their perfect state, and abide for a longer or shorter time within their hosts, some varieties producing mere disturbance, some serious disorders, and some death. Owing to the great facility with which the germs of some entozoa enter the intestinal canal of animals with the food, we find that many animals are infested with intestinal entozoa which remain only as intestinal entoparasites. The germs of other entozoa enter the intestinal canal with the food, and from thence penetrate through the living tissues, and make their nidus in the peculiar organ they select, reaching the tissues of their nidus entirely by the mechanical process of boring. Book excerpt: Excerpt from City Milk Supply The writer's experience as a health officer and as a teacher has led him to believe that there is need for a book telling something about milk, how it is produced and how it is transported and delivered to city milk consumers and of the methods of control adopted to insure its purity. The subject is a broad one and in its divisions touches several specialized fields which are the domain of experts so that necessarily the work of these men has been drawn on for material. The attempt has been made to give them due credit by lists of sources at the end of each chapter. TO the many dairymen and city milk dealers who have given cordial welcome to their farms and plants, to those who have supplied photo graphs and to the friends who have helped with advice in the prepara tion of the manuscript and in revision of the proof the author gives hearty thanks.
