O. Atwater, Ph. D. The circumstances which have led to the publication of the present bulle tin need, perhaps, some words of explanation. Investigations of the hygienic and pecuniary economy of food are of comparatively recent date. It is scarcely fifty years since the classical researches of Liebig began to pave the way for finding practically all we know today of the ingredients of our food materials, the ways in which they are used in the body, and the kinds and combinations which are best adapted to health and purse. Nearly all of the best experimental inquiry in these lines has been carried on in Europe. There have, indeed, been pioneers in the United States, but their work belongs mostly to the last two, and all of it to the last three, decades. The first analyses by modern methods of materials used for the food of man or domestic animals in this country were made in 1869 by the author of this bulletin, then a student in the Sheffield Scientific School of Yale University. With the rise of the experiment stations, inquiries into the composition of feeding stuffs and their appropriate use in the nutrition Of domestic animals have been undertaken and during the past few years have been carried on quite actively. The first at all extensive series of investigations of materials used as the food of man undertaken in the United States were studies of the chemistry of fish, prosecuted under the aiispices of the United States Fish Commission in the chemical laboratory of Wesleyan University by Professor Atwater in the years 187 84881. In connection with this work, analyses of meats and other food materials were made under the auspices of the Smithsonian Insti tution. Experience with these classes, which have used as textbooks mainly Leach's Food Analysis and Bulletin 107 of the Bureau of Chemistry, has shown the need of a book which should cover distinctly less ground than either of these, but should give to the student a more detailed discussion of the analytical processes involved, their suitability and limitations. Further, an attempt has been made to lay greater emphasis on the interpretation of the analytical results. To the author's mind the principal asset to be gained by the student from any detailed consideration of the methods employed to detect adulteration in foods is the exercise of judgment and the training of the sense of discrimination, which is derived from a critical balancing of the data obtained in a food analysis. Substances are being examined which are usually capable of wide natural variations in composition, and an exceptional opportunity is afforded for a critical study of the analytical factors in order to determine whether or not they imply artificial manipulation of the product. Because the primary intention has been to write a book of the character outlined no effort has been made to include a great variety of food materials, nor necessarily those of greatest economic importance or which are most widely used. Certain typical foods have been selected to illustrate important methods of attack or characteristic methods of food analysis. In a word, the book has been written and the material selected primarily for the undergraduate student of analytical chemistry rather than for the practising chemist. The fact that certain typical foods have been selected should not be considered as implying any intention to limit the student to the particular examples cited. Other products, similar in general character to those discussed, involving the same or different forms of adulteration, will readily suggest themselves. When these methods were adopted it was expected that they would be greatly amplified and changed as a result of subsequent study. Many of the methods appearing in Bulletin 65 had been carefully worked out by the association, but only a few of them were tested by collabora tive work, and in many cases the methods that seemed to be best adapted for making certain determinations were adopted provisionally without detailed investigation by the association. It is seen, therefore, that the methods in Bulletin 65 were adopted as a working basis, and probably conditions would have been simplified if these methods had first been adopted as tentative rather than as provisional. This is to be expected, particularly when the materials used are in a colloidal state. Unless the constituents of food products are present in the same amount, and, even if present in the same proportion, if the colloidal particles are not the same size, if the previous treatment, including the thermal and mechanical treatment and the time element, is not exactly duplicated, then even an elementary knowledge of colloid chemistry leads one to expect different results in finished products, because of variation of these different factors. It is not possible to control all these factors. For instance, the variation in ash content of flour, eggs, milk, meat, fruits, and vegetables is nearly always beyond our control. But the necessity for a detailed description of the technic and method followed in reporting results is obvious. Detailed directions in writing the laboratory outline are essential or the technics followed may vary so much that the results are worthless for comparisons. It is of course understood that adequate explanations cannot be offered for all cookery processes. In some instances it is necessary to determine the results time after time and let the theory fit the laboratory facts. In other cases the explanations offered will need to be changed, modified, or replaced by data obtained from future investi gations. In starting the laboratory work the author asks her students to assume the attitude that every result obtained is right. If it is not as expected, what are the reasons? For example, a burned, charred product results from certain procedures. If, when students have used the same proportions, the same ingredients, and tried to follow the same technic, the individual results differ, what are the possible interpretations for the divergence? In the same manner the reported results of other investigators are taken as correct. If the students' laboratory results do not always agree with reported results, interest comes in comparing methods used, the ingredients used, their proportion, and the technic followed, to find explanations for agreement or disagreement.
