On a proc d l'analyse de la densit , l'acidit Dornic, la mati re grasse, la mati re prot ique, le lactose, le taux de mouillage et les cellules somatiques du lait collect quotidiennement et livr la centrale laiti re de D lice. Les r sultats obtenus ont montr que les laits r ceptionn s dans les trois centres tudi s et livr s la centrale laiti re r pondent aux normes tunisiennes (14.141). En effet, ces param tres sont gaux 1028,01, 14,56 D, 32,99g/L, 29,44g/L, 1,29% et 448 660cellules/mL pour la densit , l'acidit , la teneur en mati re grasse, la teneur en mati re prot ique, le taux de mouillage et le nombre de cellules somatiques. En outre, on a trouv que la qualit du lait n'a pas vari e entre les centres, les mois et les fournisseurs. La temp rature du lait la r ception est gale 22,59 C. Cette temp rature est jug e lev e et pourrait contribuer au d veloppement des germes qui peuvent affecter la qualit bact riologique du lait.
