Book excerpt: Excerpt from The Establishment of Central Market Butter Prices in Chicago and New York Butter has often been called the balance wheel of the dairy industry. Milk supplies are diverted into butter when no other market outlets are available. Butter generally represents the lowest use value for milk, and the price of butter reflects a floor price below which milk prices rarely go. General supply and demand conditions for all milk products influence the price of butter. The price of butter, being reflected throughout the dairy economy, is of interest to many persons other than those who make or distribute butter. Persons in the dairy industry, particularly producers and creamery operators, have at times complained of certain aspects of the manner in which butter prices are established and of certain characteristics of butter prices. Most of the complaints may be grouped into three categories: (1) The level of prices; (2) the instability of prices; and (3) the thinness of the basis for establishing values. Book excerpt: Excerpt from Problems in Initiating a Report of Prices Received for Butter by Midwestern Creameries Data for this report were collected by the Dairy and Poultry Market News Service of the Agricultural Marketing Service, and the analysis was made by the Market Organization and Costs Branch of the Marketing Research Division. Both the survey and the experimental reporting were done in Iowa, since previous work in 1948-50 had interested the Iowa butter plants in this kind of reporting. It was expected that the work in Iowa could be expanded to other Midwestern States in the ways that the research analyses suggested would be most effective. Book excerpt: Excerpt from Factors of Loss in Marketing and Storing Butter A study of the losses occurring in creamery operations permits of many lines of investigation. The loss considered in this work, although possibly not as scientific as those relative to testing and methods of buttermaking, is considered because of the constant demand for data, proving the extent of the shrinkage and market losses. There is no intention of disparagement of methods now in use by either the manufacturer or the market commission mer chant. The problem in general is a study of weight differences, the cream ery amount in comparison with the market amount and the inquiry of separate factors causing the ordinary discrepancy. Book excerpt: Excerpt from Butter and Butter Making: With the Best Methods for Producing and Marketing It Butter is defined by Webster in his portly volume as "an oily substance procured from cream or milk by churning." If Webster is right, then we are wrong in denouncing any "oily substance" as being butter. Or perhaps, so great has been the popularity of the great lexicographer, many persons have thought they were making and selling butter when they produce an oily or greasy substance and put it upon the market as such, believing it must he butter because Webster says so. Our idea is that butter-such butter as would give a man an appetite to look at, to smell of and taste of-is as far removed from an oily, fatty or tallowy substance as possible. True, it may be reduced by heat to an oily substance-so may lard, so may tallow and other substances-hut it will hardly pay any farmer to go through the tedious process of making butter for that purpose. The popular desire of purchasers of butter is to obtain a firm, fine-grained article, of rich golden color, sweet, nutty, aromatic smell and unctuous taste, put up in pound or half-pound lumps, whether square or round, and which, when opened out from its moist, thin white linen wrapper, invites both the senses of smell and taste. This book was released on 2017-11-18 with total page 62 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Margins on Fluid Milk in the Duluth-Superior Marketing Area, 1947-48 Approximately million quarts of milk were sold monthly in the duluth-superior marketing area by 14 handlers whose records were available for this study. Of these, 10 were located in Duluth, 2 in Superior, and 2 in Cloquet. With two exceptions, the handlers generally confined their distribution of milk to the cities in which they were located. One of the handlers located in Superior also sold in Duluth, whereas one Duluth handler also sold in Cloquet. Thus, ll handlers sold milk in Duluth, 2 in Superior, and 3 in Cloquet. Some handlers also supplied limited areas outside the marketing area. Although the 3 largest handlers accounted for about 50 percent of all the milk distributed in the market, the milk distributing business in duluth-superior was nevertheless not so concen tratad in the hands of a few large handlers as in some other cities. Sales during the period studied indicate a change toward greater concentration of sales among the large handlers (table this came about primarily at the expense of the third largest group.
