Book excerpt: Excerpt from Marketing and Transportation Situation: August 1973 Retail food prices are expected to continue to rise in the last half of the year reflecting unusually sharp price increases for raw agricultural products and increasing marketing costs. Sharp increases in the third quarter are expected for meat products, poultry, and eggs resulting from the lifting of price ceilings and allowing of price increases for raw agricultural products to be passed through to retail. Marketing margins are expected to widen substantially in the fourth quarter as food marketing firms pass through other cost increases incurred during and since the price freeze. Food supplies are expected to rise some later this year but not enough to relieve the tight situation resulting from strong domestic and foreign demand. Accordingly, retail prices for foods from u.s. Farm's for the year may average 18 to 22 percent above 1972. Rising consumer incomes and limited food supplies stimulated a further rise in prices in the second quarter of 1973. The retail cost of a market basket of foods produced on u.s. Farms averaged (annual rate) in the second quarter, up 6 percent from the preceding quarter and 15 percent above a year earlier. Although retail prices for most products increased, beef, pork, poultry, and fresh fruits and vegetables accounted for most of the rise. Gross returns to farmers (farm value of quantities of farm commodities equivalent to retail units) for market basket foods averaged $665 in the second quarter of 197 3, up 8 percent from the preceding quarter and 30 percent from the year-earlier level. Price increases were sharp for most products, especially poultry, soybeans, wheat, most fresh fruits and vegetables, and meat animals. Increases in the farm value of market basket foods were largest in June, averaging percent. Farmers received an average of 44 cents of the dollar consumers spent for farm foods in the second quarter of 197 3, the same as in the previous quarter, but 5 cents more than a year earlier. Since the problems facing all vegetable growers around Illinois cities are of the same general nature, it seemed advisable to concentrate upon one market and to make a detailed study of the marketing problems within that one area. Thus, potatoes averaged about 40 percent of the fresh and 43 percent of the processed vegetable tonnage in the United States in 1959 and 1960. Average u.s. Production of potatoes remained at around million tons from 1950 to 1960. Production in the 11 western States, however, increased 26 percent, or to million tons. The large st increases in production were in Idaho, Washington, and Oregon; part of the increase probably can be attributed to the increase in pro ces sing of potatoes in Idaho and Washington. The utilization of potatoes in the United States has changed rather sharply since 1940. About 25 percent of the potatoes used for food were processed in 1960 compared With less than 2 percent in 1940. Per capita consumption of processed potatoes has increased while fresh has declined.
