Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Manual of Milk Products The annual value of dairy products in the United States is more than six hundred million dollars. The handling of these products makes an industry of great commercial and economic importance. The time is rapidly passing when people regard milk, butter, cheese, and ice cream as luxuries to be used chiefly to please the taste. Rather, they are now used because they furnish valuable food nutrients in desirable form. As the prob lem of feeding the cities becomes more acute and the food value of dairy products is more generally recognized, they will form a more important item in the human diet. The methods by which these products are handled influence decidedly their food value. It is, therefore, important that, in the handling of these products, the best practices should be employed. During recent years much has been added'to our knowledge in this field and much has been written, but it is widely scattered through agricultural literature and is not easily accessible. This Manual has been prepared for the purpose of bringing to gether the work of the best authors into such form as to meet the needs of busy persons, both students and men in commercial work. The book is made up largely of quotations, credit being given in each case. No claim is made to originality, my task being rather that of selection and arrangement. If the book meets a need, an effort will be made to keep it up to date. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Testing Milk and Its Products: A Manual for Dairy Students, Creamery and Cheese-Factory Factory Operators and Dairy Farmers The need of arapid, accurate and inexpensive method of determining the amount of butter fat in milk and other dairy products became more and more apparent, in this country and abroad, with the progress of the dairy industry, and especially with the growth of the factory system of butter and cheese making during the last few decades. SO long as each farmer made his'own butter and sold it to private customers or at the village grocery, it was not a matter of much importance to others whether the milk produced by his cows was rich or poor. But as creameries and cheese factories mul tiplied, and farmers in the dairy sections of our coun try became to a large extent patrons of one or the other of these, a system of equitable payment for the milk or cream delivered became a vital question. Book excerpt: Excerpt from Analysis of Milk and Milk Products This book is intended as a concise manual of the chemical examinations of commercial milk and milk-products. Only processes of practical utility are described. Nothing has been said concerning the food-value of milk or its products. Much text has been used from the second edition of Select Methods in F 00d Analysis. I am under obligation to P. Blakiston's Son Company for permission to use this matter and also for the loan of several cuts. Since the second edition appeared much change has occurred in some departments of milk analysis, While others have under gone but little modification. The most noticeable changes are in regard to the detection of preservatives. Several recently discovered and useful tests for formaldehyde Will be found in the following pages, also convenient tests for abrastol and ben zoates. Cochran's method for fat determination Will be found to be a useful addition to the facilities for examining condensed milk and infant foods. Unless otherwise stated all degrees are centigrade and all readings of scale and are are positive. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Pure Milk and the Public Health: A Manual of Milk and Dairy Inspection The relation of milk to the public health and the means employed to ensure a safe milk supply is a subject of varied aspects. The proper control of the public milk supply requires more or less of the services of the bacteriologist, the chemist, the physician, the veterinarian, and the progressive dairyman. The ordinary fund of technical knowledge possessed by any one of these classes is not sufficient for coping with the difficulties encountered in carrying on efficient and comprehensive meas ures for milk and' dairy inspection. Furthermore, knowledge concerning the subject is being rapidly increased by contribu tions widely scattered in technical journals. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Book of the Dairy: A Manual of the Science and Practice of Dairy Work The English editors have prepared this edition of Professor Fleischmann's comprehensive treatise on Dairying in the belief that in doing so they are placing in the hands of British dairy-farmers a work on the science and practice of their difficult art which will be found invaluable alike for study and for reference. They also believe that it forms a text-book specially well fitted to supplement and explain to students at our numerous Dairy Schools and Agricultural Colleges the practices of dairy management there shown in operation. Professor Fleischmann has long enjoyed the reputation of being one of the greatest living authorities on the science and practice of dairying, and his treatise in German is familiar to all specialists as the best work on the subject. The great advances made in agricultural education in this country in recent years have been the means of calling into existence a number of excellent works in the different depart ments of agricultural science; but the editors believe that Professor Fleischmann's work, in an English form, supplies, in the conventional phrase, a felt want. They trust that the addition of a considerable number of illustrations (not included in the German edition) will still further enhance its value. Book excerpt: Excerpt from The Analysis of Food and Drugs, Vol. 1: Milk and Milk Products The ready sale attending our Aids to the Analysis of Food and Drugs encourages us to h0pe for a favourable reception for a larger work on the same subject. Our aim is to produce a book convenient for laboratory use, which shall contain all that is required for everyday routine work without in any way pretending to be an exhaustive manual on the subject. As the work may run to some 800 or 900 pages, we have decided to bring it out in parts, so that each portion may be up to date. Each part will be complete in itself, and will have an index, while a general index will be issued with the last part. In order to keep the book within manageable limits, we are compelled to deal briefly, or sometimes merely to refer to researches which would be rightly included in a larger work. The length of the various articles must not be taken as a criterion of the importance of the subjects dealt with, as it often happens that much work has been done on com paratively unimportant articles, while on other subjects of great importance very little information has been published. Book excerpt: Excerpt from Profitable Dairying: A Manual for Farmers and Dairymen There is no branch of agriculture which yields so handsome and so satisfactory returns to the farmer as the dairy industry, if properly pur sued. To be sure, there are other branches which give larger returns, but these large profits are more than offset by the loss to the soil and the uncertainty of a crop each year. Tobacco may be grown successfully for a number of years on the same piece of ground, but the soil must be diligently worked and extensively fertilized. In the end the overtaxed soil refuses to respond and finally lies exhausted. So it is with grain farm ing. One cannot draw continually on a bank account without renewing his deposits there. Neither can the farmer draw continually from the storehouse of plant food which he possesses; that is, from the soil of his farm, without put ting back the same amount of fertility that he takes off with his cr0p, unless he wishes to wear out and ruin his farm. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Outlines of Dairy Bacteriology: A Concise Manual for the Use of Students in Dairying This text was originally the outgrowth of a series of 'lectures on the subject of dairy bacteriology to practical students in the winter Dairy Course in the University of Wisconsin. The importance of bac teriology in dairy processes has now come to be so widely recognized that no student of dairying regards his training as complete until he has had the funda mental principles oi this subject. The aim of this volume is not to furnish an exhaus tive treatise of the subject, but an outline and suf ficient detail to enable the general student of dairying to obtain as comprehensive an idea of the bacteria and their effects on milk and other dairy products as may be possible without the aid of laboratory practice. When possible the dairy student is urged to secure a laboratory knowledge of these organisms, but lacking this, the student and general reader should secure a general survey of the field of bacteriology in relation to dairying. In this, the eleventh edition, the effort has been made to include all of the recent developments of the subject. Especially is this true in regard to the sub ject of market milk, a phase of dairying that has gained greatly in importance in the last few years. The changes in the methods of handling market milk have been marked. The results of these changes in influencing the quality of milk offered to the con sumer are fully discussed. Book excerpt: Excerpt from Outlines of Dairy Bacteriology: A Concise Manual for the Use of Students Modern dairying is attempting to build its more accu rate knowledge upon a broader and surer foundation, and in doing this is seeking to ascertain the cause of well established processes. In this, bacteriology is playing an important role. Indeed, it may be safely predicted that future progress in dairying will, to a large extent, depend upon bacteriological research. As Fleischmann, the emi nent German dairy scientist, says: The gradual abolition of uncertainty surrounding dairy manufacture is the pres ent important duty which lies before us, and its solution can only be effected by bacteriology.
