Available in PDF, EPUB and Kindle. Book excerpt: The history of information is a rapidly emerging new subfield of history. Historians are identifying the issues they need to examine, crafting novel research agendas, and locating research materials relevant to their work. Like the larger world around them, historians are discovering what it means to live and work in a world that increasingly sees itself as an information society. Long a discussion point among sociologists, economists, political leaders, and media experts, historians are integrating their methods and research into the larger conversation. The purpose of this book is to advocate for a way to look at the history of information and to history as a whole that is simultaneously relevant to observers in other disciplines and familiar to historians of business, economics, sociology and technology. The author presents that advocacy in two ways: with theoretical and historiographical discussions of what information ecosystems and infrastructures are and their value for this kind of research, second, through a range of case studies applying those concepts. The wide range of case studies is purposeful in demonstrating the applicability of the ideas presented in the early methodological chapters. Themes mentioned in each of the early chapters are consistently applied in all subsequent chapters. This book breaks from the more traditional historiography of book history, sociological and philosophical discussions about knowledge and society. The first two chapters focus on the craft of the historian in this new field, better known as historiography and methods. Subsequent chapters are case studies, showing what results when a historian writes about ecosystems and infrastructures, moving our discussion from theory to practice. The book is an important and substantive contribution to this new subfield, an essential primer, as well as a major statement for all historians on how next to evolve their craft.

Book Synopsis An Onion in My Pocket by : Deborah Madison
Download or read book An Onion in My Pocket written by Deborah Madison and published by Vintage. This book was released on 2020-11-10 with total page 321 pages. Available in PDF, EPUB and Kindle. Book excerpt: As a groundbreaking chef and beloved cookbook author, Deborah Madison—“The Queen of Greens” (The Washington Post)—has profoundly changed the way generations of Americans think about cooking with vegetables, helping to transform “vegetarian” from a dirty word into a mainstream way of eating. But before she became a household name, Madison spent almost twenty years at the Zen Center in the midst of counterculture San Francisco. In this warm, candid, and refreshingly funny memoir, she tells the story of her life in food—and with it, the story of the vegetarian movement—for the very first time. From her childhood in Northern California’s Big Ag heartland to sitting sesshin for hours on end at the Tassajara monastery; from her work in the kitchen of the then-new Chez Panisse to the birth of food TV to the age of farmers’ markets everywhere, An Onion in My Pocket is a deeply personal look at the rise of vegetable-forward cooking and a manifesto for how to eat (and live) well today.

Download or read book Asian Tofu written by Andrea Nguyen and published by Ten Speed Press. This book was released on 2012-02-28 with total page 242 pages. Available in PDF, EPUB and Kindle. Book excerpt: From sleek, silken tofu with delicate toppings to piping-hot fried satchels in a robust sauce, tofu provides a versatile canvas for the intricate flavors and textures that Asian and vegetarian cooks have long enjoyed. America has embraced tofu as a healthy, affordable ingredient. And while it has been welcomed into sophisticated mainstream dining, tofu is often hidden in Western guises and in limited applications. In her third intrepid cookbook, celebrated food writer and teacher ANDREA NGUYEN aims to elevate this time-honored staple to a new place of prominence on every table. Asian Tofu’s nearly 100 recipes explore authentic, ancient fare and modern twists that capture the culinary spirit of East, Southeast, and South Asia. There are spectacular favorites from Japan, Korea, Thailand, Singapore, and India, as well as delicious dishes from Taipei, San Francisco, Santa Monica, and New York. Andrea demystifies tofu and interprets traditional Asian cuisine for cooks, sharing compelling personal stories and dispatches from some of the world’s best tofu artisans along the way. For those who want to take their skills to the next level, the tofu tutorial clearly outlines tofu-making technique, encouraging readers to experiment with the unparalleled flavors of homemade varieties. But time-pressed cooks needn’t fear: while a few recipes, such as Silken Tofu and Seasoned Soy Milk Hot Pot, are truly best with homemade tofu, most are terrific with store-bought products. Some traditional dishes combine tofu with meat in brilliant partnerships, such as Spicy Tofu with Beef and Sichuan Peppercorn and Tofu with Kimchi and Pork Belly, but this collection is predominantly vegetarian and vegan, including the pristinely flavored Spiced Tofu and Coconut in Banana Leaf and vibrant Spicy Lemongrass Tofu Salad. And innovations such as Okara Doughnuts reveal tofu’s more playful side. For health- and eco-conscious eaters and home chefs who are inspired to make the journey from bean to curd, Asian Tofu is the perfect guide.

Available in PDF, EPUB and Kindle. Book excerpt: This “grandmother of all Mennonite cookbooks” brings a touch of Mennonite culture and hospitality to any home that relishes great cooking. Mary Emma Showalter compiled favorite recipes from hundreds of Mennonite women across the United States and Canada noted for their excellent cooking into this book of more than 1,100 recipes. These tantalizing dishes came to this country directly from Dutch, German, Swiss, and Russian kitchens. Old-fashioned cooking and traditional Mennonite values are woven throughout. Original directions like “a dab of cinnamon” or “ten blubs of molasses” have been standardized to help you get the same wonderful individuality and flavor. Showalter introduces each chapter with her own nostalgic recollection of cookery in grandma’s day—the pie shelf in the springhouse, outdoor bake ovens, the summer kitchen. First published in 1950, Mennonite Community Cookbook has become a treasured part of many family kitchens. Parents who received the cookbook when they were first married make sure to purchase it for their own sons and daughters when they wed. This 65th anniversary edition adds all new color photography and a brief history while retaining all of the original recipes and traditional Fraktur drawings. Book Synopsis New Blue Ridge Cookbook by : Elizabeth Wiegand
Download or read book New Blue Ridge Cookbook written by Elizabeth Wiegand and published by Rowman & Littlefield. This book was released on 2010-04-23 with total page 307 pages. Available in PDF, EPUB and Kindle. Book excerpt: America’s legendary Blue Ridge Mountain region is known for its rich history and culture and, not least, its traditional cuisine. But much of what’s cooking there is new—including a thriving Farm to Table movement and increasingly established Slow Food communities. Such movements’ philosophies—caring about where food comes from, how it is grown, and how it is prepared—have transformed the culinary scene for newcomers and old-timers alike. The region is thus ripe for The New Blue Ridge Cookbook, which takes a fresh look at local, seasonal foods and honors efforts of sustainability, as well as the area’s rich culinary history. With some 100 recipes showcasing such traditional foods as apples, candy roasters, and ramps, the book presents new approaches by chefs, farmers, and others in the know—while also sharing amusing anecdotes and culinary traditions, as well as information about the region’s artisanal food products and local beers and wines.
