Book excerpt: By 2050 the world's population is projected to grow by one-third, reaching between 9 and 10 billion. With globalization and expected growth in global affluence, a substantial increase in per capita meat, dairy, and fish consumption is also anticipated. The demand for calories from animal products will nearly double, highlighting the critical importance of the world's animal agriculture system. Meeting the nutritional needs of this population and its demand for animal products will require a significant investment of resources as well as policy changes that are supportive of agricultural production. Ensuring sustainable agricultural growth will be essential to addressing this global challenge to food security. Critical Role of Animal Science Research in Food Security and Sustainability identifies areas of research and development, technology, and resource needs for research in the field of animal agriculture, both nationally and internationally. This report assesses the global demand for products of animal origin in 2050 within the framework of ensuring global food security; evaluates how climate change and natural resource constraints may impact the ability to meet future global demand for animal products in sustainable production systems; and identifies factors that may impact the ability of the United States to meet demand for animal products, including the need for trained human capital, product safety and quality, and effective communication and adoption of new knowledge, information, and technologies. The agricultural sector worldwide faces numerous daunting challenges that will require innovations, new technologies, and new ways of approaching agriculture if the food, feed, and fiber needs of the global population are to be met. The recommendations of Critical Role of Animal Science Research in Food Security and Sustainability will inform a new roadmap for animal science research to meet the challenges of sustainable animal production in the 21st century.

Book excerpt: This book describes the importance of sustainable livestock production from a food security perspective in the changing climate scenario. It covers the amelioration of climate change impacts and describes the various mitigation strategies to reduce enteric methane emissions. The book targets sustainable livestock production by covering diverse concepts of amelioration, mitigation, and policy up-gradation. Further, it examines various adverse impacts of climate change on growth, meat, milk, and reproduction in livestock. Most importantly, the book covers novel aspects of quantifying heat stress response of livestock based on non-invasive methodologies, including infrared thermal imaging, sensor-based applications, hair, urine, and fecal cortisol estimation. Particular emphasis was given to describing the skin-based novel approaches to establish climate resilience in indigenous breeds. The book provides detailed descriptions of alleviating climate change impacts on shelter management, nutritional interventions, and genetics-based strategies involving advanced genomic tools. Lastly, it highlights the livestock species which could be considered ideal climate-resilient animal models to withstand the adversities associated with climate change.

Book excerpt: This study has developed a methodology that builds on the approach to measuring agricultural research returns suggested by Alston et al (1995). We have integrated a herd model to measure the potential size of impact of a new technology, GIS, to predict where this impacts is likely to be felt, and the economic surplus model to estimate some of the costs of trypanosomosis, the potential benefits of controlling it, and potential returns to vaccine research. The advantage of this approach is that it uses field data and GIS analysis to determine where and how much impact research will have on livestock productivity, rather than 'guesstimates' by researchers, as has often been done in previous studies of returns to agricultural research. It is an approach, however, that requires much data and the type of information that is still scarce in many developing countries. This includes evidence of the productivity impacts of a given livestock technology at the herd, rather than individual animal level, and access to GIS data at the lowest adminstrative level possible (e.g. district). Ideally, household level survey data are used to complement the GIS data and verify the recommendation domain. Thus this approach will be enhanced in future analyses by the availability of a wider range of data collected at the household level from different livestock production systems to examine more closely the question 'Impact on whom?'

Book excerpt: There are various innovations and new technologies being produced in the energy, transportation, and building industries to combat climate change and improve environmental performance, but another way to combat this is examining the world’s food resources. Currently, there are global challenges associated with livestock and meat consumption, giving way to resource scarcity and the inability to sustain animal agriculture. Environmental, Health, and Business Opportunities in the New Meat Alternatives Market is a pivotal reference source that provides vital research on the development of plant-based foods and nutritional outcomes. Through analyzing innovative and disruptive trends in the food industry, it presents opportunities utilizing meat alternatives to create a more engaged consumer, a stronger economy, and a better environment. Highlighting topics such as meat consumption, nutrition, health, and gender perspectives, this book is ideally designed for policymakers, economists, health professionals, nutritionists, technology developers, academicians, and graduate-level students.

Available in PDF, EPUB and Kindle. Book excerpt: Does animal welfare have a place in sustainable farming, or do the demands of a rising human population and the threat of climate change mean that the interests of animals must be put aside? Can we improve the way we keep animals and still feed the world – or is it a choice between ethics and economics? The aim of this book is to challenge the "them-and-us" thinking that sets the interests of humans and farm animals against each other and to show that to be really "sustainable," farming needs to include, not ignore, animal welfare. The authors of this remarkable book come from a diversity of backgrounds: industry, animal welfare organizations, academic institutions, and practical farming. They are united in arguing that farm animals matter and that sustainable farming must have animal welfare at its ethical core, along with the production of healthy, affordable food and care for the environment.
