When trouble flared and food was a major grievance in the great mutinies of 1797 the usual reason was the abuse of the system. This system was an amazing achievement. At the height of the Napoleonic Wars the Royal Navy's administrators fed a fleet of more than 100,000 men, in ships that often spent months on end at sea. Despite the difficulty of preserving food before the advent of refrigeration and meat-canning, the British fleet had largely eradicated scurvy and other dietary disorders by 1800. This was the responsibility of the Victualling Board, a much-maligned but generally efficient bureaucracy that organized the preparing and packing of meat, the brewing of beer, the baking of ship's biscuit, and all the logistics of the Navy and on an industrial scale unparalleled elsewhere. Once aboard ship food and drink was subject to stringent controls to ensure fairness, and this book takes a fresh look at the tarnished reputations of Purser and Cook, before turning to the ways both officers and men were able to supplement their official rations, including the keeping of livestock on board. Book excerpt: Despite the significant role played by the health and fitness of the British crews in Nelson's defeat of the Combined Fleet in 1805, little has been written hitherto about the naval surgeon in the era of the long war against France. This book is intended to fill the gap. Sir William Beatty (1773-1842) was surgeon of the Victory at Trafalgar. An Ulsterman from Londonderry, he had joined the navy in 1791. Before being warranted to Nelson's flagship, Beatty had served upon ten other warships, and survived a yellow fever epidemic, court martial, and shipwreck to share in the capture of a Spanish treasure ship. After Trafalgar, he became Physician of the Channel Fleet, based at Plymouth, and eventually Physician to Greenwich Hospital, where he served until his retirement in 1838. As the book makes clear in drawing upon an extensive prosopographical database, Beatty's career until 1805 was representative of the experience of the approximately 2,000 naval surgeons who joined the navy in the course of the war. The first part of the biography provides a detailed and scholarly introduction to the professional education, training, and work of the naval surgeon. But after 1805 Beatty became a member of the service elite, and his career becomes interesting for other reasons. In the final decades of his life, Beatty was far more than a senior naval physician. As a Fellow of the Royal Society, director of the Clerical and Medical Insurance Company, and director of the London to Greenwich Railway, he was a prominent figure in London's business and scientific community, who used his growing wealth to build a large collection of books and manuscripts. His later life is testimony to the much wider contribution that some naval and army medical officers made to the development of the new Britain of the nineteenth century. In Beatty's case, too, the contribution was original. By publishing in 1807 his carefully crafted Authentic Narrative of the Death of Lord Nelson , he was instrumental in forging the myth of the hero's last hours, which has become a part of the national consciousness and has helped to define for generations the concept of Britishness.

Book excerpt: In the summer of 1773 the 14-year old Horatio Nelson took part in an expedition to the Arctic, which came close to ending his naval career before it had begun. The expedition was to find a navigable northern passage between the Atlantic and Pacific, and was supported by the Royal Society and King George III. Two bomb vessels HMS Racehorse and Carcass were fitted out and strengthened under the command of Captain Hon. Constantine Phipps. It was an extremely cold Arctic summer and the ships became locked in ice far from Spitzbergen and were unable to cut their way out until days later when the wind changed and the ice broke up. The ships were extricated and returned home. On the trip, the young Nelson had command of one of the smaller boats of the ships, a four-oared cutter manned by twelve seamen. In this he helped to save the crew of a boat belonging to the Racehorse from an attack by a herd of enraged walruses. He also had a more famous encounter with a polar bear, while attempting to obtain a bearskin as a present for his father, an exploit that later became part of the Nelson legend. Drawing on the ship's journals and expedition commander Phipps' journal from the National Archives, the book creates a picture of the expedition and life on board. Using the ships' muster books it also details the ship's crews giving the different roles and ranks in the ships. The book is illustrated using some of the ship's drawings and charts and pictures of many objects used on the ship, while a navigational chart of the route taken has been created from the logbooks. The book also looks at the overall concept of naval exploration as set in train by Joseph Banks and the Royal Society. The fact that the expedition failed as a result of poor planning with potentially tragic results demonstrates the difficulties and uncertainties of such an expedition. It also looks at a great naval commander at the earliest stage of his career and considers how the experience might have shaped his later career and attitudes. Other great captains and voyages are discussed alongside Nelson, including Captain Cook and his exploration of the south seas and the later ill-fated northern journeys of Franklin and Shackleton.
