Book excerpt: Excerpt from The Dairy Industry in Missouri and Kansas Not many years ago it was assumed that New England and New York, with perhaps a part of Ohio added, would be able to supply the American demand for dairy products. It was thought that dairying would be mainly confined to the territory indicated, notwithstanding the growth of other sections, because the conditions in the West and South, generally, were deemed so unsuited to this industry as to prevent its extension in those directions. The development of the commercial and manufacturing interests of the East made it soon apparent, however, that the farmers of that region could not supply the demands of its teeming population for food products. Meanwhile emigrants from the Eastern States pushed westward, located in the wooded lands of Ohio and Indiana and on the prairies of Illinois, and then crossed the Mississippi to occupy the fertile lands of the great agricultural basin which includes the States of Missouri and Kansas. Cows came with the settlers and found the natural pasturage and other conditions very favorable to stock raising and milk production. Dairy cattle rapidly increased, and the farmers soon had before them the problem of how to utilize their surplus milk. Eastern demand for butter and cheese was found to increase about as fast, and the recognized "dairy belt" was gradually extended to include Ohio, Indiana, Illinois, Michigan, Wisconsin, and Iowa. It was still maintained that south and west of these States dairying could not be successfully pursued. These views were also destined soon to be proved erroneous. It is now safe to assert that a territory of nearly 100,000,000 acres within the limits of Kansas and Missouri offers as great possibilities for dairying as any equal area on the globe. Such possibilities can only become realities through the abandonment of many ideas as to what were once regarded essentials in dairying, as, for example, that flowing spring water and a reliable supply of ice must be had on every dairy farm; that dairying can be made profitable only with permanent pastures and cultivated grasses, and that the dairyman must be near the consuming market. Book excerpt: Excerpt from An Economic Survey of the Los Angeles Milk Market This study was undertaken during the summer of 1930 at the request of several organizations representing the dairy industry of California. A bulletin on Economic Aspects of the Dairy Industry3 published by the California Agricultural Experiment Station in 1927 had attracted considerable attention and had suggested to some leaders of this industry the need for more specific studies in this field. In 1929 a committee was appointed by the State of California Milk Distributors' Association to consider the problem of surplus milk in general, and in December, 1929, a formal request was made to the California Agricultural Experiment Station to undertake a special study of this question. In February, 1930, similar requests were made by a general committee of producers and distributors, which was created to deal with certain problems in the Los Angeles area, by the Southern California Milk Dealers' Association and by the Butterfat Club of San Francisco. These requests were the result of unstable market conditions due to a large surplus of market milk in Los Angeles particularly. Through the courtesy of Cornell University, the services of the author were made available for this study, beginning September 1, 1930. Meanwhile, some preliminary work was done by Professors H. R. Tolley and E. C. Voorhies and Mr. M. H. Blank. The time which the author could devote to the work was limited to a period of five months. Consequently it was necessary to confine the survey to certain aspects of the situation that promised to yield the most useful information in the time available. Data on the costs of production and distribution of milk were not collected.4 Particular attention was given to the surplus problem and to the relations between producers and distributors. Production per cow advanced more rapidly than usual during February. Temperatures for the month as a whole averaged above normal in practically all sections of the country while January weather was quite cold in all of the important northern dairy sections. The heavy snow blanket which had covered the northern tier of States during much of the wint had disappeared in most sections by the end cf February and reports indicate that r the weather has been rather favorable to milk production. In general, milk prices in relationship to feed prices in recent months have been considered satisfactory and with large supplies of most feeds available, farmers have been feeding their cows heavier than usual all winter. The full effects of this heavy feeding are probably just now becoming apparent with the large number of freshenings which normally occur at this season of the year. There have been numerous reports from dairymen on inability to obtain high protein feeds for mixing with home-grown grai and of shortages of farm labor, but these factors have not caused a serious reducti intmilk production.per cow; Increased milk production per cow on March 1 as compared with a year earlier was reported for the West North Central and South Central groups of States but these increases were offset by decreases in the North and Soutttlantic, the East North Central and the Western groups. The greatest increase occurred in the South Central States where climatic conditions have been somewhat more favorable than a.year earlier. The greatest decrease took place in the East North Central States whichr generally experienced unseasonably cold weather during he last week in Februhny. Every section, however, reported appreciably higher production per cow than usual for March 1, ranging from 7 percent above average in the Western group of States to 12 percent above in the West North Central group. Greater than usual percentage increases during February were shown in all sections except the East and West North Central States. The flush season is now well under way and production is showing changes each week, but when these are considered in relation to what has oc curred other seasons, and what dairy interests have anticipated would occur this year, the Iiet result is that price changes have been slight. Butter prices, of course, are a little lower than last year, although the June average promises at this writing (june 25) to be very close to June, 1928. It has been a long time since prices have followed as steady course as during the latter part of May and the early part of this month. As a matter of fact, from May 13 to June 7, a period of almost four weeks, the wholesale price of 92-score butter at New York City was unchanged at 43 cents. There is seldom much variation between high and low prices during the month of June, but an un changed price over so long a period, part of which was in May, is very unusual. Cheese prices have also shown very little change during recent weeks. Quoted prices for principal styles of American cheese handled on Wisconsin cheese boards have not changed since the first week of April. The 1929 situation, therefore, is a direct contrast to the usual changes which occur to both butter arid cheese prices during the spring and early summer months. A general tendency for butter prices to become more stable was in evidence throughout all of last year, so that 1929 may be following along in what will be a permanent change. Just What the factors are which have caused this is hard to say, but some important changes in the organization of the dairy industry, as well as changes in methods of merchandising, during recent years, may have contributed.
