Ainsi les extraits des fruits de Balanites aegyptiaca ont donn de bons r sultats pour coaguler le lait. La rubisco est une enzyme impliqu e dans la fixation du CO2.par les plantes vertes. Mes travaux de recherche ont porté sur une enzyme végétale, la rubisco, le lait humain, le lait de zébu, les enzymes coagulants d'origine végétale. La rubisco a été purifiée à grande échelle et ses concentrations limites de gélification déterminées ; ce qui a permis de publier deux articles dans Intern. J Biol. Macromol. (1993 et 1996). La composition biochimique du lait des Nourrices camerounaises a été déterminée et comparée aux valeurs trouvées dans d'autres pays ; deux publications dans Cameroon J Biol. Bioehem. Sci. (1988 et 1989). Le zébu produit 1 à 2 litres de lait par jour selon les saisons ; la composition biochimique de ce lait a été déterminée. Il est utilisé dans la fabrication des laits fermentés locaux et des fromages frais dont l'acceptabilité pourrait être améliorée avec leur aromatisation. Ce travail a donné lieu à quatre publications : J Cameroon Acad Sci. (2001), J Food Sci. Intern. Teehnol. (2005), les Annales de la Faculté des Sciences de l'Université de Yaoundé 1 (2006) et African J Biotechnol. (2006). A partir des écorces de l'Ongokea gore et des fruits de Balanites aegyptiaca, des extraits coagulants susceptibles d'être utilisés en fromagerie ont été obtenus. Ces travaux ont fait l'objet de six publications: J Cameroon Acad Sci. (2002 et 2003), Trop. Sci. (2004) et Tropicultura (2006 et 2007). L'atténuation des radiations infrarouges est exploitée pour doser de l'humidité dans le sucre mais pourrait aussi servir à détecter le mouillage du lait. Une publication dans African J Biotechnol. (2006). A l'avenir mes recherches seront focalisées sur le lait de zébu et les extrait végétaux.

Book excerpt: The 5th International Conference on Aspartic Proteinases was held on September 19 through 24, 1993, at Naito Museum of Pharmaceutical Science and Industry, Kawashima cho, Gifu Prefecture, Japan, about 15 miles northwest of Nagoya City. About 100 scientists attended the conference, including 52 from 14 countries outside Japan, and 32 papers were presented by invited speakers, and 58 papers as posters. The purpose of this conference was to present and discuss new information on the structure, function, and biology, and related topics, including biomedical implications, of aspartic proteinases, and this book is a collec tion of nearly all the papers presented at the meeting. Aspartic proteinases belong to one of the four major classes of proteinases, the others being serine, cysteine, and metalloproteinases, and are so called since they have two catalytic aspartic acid residues in common in their active sites. Most of them are optimally active at acidic pH, hence the long-used name "acid proteinases," which, indeed, was the major title of the first conference of this series. However, some of them are active at around neutral pH, indicating their physiological roles in a wider range of pH than hitherto considered.
