L'analyse de la filière viande bovine met en évidence deux organisations : l'organisation artisanale avec les marchands de bestiaux, le marche physique de Nancy, les bouchers et une organisation industrielle avec les groupements de producteur, abattoirs, chevilles grands groupes, grandes et moyennes surfaces, collectivités. Les activités de ces acteurs et leurs perspectives sont présentées et discutées. Le maintien des parts du marché régional dépendra de nombreux facteurs en particulier de la façon dont les restructurations de l'abattage et de la cheville pourront être menées à bien dans le proche avenir dans la région
