Book excerpt: The purpose of this convergent parallel mixed methods study was to investigate children's learning experiences during the Eat a Georgia Rainbow program and to understand their motivation to learn about healthy eating and healthy cooking in relevance to the development of their intentions to adopt a healthy diet. The experiential learning theory was used as a lens during this study to emphasize the importance of participants learning experience through hands-on, task-oriented activities, and reflecting on the experiences. Recording camera-glasses, the Intrinsic Motivation Inventory (IMI) survey, Motivation for Diet survey, and follow-up individual interviews were used to collect data. In Phase I, data were collected from 50 child participants. During Phase II of the follow-up data collection, data were collected from 31 child participants and 20 parent participants. Pearson's Product-Moment Correlation and simple linear regression analyses were conducted. The interview data were transcribed and coded, and a thematic search was conducted. There was not a relationship between child's level of engagement, IMI survey scores, and Motivation for Diet survey scores. The child's level of engagement and IMI survey score did not influence the child's Motivation for Diet survey score. A joint display table was used to illustrate the integration of quantitative and qualitative data to compare and contrast the results. The interview data revealed that family conversations and participation in meal preparation did occur after the program. Exposing children to the topic of healthy eating and meal preparation is imperative, especially in an informal setting. Reinforcing what children were learning is imperative in sustaining long-term healthy behaviors; therefore, this model may be used in informal and higher education settings.

Book excerpt: Children in the United States are consuming inadequate amounts of several nutrients and the prevalence of overweight and obesity remains high at 31.7 percent. To address these concerns, nutrition science must be translated into clear, understandable recommendations for micronutrient and energy intakes that can be utilized by children and their parents. Moderate evidence indicates that school-based nutrition education interventions positively influence children's dietary behaviors. However, the effectiveness of nutrition education interventions may be influenced by a variety of factors, including: curriculum development methods; professional development models, and classroom factors like teachers' characteristics and factors of program implementation. The first objective of this research was to evaluate the use of a systematic approach and theoretical framework to develop a garden-enhanced, inquiry-based nutrition curriculum for the Shaping Healthy Choices Program (SHCP). The curriculum development team used Backward Design, a process that involves three steps: identification of learning objectives; determination of acceptable evidence of learning; and activity development. The design team met weekly and engaged in reflective practice to discuss drafts of curriculum activities. Activities were further refined using formative assessment methods during pilot-testing with 40 children. Qualitative observations were used to improve activity procedures and materials. Using a systematic, iterative process resulted in a comprehensive nutrition curriculum with a strong foundation in social cognitive theory and constructivist learning theory, and activities that have focused learning objectives that meet SHCP goals. This study has been submitted as a manuscript for peer-review. The objective of the second experiment was to evaluate the use of professional development to improve barriers to teaching nutrition in public elementary schools. Commonly reported barriers include lack of knowledge about nutrition, self-efficacy, and training. Lesson study (LS) is a professional development method demonstrated to reduce these barriers in the subjects of mathematics and science, and may be effective for nutrition education. It was hypothesized that teachers engaging in LS would improve self-efficacy and knowledge about nutrition. Eight teachers at two schools completed questionnaires at baseline and follow-up to measure changes in self-efficacy and nutrition knowledge. Using LS, teachers worked collaboratively to plan to implement SHCP activities, facilitate SHCP activities, and discuss observations of student learning to improve subsequent lessons. Differences were analyzed using paired t-tests with [alpha]=.05. There were no significant differences in self-efficacy or knowledge between baseline and follow-up, though significant differences were observed in subgroups. Teachers who reported previous experience teaching nutrition decreased self-efficacy ([mu] = -9.0 ± 6.2 P=.10) while those who reported no experience teaching nutrition increased ([mu] = 10.6 ± 4.1 P

Methods: A one-group pre-test/post test quasi-experimental study was conducted at the American School of Bangkok. A nutrition screening was carried out to determine students' BMI status. Socio-demographic, psychosocial, behavioral and environmental data among 72 students from 4th-6th grades were collected through a survey. Results: Findings reveal that overweight is a health problem among the students at the American School of Bangkok. A high proportion of students had poor diet. The majority of the students had low physical activity and high inactivity levels. Results indicated that factors associated with eating behavior include number of meals eaten at home, type of meals eaten at home, knowledge, attitudes/beliefs, eating self-efficacy, parental influence, parental knowledge, and parental attitudes/beliefs. Factors associated with physical activity include exercise self-efficacy, parental influence, and use of exercise/recreation center. Exercise/recreation facility use was the only important factor in inactivity among the students. Both eating and physical activity behaviors were positively associated with weight status among the participants. A school health-promotion program was identified as a strategy in improving eating and physical activity behaviors among the students. Findings from the situation analysis facilitated the development and implementation of the school health program. The school health promotion program was instrumental to improvements made in eating and physical activity behaviors among the subjects. The mobilization of all school constituents including school authorities, personnel, staff, teachers, students and parents and their participation in the program were important ingredients to the success of the school health promotion program. Conclusion: Whilst the relationship between childhood nutrition and adult disease is not yet fully understood, there is some evidence that diet and physical activity patterns affect nutritional status. The results from this study suggest that diet, physical activity and inactivity patterns are likely contributors to an increased prevalence of overweight among students in the study. The findings also imply that restaurant food consumption and non-utilization of exercise/recreation facility are important contributors to higher BMI among the students. The development and implementation of a School Health Promotion program was found to be successful in enhancing healthful eating and physical activity among the students. Recommendations: A comprehensive school health promotion program was proven to be successful in enhancing healthful eating and physical activity among the students at the American School of Bangkok. Future programs should search for ways to include caregivers in nutrition education because most modifiable behaviors of children and adolescents can [only] be facilitated by their caregivers. In addition, positive behaviors of healthful eating and physical activity that were learned at school can only be sustained through family involvement so that such behaviors are reinforced outside of school. Students and caregivers should learn how to make healthier choices when ordering from fast food restaurants. For physical activity, the use of recreation/exercise center is dependent upon the creation of fun activities for children and adolescents.

Book excerpt: This study focused on the relationship between student success in a long-term weight loss immersion treatment program and parent participation in the program; parent participation is defined as engaging in similar healthy behaviors at home while their child is in the program including (1) parents also striving to achieve or maintain a healthy weight; (2) parents self-monitoring of weight loss behaviors/healthy habits; (3) parents reducing/eliminating high fat foods in the home and increasing nonfat/low fat foods in the home; (4) parents improving family support in the home; and (5) parents facilitating healthy family functioning in the home. -- The problem addressed in this study was that parents struggle to understand and embrace their significant role in their children's weight loss process; issues included parent lack of awareness of the epidemic of obesity or the health dangers related to it, challenges in knowing what to do if their child is obese, and a tendency to demonstrate a lack of motivation to change their own behavior. -- This study used a quantitative correlational design with a pretest/posttest and an intervention that was completed over a 10- to 16-week time period from August 20, 2012, to December 8, 2012; recruitment of subjects began in mid-July 2012. The pretest was conducted when parents and their children arrived at the program; the posttest was done at the conclusion of the study in November and December. In October at the midway point when the parents attended the mini-immersion parent workshop, each of the measures taken in the pretest and posttest were taken again to strengthen statistical power. The pretest and posttest consisted of both parent and child independently completing (1) the weigh in, (2) height measurement to calculate BMI, (3) the food checklist (see Appendix A), (4) the social support survey (see Appendices B and C), and (5) the family survey (GF) (see Appendix D). Parent self-monitoring was also measured at the mini-immersion parent workshop in October and at the end of the study in November and December. -- The results indicated no correlation between parent participation and student success due to a very small sample size; only eight families participated because of low enrollment at the facilities used in the study. However, this study did confirm the value of exploring the impact of parent behavior on student success, especially in regard to how parents can modify their behavior (weight loss and self-monitoring) and how parents can modify the home environment (food available in the home, parental support at home, and facilitation of healthy family functioning) to empower their children to achieve a healthy weight.
