Book excerpt: Facing hundreds of food choices and tons of information, time-constrained consumers always spend time and efforts to search information and seek the greatest-value option (McCall et al., 1970). Nearly 200 food decisions need to be made by each consumer per day (Wansink and Sobal, 2007), and it is hard for consumers to check all the information. When purchasing food, consumers may rely on some information resources that can be easily gathered such as health claims, front-of-package (FOP) labels, online reviews and so on to make quick decisions. There is evidence that nutrition content claims on front of packages can assist people understanding products nutrition information and choosing healthier food. Yet, it is unknown whether the information of claims affects consumers or the number of claims matters. As a result, this study was interested in investigating how the number of nutrition content claims on the front of packages influences consumers. Specifically, two primary objectives of this study are (1) to measure the effect of the number of nutrition content claims on consumers’ purchase valuations of food products, regardless of the claim, (2) to determine whether or not there is a threshold point at which the number of claims does not affect product valuations. An online questionnaire was designed to test the effect of the number of nutrition content claims on consumers’ purchase intentions toward food products, and their willingness to pay. In this survey, four food categories: yogurt, cereal, frozen lasagna and peanut butter were selected to test. The results indicate that for yogurt, the number of nutrition content claims influences consumers’ perception and purchase valuation of food products. For cereal and peanut butter, the number of claims only has a significant effect on the purchase valuation of products. And for frozen lasagna, no significant difference of perception or purchase valuation is found between food products with a different number of nutrition content claims. This study highlights the important effect of nutrition content claims on consumers and finds the number of claims influences consumers purchase valuation of products for some food categories. In terms of implications, I find for different food categories, the effect from the number of claims varies.

These symbols and the systems that underlie them have become known as front-of-package (FOP) nutrition rating systems and symbols, even though the symbols themselves can be found anywhere on the front of a food package or on a retail shelf tag. Though not regulated and inconsistent in format, content, and criteria, FOP systems and symbols have the potential to provide useful guidance to consumers as well as maximize effectiveness. As a result, Congress directed the Centers for Disease Control and Prevention (CDC) to undertake a study with the Institute of Medicine (IOM) to examine and provide recommendations regarding FOP nutrition rating systems and symbols. The study was completed in two phases. Phase I focused primarily on the nutrition criteria underlying FOP systems. Phase II builds on the results of Phase I while focusing on aspects related to consumer understanding and behavior related to the development of a standardized FOP system. Front-of-Package Nutrition Rating Systems and Symbols focuses on Phase II of the study. The report addresses the potential benefits of a single, standardized front-label food guidance system regulated by the Food and Drug Administration, assesses which icons are most effective with consumer audiences, and considers the systems/icons that best promote health and how to maximize their use.

Book excerpt: The federal government requires that most packaged foods carry a standardized label-the Nutrition Facts panel-that provides nutrition information intended to help consumers make healthful choices. In recent years, manufacturers have begun to include additional nutrition messages on their food packages. These messages are commonly referred to as 'front-of-package' (FOP) labeling. As FOP labeling has multiplied, it has become easy for consumers to be confused about critical nutrition information. In considering how FOP labeling should be used as a nutrition education tool in the future, Congress directed the Centers for Disease Control and Prevention to undertake a two-phase study with the IOM on FOP nutrition rating systems and nutrition-related symbols. The Food and Drug Administration is also a sponsor. In Phase 1 of its study, the IOM reviewed current systems and examined the strength and limitations of the nutrition criteria that underlie them. The IOM concludes that it would be useful for FOP labeling to display calorie information and serving sizes in familiar household measures. In addition, as FOP systems may have the greatest benefit if the nutrients displayed are limited to those most closely related to prominent health conditions, FOP labeling should provide information on saturated fats, trans fats, and sodium.

However, despite this explosion of front-of-package (FOP) health communications, obesity and health-related problems of U.S. consumers continue to be a critical concern. Therefore, it is important for marketers, retailers, manufacturers, and public policy makers to develop a more complete understanding of consumers' processing and utilization of health information on food packages, as well as how this information affects product evaluations and choices. Therefore, this dissertation utilizes a processing fluency theoretical framework (e.g., Zajonc 1968; Jacoby and Dallas 1981; Novemsky et al. 2007) to attempt to increase our understanding of how FOP icons that vary in nature (i.e., subjective interpretive icons, objective quantitative icons, single nutrient content claims) affect consumers' perceptions, intentions, and choices when presented both independently and simultaneously on food packages. Study 1 examines reductive and interpretive icons on a single product (pizza), while Study 2 demonstrates how additional FOP nutrition information (i.e., a single nutrient content claim) affects the conceptual fluency of health information, perceived product healthfulness, and purchase intentions. Studies 3 and 4 provide a stronger market-based examination of how consumers process FOP health information across multiple brands and product categories in a retail setting. These controlled retail laboratory studies overcome important limitations noted in earlier nutrition labeling studies, such as data collection and evaluations in non-store environments (e.g., Keller et al. 2007; Li, Miniard, and Barone 2000), while demonstrating how different types of FOP icons vary in their effectiveness in positively affecting consumers' choices of healthy products from consideration sets across multiple food categories.

This dissertation set out to better understand the effectiveness of such tactics in helping consumers make healthier decisions. Essay 1 compares the effects of different types of front-of-package nutrition labelling on a number of consumer outcomes through a meta-analysis. Essay 2 focuses on a specific type of nutrition label, namely nutrition claims, and compares claims focusing on the addition of positive nutrients and the reduction of negative nutrients. Essay 3 investigates potential unintended consequences of price discounts on healthy food products. Overall, the findings suggest that the effectiveness of these tactics may be limited due to unintended consequences on product perceptions. Marketers and policy makers need to acknowledge that consumers are not basing their food choices on considerations of health and price alone. More focus should be placed on increasing consumers’ overall health motivation.

Book excerpt: Food products claim to be healthy in many ways, but prior research has either investigated these claims at the macro level (using broad descriptions such as “healthy” or “tasty”) or at the micro level (using single claims like “low fat”). Our meso-level framework examines 1) whether these claims invoke natural or scientific arguments and 2) whether they communicate about positive attributes present in the food or negative attributes absent from the food. We find that common front-of-packaging (FOP) claims can be appropriately classified into (1) science and absence-focused claims about “removing negatives”; (2) science and presence-focused claims about “adding positives”; (3) nature and absence-focused claims about “not adding negatives”; and (4) nature and presence-focused claims about “not removing positives.” We conduct validation studies using breakfast cereals, a category for which nutrition quality varies but food claims are constant. We find that claim type is completely uncorrelated to actual nutrition quality and yet influences inferences consumers make about taste, healthiness, and dieting. Claim type also helps predict the effects of hedonic eating, healthy eating, or weight loss goals on food choice.
