Book excerpt: The globalization of food trade and changes in lifestyles present new major challenges for food safety. Setting up active food packaging, via antimicrobial peptides adsorption on materials, is an innovative and proactive approach to improve the safety, quality and shelf-life of packaged foods. Peptides adsorption on surfaces and the antimicrobial activity of the functionalized materials depend mainly on surface properties, on surface treatments allowing the modification of such properties and on the peptides-materials-bacteria interactions. In this thesis, nisin, an antilisterial bacteriocin, produced by Lactococcus lactis subsp. Lactis was used as the antimicrobial agent. The selected packaging was the low density polyethylene, a commonly used packaging in the food sector. Different cold plasma processes were optimized to develop surfaces with various characteristics and specific functionalities needed for the adsorption studies. Physico-chemical surface characterization techniques permitted from one side, to confirm the surface functionalization by surface treatments and by nisin and from another side, to study the surface interactions. The antimicrobial study was undertaken to compare and confirm the antimicrobial activity of the different treated packaging. This work was also carried out against some food pathogens and at refrigeration temperature in order to assess possible future food packaging applications.

Available in PDF, EPUB and Kindle. Book excerpt: This multidisciplinary book is the result of a collective work synthesizing presentations made by various specialists during the CNRS «BIODEMAT» school, which took place in October 2014 in La Rochelle (France). It is designed for readers of a range of scienti?c specialties (chemistry, biology, physics, etc.) and examines various industrial problems (e.g., water, sewerage and maintaining building materials). Metallic, cementitious, polymeric and composite materials age depending on their service and operational environments. In such cases, the presence of microorganisms can lead to biodeterioration. However, microorganisms can also help protect structures, provided their immense possibilities are mastered and put to good use. This book is divided into ?ve themes related to biocolonization, material biodeterioration, and potential improvements to such materials resulting in better performance levels with respect to biodeterioration: • physical chemistry of surfaces; • bio?lm implication in biodeterioration; • biocorrosion of metallic materials; • biodeterioration of non-metallic materials; • design and modi?cation of materials. The afiliations of the authors of the various chapters illustrate the synergy between academic research and its transfer to industry. This demonstrates the essential interaction between the various actors in this complex ?eld: analysing, understanding, and responding to the scientic issues related to biodeterioration.

Book excerpt: Extremophiles have been studied for many decades - these microorganisms can thrive under a vast range of conditions, including extreme temperature, pH, pressure, radiation, salinity, energy, and nutrient limitation. Life in extreme environments has evolved to render solutions that overcome the challenges presented by such conditions. Among these solutions include extremozymes and extremolytes, an invaluable collection of natural, renewable, and biological resources with immense potential for applications aimed at the development of a sustainable bio-economy, especially in biotechnology and other industrial sectors. In line with this observation, extremophilic DNA polymerases have been instrumental in driving unprecedented progress in recombinant DNA technologies applied in diverse areas, including agriculture and human health. Thermostable and halotolerant enzymes are likely to feature significantly in the renewable energy sector of the future, including bioethanol production and the Gas-to-Liquid effort, which aims at converting greenhouse gases such as CO2 and methane to liquid fuels. Furthermore, due to the stability of extremophilic protein homologs, insights to the structure and function of protein/protein complexes, including those critical to protein degradation, were solved to advance our understanding of fundamental processes across the three domains of life.
