Book excerpt: Let's face it, today we are inundated with articles about cooking, food, and wine in almost every part of our lives. From The Wall Street Journal to Playboy Magazine, you'd be hard pressed not to find a commentary related to the subject of food. At a time when I'm trying to figure out my best financial opportunities or determine which girl of the SEC is the best looking, why am I being told how to cook something? The simple answer is women. Don't get me wrong, a quick glance at any men's magazine will always yield the same redundant taglines; "Lose your Gut," "1001 Financial Solutions," or "Score your Dream Job" on the cover. However, by now the majority of writers have exhausted the subjects of health, wealth, and power as a means to attract women, and they realize that cooking is just another avenue that they can use to appeal to the wants and needs of their readers. Don't trust me? Take a stroll through the magazine aisle at your local grocery store, and you might find that even Field and Stream has gone haute-cuisine on your latest hunt. Confused by the last sentence? Good, this book is for you.

Book excerpt: More than 100 recipes from Southern Appalachia's culinary renaissance The southern Appalachian Mountains are rich with produce, including wild ramps, corn, berries, and black walnuts. Drawing from these natural resources and fusing traditions of Native Americans and Scots-Irish settlers, the people of the region have developed a unique way of cooking. These foodways run in John Tullock’s blood. As a child growing up on an East Tennessee farm, Tullock helped his grandmother make biscuits and can pickles, and walked to town with his grandfather to trade fresh eggs for coffee. In Appalachian Cooking, he shares these memories and recipes passed down over generations, as well as modern takes on classic dishes. Recipes include: Sweet Onion Upside-Down Corn Bread Fried Green Tomatoes Skillet Braised Pork Chops Blackberry Crumble Vibrant watercolor illustrations throughout remind us that beautiful produce is often the best culinary inspiration.

Book excerpt: Excerpt from History of Tennessee: The Making of a State Although the annals of Tennessee are not filled with accounts of the revolutions which have changed the complexion of the world, yet her history, in addition to the interest which it possesses for her children as giving an account of the achievements of their ancestors, has one claim upon the attention of the thoughtful student of history which is peculiarly her own. In it can be studied, as under a glass and in an hour, the process of development which in other States is either imperfectly displayed or is spread over a long stretch of time, the periods of which are indistinctly understood, or marred by extraneous and disturbing causes. In the Thirteen Colonies the chief causes of disturbances were the cupidity of colonial proprietors and the despotism of rulers. In the younger States, excepting Kentucky, and perhaps Vermont, the line of advancement began at or after a point where the full development of American principles had been attained. In Tennessee we have within the limits of a century a picture of national life as complete as that of England through its two thousand years, or that of Rome from the kings to the emperors. Book excerpt: Excerpt from Dietary Studies at the University of Tennessee in 1895 The club was organized to meet a demand for cheaper board than could be procured at the university boarding house or in private families. The rate of board was $2 per week, and all collecting of dues was done by the steward. Payment in advance was an invariable rule, and it is said that under this system no losses have been incurred during the three years' existence of the club. In addition to the steward, who selected and purchased the food, only one other person was paid for services; this was a woman who was employed to cook and do the laundry Work for the table. For this she received $15 per month, besides board. And lodging for herself and three children (girls). The serving of the meals and some assistance in clearing up, etc., was done by students, who received their board as compensation for their service. The dining room, kitchen, and storeroom were in the basement of one of the college dormitories, and were furnished by the university free of rent.
